Wild turkeys use vocalizations and physical displays to communicate. For example, during the spring, males will fan out their tails, strut and "gobble" in an attempt to attract and retain a harem of females. Biologists recognize at least 15 different wild turkey vocalizations, including the widely recognized "gobble". Wild turkeys are large, ground-dwelling birds with long legs, long necks and large fan-shaped tails. They have short, rounded wings. Male wild turkeys have dark, iridescent plumage. Their flight feathers are black with brown stripes and are barred with white. They have a red wattle (a fleshy lobe that hangs down from the chin or throat), a caruncle (a wart-like projection of skin attached to the upper part of the forehead), and a blackish breast tuft. Their pink, pinkish-gray, or silver-gray legs have spurs which can grow as long as 3.2 cm. The heads of adult males (called gobblers) are red, blue, or white depending on the season.
Female wild turkeys (called hens) are smaller and duller than males. Most females do not have a breast tuft. Females have a grayish head and a feathered neck.
Male turkeys weigh 6.8 to 11 kg. Hens usually weigh 3.6 to 5.4 kg. Weight varies considerably with time of year and resource availability.
There are six subspecies of Meleagris gallopavo. These subspecies differ in size, plumage and distribution.

Humans are the primary predator of adult wild turkeys. Other predators include coyotes, bobcats, raccoons, mountain lions, golden eagles, and great horned owls.

Wild turkeys breed in early spring; southern populations begin courtship in late January and northern populations begin in late February. They raise one brood per season. The nest is a shallow depression in the ground, usually surrounded by dense brush, vines, tangles, deep grass, or fallen tree tops. The female scratches out the nest and lays 4 to 17 (usually 8 to 15) eggs. She incubates the eggs for 25 to 31 days. The chicks are precocial, and are able walk and feed themselves within 24 hours of hatching. The female broods the chicks at night for the first 2 weeks after hatching. She also defends them from predators, sometimes pursuing hawks or other predators. The young turkeys (called poults) stay with the female parent through the fall (males) or the early spring (females). Turkeys are capable of breeding at about 10 months old, though young males are typically not successful in competing with older males for mates during their first spring.
Egg dumping (laying eggs in another female's nest) is common in this species. This species is also known to lay eggs in the nests of ruffed grouse. Ring-necked pheasants are known nest parasites of wild turkeys.

Els galls dindis s'organitzen en una societat jeràrquica i es comuniquen mitjançant crides i contacte físic sumant-se a aquests els festejos sexuals, segons l'estació els mascles i les femelles es comporten de manera diferent formant grups de grandària i funcions variables.
Fora de l'època de reproducció els mascles i les femelles viuen en grups separats, arribant la primavera es creen "bandades de festeig", grups de mascles adults i femelles de major grandària.
Quan és l'època de reproducció, els mascles fixen territoris. Els grups de femelles es desarticulen, provocant que les femelles transitin solitàries amb total llibertat pels territoris. Els mascles que han aconseguit fixar el seu domini sobre un territori tractaran d'atreure femelles amb crides sonores i realitzant moviments complexos. En grups de mascles joves solament el més dominant és el que s'aparella. Normalment un grup petit de mascles dominants té total domini sobre un gran nombre d'individus. Quan el mascle i la femella han consumat l'acte sexual comencen la construcció del niu on poden aparellar-se diàriament fins al moment de covar. Regularment les femelles formen grups per nidificar i criar als seus pollets en el mateix niu. La mare gall dindi dipositarà de 5 a 8 ous i els covarà al voltant de 28 dies. Tot seguit els pollets romandran en el niu fins als 6 o 7 mesos. Si l'aparellament no provoca el naixement de cries, les femelles formen esbarts sense niuada. A l'hivern, els mascles i les femelles se separen formant "grups hivernals". Els pollets mascles abandonen el niu i formen els seus propis "grups hivernals".

Kalkuner blev allerede holdt af aztekerne i det, der nu er Mexico og var meget betydningsfulde, da der var få arter af dyr egnet til husdyrhold i den nye verden før kontakt med europæerne. Kalkuner kan være ankommet til Europa med Christopher Columbus så tidligt som i 1497. Mere udbredt er imidlertid teorien om, at de først senere ankom til Europa med spanske søfolk mellem 1520 og 1540. Den første Conquistador var formentlig Hernandez Cortés i 1519 med aztekerne og besejrede dem indtil 1521. Derefter siges det, at Cortés faktisk har bragt kalkuner til Europa.
Det er en af de få kalkuner, der ikke primært er udvalgt til kødproduktion. Royal Palm er bedst kendt som en pryd fugl med et unikt udseende, stort set hvidt med bånd af metallisk sort. Primært holdes den som udstilling fugl, eller på små gårde, det mangler størrelsen til storstilet kommerciel brug. Hanner vejer normalt 16 til 22 lbs og hønsene 10 til 12 lbs.
Den er en relativ nybegynder blandt kalkun racer, fuglen dukkede først op i 1920 ' erne på en gård i Lake Worth, Florida, tilsyneladende som en krydsning mellem sort, bronze, Narragansett og indfødte kalkuner. Flere år med selektiv avl fulgte for at stabilisere farve, og Royal Palm blev endeligt accepteret af Amerikansk fjerkræ forenings Standard for perfektion 1971. I Europa kaldes en kalkun med lignende farvning undertiden Cröllwitzer. Sammen med nedgangen i de fleste kalkun racer efter vedtagelsen af den bredbrystede hvide industri kalkun. Royal Palms er en meget truet race i dag. Racen er klassificeret som værende på "Watch" status med den amerikanske husdyrracer Conservancy. Det er også inkluderet i Slow Food USA's Ark of Taste, et katalog af fødevarer i fare for udryddelse. Den australske og USA begge rapporterer racen som truede med de Forenede Nationers fødevare-og Landbrugsorganisation.

Das Truthuhn (Meleagris gallopavo) ist eine in Nordamerika beheimatete Art der Truthühner. Es wird auch Wildtruthuhn oder Wildes Truthuhn genannt und ist die größte Art der Hühnervögel. Bereits von indianischen Völkern wurde es domestiziert und ist somit die Stammform des Haustruthuhns, der Pute.
Ausgewachsene Truthähne erreichen im Stand eine Höhe von 1 m und ein Gewicht von 10 kg. Hennen sind etwas kleiner (90 cm) und sehr viel leichter (4 kg). Das Gefieder ist dunkelbraun und schwarz und hat vor allem beim Hahn einen metallischen Schimmer. Hals und Kopf sind unbefiedert. Die Gesichtspartie und der Scheitel sind hellblau, Hals und Kehle blassrot. Ein roter Hautlappen, der 6 bis 8 cm lang wird, entspringt beim Hahn zwischen den Augen und hängt quer über dem Schnabel. Alle Hähne und 10 % der Hennen haben zudem einen borstenartigen Federbusch an der Brust, der 10 bis 25 cm lang wird.
Zur Brutzeit werden die Farben der nackten Körperpartien leuchtender und können auch wechseln, so dass sie dann weiß oder türkis werden. Truthühner können ein Alter von zehn bis zwölf Jahren erreichen.
Das Verbreitungsgebiet reicht vom Südrand Kanadas über die USA bis in den Norden Mexikos. Truthühner gibt es wild in drei kanadischen Provinzen, 49 US-Staaten und sechs mexikanischen Bundesstaaten. In den USA fehlt es nur in Alaska; auf Hawaii kam es nicht natürlich vor, wurde aber durch den Menschen eingeschleppt. Ausgewilderte Bestände gibt es auch in Australien und Neuseeland.
Der Lebensraum sind Wälder mit dichtem Unterholz und großen Lichtungen.
In Mitteleuropa gelangen über mehrere Jahrzehnte Ansiedlungen, allerdings mussten die Populationen immer durch Hilfsmaßnahmen unterstützt werden. In Niederösterreich gab es zwischen 1880 und 1940 größere Brutpopulationen, die mehrere hundert Individuen umfassten, die jedoch nach der Einstellung der Hege im Zweiten Weltkrieg rasch zusammenbrachen. Eine Neuansiedlung scheiterte sowie auch die elf Versuche, mit denen zwischen 1953 und 1993 in Deutschland Truthühner angesiedelt werden sollten. Eine Ansiedelung im Oberrheingebiet erreichte einen Höchstbestand von 300 Individuen, 1997 gab es jedoch nur 12 Individuen. Im Kreis Wesel gab es in den 1960er Jahren 200 bis 250 Individuen, 1977 lebten jedoch nur noch ein Männchen und vier oder fünf Weibchen. Den größten freilebenden mitteleuropäischen Bestand gibt es in Tschechien, wo es 1988 noch 530 Individuen gab.[1]
Die früheste Erwähnung von ausgesiedelten Truthuhn-Beständen in Deutschland beschreibt den Zeitraum von 1698 bis 1732. Es ist allerdings nicht erwiesen, ob es sich dabei um Wildtruthühner oder um domestizierte Tiere handelte.[2]
Auf der tasmanischen Insel King Island, die am westlichen Ende der Bass-Straße zwischen Tasmanien und Australien liegt und eine Fläche von 1.098 km² hat, gab es in den 1990er Jahren eine halbwilde Gruppe von Truthühnern, die von einigen Landwirten unterhalten wurde und mehr als 350 Individuen umfasste.[3] Auf der Furneaux-Gruppe, einer aus 52 Inseln bestehende Inselgruppe am Ostende der Bass-Straße zwischen den australischen Bundesstaaten Victoria und Tasmanien, wurden in der ersten Hälfte des 20. Jahrhunderts Truthühner ausgesetzt und hatten sich um das Jahr 1950 bereits fest etabliert. Eine besonders große Zahl findet sich auf Flinders Island, der größten Insel dieser Gruppe. Die auf Kangaroo Island ausgesetzten Truthühner, die seit 1950 dort frei leben, müssen durch Hilfsmaßnahmen jedoch unterstützt werden.[3] Die auf Garden Island (Western Australia) lebenden Truthühner, die sich in den 1940er Jahren dort als Gefangenschaftsflüchtlinge einer Truthahnfarm etablierten, sind dort in den 1950er Jahren wieder ausgestorben.
Auf Neuseeland gab es bereits im 19. Jahrhundert Ansiedelungsversuche. Dabei handelte es sich um wildlebende Truthühner aus Mexiko, die via Großbritannien nach Neuseeland verbracht wurden. Der Ansiedelungsversuch blieb letztlich erfolglos, es folgten aber in den 1920er und 1950er Jahren weitere Ansiedelungsversuche, so dass heute auf der neuseeländischen Nordinsel Truthähne häufig sind. Von einigen Farmern werden sie auch als halbwilde Trupps gepflegt.[3]
Da die Lebensweise mit der des verwandten Pfauentruthuhns weitgehend übereinstimmt, wird diese im Artikel Truthühner beschrieben.
Schon für die indianische Bevölkerung war das Truthuhn von überragender Bedeutung. Vor der Ankunft der Europäer lebten mehrere 10 Millionen Truthühner in Nordamerika, mancherorts mit einer Dichte von 80 Individuen je km². Indianer nutzten vor allem das Fleisch, aber auch die Federn für Kleider, Schmuck und Befiederung von Pfeilen. Nach dem Weißwedelhirsch war das Truthuhn für die indianische Bevölkerung Nordamerikas das meistgenutzte Tier.
Haustruthühner gab es im Südwesten der späteren USA sowie in Mexiko. Die Domestikation erfolgte wahrscheinlich vor mehr als 2000 Jahren, spätestens zur Zeit der Späten Präklassik durch die Maya.[4] Die Indianer des Nordens und Ostens haben Truthühner hingegen nicht domestiziert.
Bereits der Konquistador Hernán Cortés brachte nach seinem Feldzug gegen die Azteken Haustruthühner nach Spanien mit. Von dort verbreiteten sie sich über ganz Europa. Die Europäer, die später Nordamerika besiedelten, brachten Truthühner wiederum zurück, so dass viele Haustruthühner im Norden der USA auf Vorfahren zurückgehen dürften, die in Europa gelebt haben.
Zu Thanksgiving ist das Truthuhn das traditionelle Gericht in den USA und Kanada.
Die etliche Millionen zählenden Populationen von Wildtruthühnern erlitten nach der Besiedlung Nordamerikas durch die Europäer einen kompletten Zusammenbruch. Schuld daran waren die zunehmende Abholzung der Wälder und Ausdehnung landwirtschaftlicher Monokulturen, vor allem aber die zügellose Bejagung der Tiere. Ende der 1940er Jahre gab es in ganz Nordamerika nur noch etwa 130 000 Truthühner,[5] die sich vor allem in Berg- und Sumpfwäldern verbargen.
Ab 1960 besserte sich die Situation des Truthuhns. Dies hing mit effektiven Schutzbemühungen zusammen und mit einer wachsenden Landflucht der Bevölkerung; Farmen wurden aufgegeben und wurden anschließend von Strauchwerk überwachsen, wodurch sie geeignete Truthuhn-Habitate wurden. 1990 gab es wieder 3 bis 5 Millionen Truthühner.

In den 1950er Jahren wurden in Gefangenschaft mit Weibchen einer bestimmten Rasse („Belts-ville Small White“) gezielte Versuche unternommen, durch Parthenogenese (Jungfernzeugung) Nachwuchs zu zeugen. Im Jahr 1952 konnte in 16,7 % der parthenogenetisch erzeugten Eier eine Entwicklung festgestellt werden, bis 1959 konnte diese Rate auf 41,7 % gesteigert werden. Von insgesamt mehr als 42.000 parthenogenetisch erzeugten Eiern kamen 67 (0,16 %) zum Schlupf. Von diesen Küken überlebten jedoch nur wenige bis zur Geschlechtsreife.[6] Die so entstandenen Nachkommen sind durchweg männlichen Geschlechts, da sie durch Verdopplung haploider Zellen entstehen. Die resultierenden Zellen können von den bei Vögeln geschlechtsbestimmenden Chromosomen W und Z nur die Kombination WW oder ZZ tragen, wovon nur die Variante ZZ (= männliches Geschlecht) überlebensfähig ist.

Nach genetischen Analysen sind die vor allem nach Färbungsmerkmalen aufgestellten Unterarten genetisch gegeneinander differenzierbar, mit Ausnahme der Florida-Unterart, die demnach zur östlichen Unterart gehört.[14]
Das Truthuhn (Meleagris gallopavo) ist eine in Nordamerika beheimatete Art der Truthühner. Es wird auch Wildtruthuhn oder Wildes Truthuhn genannt und ist die größte Art der Hühnervögel. Bereits von indianischen Völkern wurde es domestiziert und ist somit die Stammform des Haustruthuhns, der Pute.

The wild turkey (Meleagris gallopavo) is an upland game bird native to North America, one of two extant species of turkey and the heaviest member of the order Galliformes. It is the ancestor to the domestic turkey, which was originally derived from a southern Mexican subspecies of wild turkey (not the related ocellated turkey).
Adult wild turkeys have long reddish-yellow to grayish-green legs. The body feathers are generally blackish and dark, sometimes gray brown overall with a coppery sheen that becomes more complex in adult males. Adult males, called toms or gobblers, have a large, featherless, reddish head, red throat, and red wattles on the throat and neck. The head has fleshy growths called caruncles. Juvenile males are called jakes; the difference between an adult male and a juvenile is that the jake has a very short beard and his tail fan has longer feathers in the middle. The adult male's tail fan feathers will be all the same length.[2] When males are excited, a fleshy flap on the bill (called a snood) expands, and this, the wattles and the bare skin of the head and neck all become engorged with blood. Each foot has three toes in front, with a shorter, rear-facing toe in back; males have a spur behind each of their lower legs.[3]
Male turkeys have a long, dark, fan-shaped tail and glossy bronze wings. As with many other species of the Galliformes, turkeys exhibit strong sexual dimorphism. The male is substantially larger than the female, and his feathers have areas of red, purple, green, copper, bronze, and gold iridescence. The preen gland (uropygial gland) is also larger in male turkeys compared to female ones. In contrast to the majority of other birds, they are colonized by bacteria of unknown function (Corynebacterium uropygiale).[4] Females, called hens, have feathers that are duller overall, in shades of brown and gray. Parasites can dull coloration of both sexes; in males, coloration may serve as a signal of health.[5] The primary wing feathers have white bars. Turkeys have 5000 to 6000 feathers.[6]
Tail feathers are of the same length in adults, different lengths in juveniles. Males typically have at least one "beard", a tuft of coarse hair-like filaments (mesofiloplumes), growing from the center of the breast.[7] Beards grow continuously during the turkey's lifespan[8] and a one-year-old male has a beard up to 5 in (13 cm) long.[7] Approximately 10% of females have a beard, usually shorter and thinner than that of the male.[7][8]
The adult male (or "tom") normally weighs from 5 to 11 kg (11 to 24 lb) and measures 100–125 cm (39–49 in) in length. The adult female (or "hen") is typically much smaller at 2.5–5.4 kg (5.5–11.9 lb) and is 76 to 95 cm (30 to 37 in) long.[9][10] Per two large studies, the average weight of adult males is 7.6 kg (17 lb) and the average weight of adult females is 4.26 kg (9.4 lb).[11][12] The wings are relatively small, as is typical of the galliform order, and the wingspan ranges from 1.25 to 1.44 m (4 ft 1 in to 4 ft 9 in). The wing chord is only 20 to 21.4 cm (7.9 to 8.4 in). The bill is also relatively small, as adults measure 2 to 3.2 cm (0.79 to 1.26 in) in culmen length.[13] The tarsus of the wild turkey is quite long and sturdy, measuring from 9.7 to 19.1 cm (3.8 to 7.5 in). The tail is also relatively long, ranging from 24.5 to 50.5 cm (9.6 to 19.9 in).[14]
The record-sized adult male wild turkey, according to the National Wild Turkey Federation, weighed 16.85 kg (37.1 lb), with records of tom turkeys weighing over 13.8 kg (30 lb) uncommon but not rare.[15] While it is usually rather lighter than the waterfowl, after the trumpeter swan (Cygnus buccinator), the turkey has the second heaviest maximum weight of any North American bird. Going on average mass, several other birds on the continent, including the American white pelican (Pelecanus erythrorhynchos), the tundra swan (Cygnus columbianus columbianus) and the very rare California condor (Gymnogyps californianus) and whooping crane (Grus americana) surpass the mean weight of turkeys.[16][11]
Wild turkeys prefer hardwood and mixed conifer-hardwood forests with scattered openings such as pastures, fields, orchards and seasonal marshes. They seemingly can adapt to virtually any dense native plant community as long as coverage and openings are widely available. Open, mature forest with a variety of interspersion of tree species appear to be preferred. In the Northeast of North America, turkeys are most profuse in hardwood timber of oak-hickory (Quercus-Carya) and forests of red oak (Quercus rubra), beech (Fagus grandifolia), cherry (Prunus serotina) and white ash (Fraxinus americana). Best ranges for turkeys in the Coastal Plain and Piedmont sections have an interspersion of clearings, farms, and plantations with preferred habitat along principal rivers and in cypress (Taxodium distichum) and tupelo (Nyssa sylvatica) swamps.
In Appalachian and Cumberland plateaus, birds occupy mixed forest of oaks and pines on southern and western slopes, also hickory with diverse understories. Bald cypress and sweet gum (Liquidambar styraciflua) swamps of s. Florida; also hardwood of Cliftonia (a heath) and oak in north-central Florida. Lykes Fisheating Creek area of s. Florida has up to 51% cypress, 12% hardwood hammocks, 17% glades of short grasses with isolated live oak (Quercus virginiana); nesting in neighboring prairies. Original habitat here was mainly longleaf pine (Pinus palustris) with turkey oak (Quercus laevis) and slash pine (Pinus caribaea) "flatwoods," now mainly replaced by slash pine plantations.
Despite their weight, wild turkeys, unlike their domesticated counterparts, are agile, fast fliers. In ideal habitat of open woodland or wooded grasslands,[17] they may fly beneath the canopy top and find perches. They usually fly close to the ground for no more than 400 m (a quarter mile).[18]
Wild turkeys have very good eyesight, but their vision is very poor at night. They will generally not see a predator until it is too late. At twilight most turkeys will head for the trees and roost well off the ground: it is safer to sleep there in numbers than to risk being victim to predators who hunt by night. Because wild turkeys don't migrate, in snowier parts of the species's habitat like the Northeast, Rockies, much of Canada, and the Midwest, it is very important for this bird to learn to select large conifer trees where they can fly onto the branches and shelter from blizzards.[19]
Wild turkeys have many calls: gobbles, plain yelp, cluck & purr, clucks, cutting, excited hen, fly down, tree yelp, old hen, kee kee, putts. In early spring, males older than a year old (called gobblers or toms) and, occasionally to a lesser extent, males younger than a year old (called "jakes") gobble to announce their presence to females and competing males. The gobble of a wild turkey can be heard up to a mile away. Males also emit a low-pitched "drumming" sound, produced by the movement of air in the air sac in the chest, similar to the booming of a prairie chicken. In addition they produce a sound known as the "spit" which is a sharp expulsion of air from this air sac.
Wild turkeys are omnivorous, foraging on the ground or climbing shrubs and small trees to feed. They prefer eating acorns, nuts and other hard mast of various trees, including hazel, chestnut, hickory, and pinyon pine as well as various seeds, berries such as juniper and bearberry, buds, leaves, fern fronds,[20] roots and insects. Turkeys also occasionally consume amphibians such as salamanders[20] and small reptiles such as lizards and small snakes. Poults have been observed eating insects, berries, and seeds. Wild turkeys often feed in cow pastures, sometimes visit backyard bird feeders, and favor croplands after harvest to scavenge seeds on the ground. Turkeys are also known to eat a wide variety of grasses.
Turkey populations can reach large numbers in small areas because of their ability to forage for different types of food. Early morning and late afternoon are the desired times for eating.
Males are polygamous, mating with as many hens as they can. Male wild turkeys display for females by puffing out their feathers, spreading out their tails and dragging their wings. This behavior is most commonly referred to as strutting. Their heads and necks are colored brilliantly with red, white, and blue. The color can change with the turkey's mood, with a solid white head and neck being the most excited. They use gobbling, drumming/booming and spitting as signs of social dominance, and to attract females. Courtship begins during the months of March and April, which is when turkeys are still flocked together in winter areas.
Males may be seen courting in groups, often with the dominant male gobbling, spreading his tail feathers (strutting), drumming/booming and spitting. In a study, the average dominant male that courted as part of a pair of males fathered six more eggs than males that courted alone. Genetic analysis of pairs of males courting together shows that they are close relatives, with half of their genetic material being identical. The theory behind the team-courtship is that the less dominant male would have a greater chance of passing along shared genetic material than if it were courting alone.[21]
When mating is finished, females search for nest sites. Nests are shallow dirt depressions engulfed with woody vegetation. Hens lay a clutch of 10–14 eggs, usually one per day. The eggs are incubated for at least 28 days. The poults are precocial and nidifugous, leaving the nest in about 12–24 hours. Turkeys are a ground nesting bird, because of this they are heavily predated on. Reproductivley active wild turkeys have a lower annual survival rate due to predation on the nest.[22]
Turkey are known to occasionally forage with deer and squirrels, and may even play with them.[23] By foraging together, each can help the other watch for predators with their different senses: the deer with their improved olfactory sense, the turkey with its superior sight, and squirrels providing an additional set of eyes from the air.[24]
Predators of eggs and nestlings include raccoons (Procyon lotor), Virginia opossums (Didelphis virginiana), striped skunks (Mephitis mephitis), gray foxes (Urocyon citnereoargenteus), groundhogs (Marmota monax), other rodents and spotted skunks (Spilogale ssp.).[25][26][27][28] Predators of poults in addition to nestlings and eggs also include several species of snake, namely rat snakes (Elaphe ssp.), gopher snakes (Pituophis catenifer) and pinesnakes (Pituophis ssp.).
Avian predators of poults include raptors such as bald eagles (Haliaeetus leucocephalus), barred owl (Strix varia), red-shouldered (Buteo lineatus), red-tailed (Buteo jamaicensis), white-tailed (Geranoaetus albicaudatus), and Harris's hawks (Parabuteo unicinctus)—and the smallish Cooper's hawk (Accipiter cooperii) and broad-winged hawk (Buteo platypterus) (both likely of very small poults).[29][30][31][32][33][34] Mortality of poults is greatest in the first 14 days of life, especially of those roosting on the ground, decreasing most notably after half a year, when they attain near adult sizes.[35]
In addition to poults, hens and adult-sized fledglings (but not, as far as is known, adult male toms) are vulnerable to predation by great horned owls (Bubo virginianus),[36] northern goshawk (Accipiter gentilis),[37] domestic dogs (Canis familiaris), domestic cats (Felis catus), and red foxes (Vulpes vulpes).[38] Predators of both adults and poults include coyotes (Canis latrans),[39] gray wolves (Canis lupus),[40] bobcats (Lynx rufus),[41] cougars (Puma concolor),[42] Canada lynx (Lynx canadensis), golden eagles (Aquila chrysaetos),[43] and possibly American black bears (Ursus americanus), which also will eat the eggs if they find them.[44] The American alligator (Alligator mississippiensis) is a predator to all turkeys of all ages in the Southeast and will eat them if they get too close to water. Humans are now the leading predator of adult turkeys.[45][46] When approached by potential predators, turkeys and their poults usually run away rather than fly away from potential predators, though they may also fly short distances if pressed.
Occasionally, if cornered, adult turkeys may try to fight off predators and large male toms can be especially aggressive in self-defense. When fighting off predators, turkeys may kick with their legs, using the spurs on their back of the legs as a weapon, bite with their beak and ram with their relatively large bodies and may be able to deter predators up to the size of mid-sized mammals.[47][48] Hen turkeys have been seen to chase off at least two species of hawks in flight when their poults are threatened.[49]
Wild turkeys are not usually aggressive towards humans, but can be frightened or provoked to behave with aggression. They are most likely to attack if startled, cornered or harassed, or if approached too closely. They also have been seen to chase off humans as well. However, attacks and potential injuries can usually be avoided by giving wild turkeys a respectful amount of space and keeping outdoor spaces clean and undisturbed.[50] Also, turkeys that are habituated to seeing people, at places like parks or campgrounds, can be very tame and will even feed from the hands of people. Male toms occasionally will attack parked cars and reflective surfaces, thinking they see another turkey and must defend their territory, but starting a car engine and moving the car is typically enough to scare it away.
The wild turkey in the United States in 1957 ranged from Arizona to southeastern Oklahoma and thence through Tennessee, West Virginia, New York, and Ontario, and south to Florida and Texas. It formerly ranged north to southeastern South Dakota, southern Wisconsin, and southwestern Maine.[51] The A.O.U. Checklist also described Upper Pliocene fossils in Kansas, and Pleistocene fossils widely from New Mexico to Pennsylvania and Florida.[52] The Californian turkey (Meleagris californica) is an extinct species of turkey indigenous to the Pleistocene and early Holocene of California. It became extinct about 10,000 years ago. The present Californian wild turkey population derives from wild birds re-introduced during the 1960s and 70s from other areas by game officials.[53] They proliferated after 2000 to become an everyday sight in the East Bay Area by 2015.[54]
At the beginning of the 20th century the range and numbers of wild turkeys had plummeted due to hunting and loss of habitat. When Europeans arrived in the New World, they were found from Canada to Mexico in the millions. Europeans and their successors knew nothing about the life cycle of the bird and ecology itself as a science would come too late, not even in its infancy until the end of the 19th century whereas heavy hunting began in the 17th century. Deforestation destroyed trees turkeys need to roost in. Destruction of subtypes of environment like prairie grassland in the Midwest, canebrakes in the Southeast, and pine in the desert highlands made them easy prey for predators as there was nowhere to hide or lay eggs.
Game managers estimate that the entire population of wild turkeys in the United States was as low as 30,000 by the late 1930s.[55] By the 1940s, it was almost totally extirpated from Canada and had become localized in pockets in the United States, in the north-east effectively restricted to the Appalachians, only as far north as central Pennsylvania. Early attempts used hand reared birds, a practice that failed miserably as the birds were unable to survive in the wild at all and many had imprinted far too much on people to effectively survive. Game officials later made efforts to protect and encourage the breeding of the surviving wild population. They would wait for numbers to grow, catch the surplus birds with a device that would have a projectile net that would ensnare the creature, move it to another unoccupied territory, and repeat the cycle. Over time this included some in the western states where it was not native. There is evidence that the bird does well when near farmland, which provides grain and also berry-bearing shrubs at its edges.[56] As wild turkey numbers rebounded, hunting became legal in 49 U.S. states (excluding Alaska). In 1973, the total U.S. population was estimated to be 1.3 million, and current estimates place the entire wild turkey population at 7 million individuals. Since the 1980s, "trap and transfer" projects have reintroduced wild turkeys to several provinces of Canada as well, sometimes from across the border in the United States. They appear to be very successful as of 2018 as wild turkeys have multiplied rapidly and flourished in places where they were not expected to survive by Canadian scientists, often quite far north of their original expected range.
Attempts to introduce the wild turkey to Britain as a game bird in the 18th century were not successful.[57] George II is said to have had a flock of a few thousand in Richmond Park near London, but they were too easy for local poachers to destroy, and the fights with poachers became too dangerous for the gamekeepers. They were hunted with dogs and then shot out of trees where they took refuge. Several other populations, introduced or escaped, have survived for periods elsewhere in Britain and Ireland, but seem to have died out, perhaps from a combination of lack of winter feed and poaching.[58] Small populations, probably descended from farm as well as wild stock, in the Czech Republic and Germany have been more successful, and there are wild populations of some size following introductions in Hawaii and New Zealand.[59]
There are subtle differences in the coloration, habitat, and behavior of the different subspecies of wild turkeys. The six subspecies are:
This was the turkey subspecies Europeans first encountered in the wild: by the Puritans, the founders of Jamestown, the Dutch who lived in New York, and by the Acadians. Its range is one of the largest of all subspecies, covering the entire eastern half of the United States from Maine in the north to northern Florida and extending as far west as Minnesota, Illinois, and into Missouri. In Canada, its range extends into Southeastern Manitoba, Ontario, Southwestern Quebec (including Pontiac, Quebec and the lower half of the Western Quebec Seismic Zone), and the Maritime Provinces. They number from 5.1 to 5.3 million birds. They were first named 'forest turkey' in 1817, and can grow up to 4 ft (1.2 m) tall. The upper tail coverts are tipped with chestnut brown. Males can reach 30 lb (14 kg) in weight. The eastern wild turkey is heavily hunted in the Eastern USA and is the most hunted wild turkey subspecies.
Most common in the Florida peninsula, they number from 80,000 to 100,000 birds. This bird is named for the famous Seminole leader Osceola, and was first described in 1890. It is smaller and darker than the eastern wild turkey. The wing feathers are very dark with smaller amounts of the white barring seen on other subspecies. Their overall body feathers are an iridescent green-purple color. They are often found in scrub patches of palmetto and occasionally near swamps, where amphibian prey is abundant. Osceola turkeys are the smallest subspecies weighing 16 to 18 pounds (7 to 8 kg).
The Rio Grande wild turkey ranges through Texas to Oklahoma, Kansas, New Mexico, Colorado, Oregon, Utah, and was introduced to central and western California, as well as parts of a few northeastern states. It was also introduced to Hawaiʻi in the late 1950s. Population estimates for this subspecies are around 1,000,000.[60] This subspecies, native to the central plain states, was first described in 1879, and has relatively long legs, better adapted to a prairie habitat. Its body feathers often have a green-coppery sheen. The tips of the tail and lower back feathers are a buff-to-very light tan color. Its habitats are brush areas next to streams, rivers or mesquite, pine and scrub oak forests. The Rio Grande turkey is gregarious.
The Merriam's wild turkey ranges through the Rocky Mountains and the neighboring prairies of Wyoming, Montana and South Dakota, as well as much of the high mesa country of New Mexico, Arizona, southern Utah and The Navajo Nation, with number from 334,460 to 344,460 birds. The subspecies has also been introduced into Oregon. The initial releases of Merriam's turkeys in 1961 resulted in establishing a remnant population of Merriam's turkeys along the east-slope of Mt. Hood and natural immigration of turkeys from Idaho has established Merriam's flocks along the eastern border of Oregon.[61] Merriam's wild turkeys live in ponderosa pine and mountainous regions. The subspecies was named in 1900 in honor of Clinton Hart Merriam, the first chief of the U.S. Biological Survey. The tail and lower back feathers have white tips and purple and bronze reflections.
Native from the central valleys to the northern mountains of Mexico and the southernmost parts of Arizona and New Mexico. Gould's wild turkeys are heavily protected and regulated. The subspecies was first described in 1856. They exist in small numbers in the U.S. but are abundant in northwestern portions of Mexico. A small population has been established in southern Arizona. Gould's are the largest of the six subspecies. They have longer legs, larger feet, and longer tail feathers. The main colors of the body feathers are copper and greenish-gold. This subspecies is heavily protected owing to its skittish nature and threatened status.
The south Mexican wild turkey is considered the nominate subspecies, and the only one that is not found in the United States or Canada. In central Mexico, archaeological M. gallopavo bones have been identified at sites dating to 800–100 BC [10], [11]. It is unclear whether these early specimens represent wild or domestic individuals, but domestic turkeys were likely established in central Mexico by the first half of the Classic Period (c. AD 200–1000). Late Preclassic (300 BC–AD 100) turkey remains identified at the archaeological site of El Mirador (Petén, Guatemala) represent the earliest evidence of the export of the south Mexican wild turkey (Meleagris gallopavo gallopavo) to the ancient Maya world. The south Mexican wild subspecies, M. g. gallopavo, was domesticated either in Mexico or by Preclassic peoples in Mesoamerica, giving rise to the domestic turkey (M. g. domesticus).[62] The Spaniards brought this tamed subspecies back to Europe with them in the mid-16th century; from Spain it spread to France and later Britain as a farmyard animal, usually becoming the centerpiece of a feast for the well-to-do. By 1620 it was common enough so that Pilgrim settlers of Massachusetts could bring turkeys with them from England, unaware that it had a larger close relative already occupying the forests of Massachusetts. It is one of the smallest subspecies and is best known in Spanish from its Aztec-derived name, guajolote. This wild turkey subspecies is thought to be critically endangered, as of 2010.
The idea that Benjamin Franklin preferred the turkey as the national bird of the United States comes from a letter he wrote to his daughter Sarah Bache on 26 January 1784.[63] The main subject of the letter is a criticism of the Society of the Cincinnati, which he likened to a chivalric order, which contradicted the ideals of the newly founded American republic.[64] In one section of the letter, Franklin remarked on the appearance of the bald eagle on the Society's crest:

He is a Bird of bad moral Character. He does not get his Living honestly. With all this Injustice, he is never in good Case but like those among Men who live by Sharping & Robbing he is generally poor and often very lousy. Besides he is a rank Coward: The little King Bird not bigger than a Sparrow attacks him boldly and drives him out of the District. He is therefore by no means a proper Emblem for the brave and honest Cincinnati of America who have driven all the King birds from our Country ...
I am on this account not displeased that the Figure is not known as a Bald Eagle, but looks more like a Turkey. For in Truth the Turkey is in Comparison a much more respectable Bird, and withal a true original Native of America ... He is besides, though a little vain & silly, a Bird of Courage, and would not hesitate to attack a Grenadier of the British Guards who should presume to invade his Farm Yard with a red Coat on.
Franklin never publicly voiced opposition to the bald eagle as a national symbol, nor did he ever publicly suggest the turkey as a national symbol.[64][65]
The wild turkey, throughout its range, plays a significant role in the cultures of many Native American tribes all over North America. Outside of the Thanksgiving feast, it is a favorite meal in eastern tribes. Eastern Native American tribes consumed both the eggs and meat, sometimes turning the latter into a type of jerky to preserve it and make it last through cold weather. They provided habitat by burning down portions of forests to create meadows which would attract mating birds, and thus give a clear shot to hunters. The feathers of turkeys also often made their way into the rituals and headgear of many tribes. Many leaders, such as Catawba chiefs, traditionally wore turkey feather headdresses.[66]

La ideo ke Benjamin Franklin preferis la Komunan meleagron kiel nacia birdo de Usono devenas el letero kiun li sendis al sia filino Sarah Bache la 26an de januaro de 1784, kritikante la elekton de la Blankkapa maraglo kiel nacia birdo kaj sugestante ke meleagro povus esti pli taŭga alternativo.[7]
En tiu letero Franklin kritikis la maldecan moralan karakteron de la Blankkapa maraglo kiu rabas fiŝojn jam kaptitajn de aliaj rabobirdoj kaj kiu estas tiom malkuraĝa ke eĉ malgranda tirano ne pli granda ol pasero atakas kaj fuĝigas ĝin. Alternative la meleagro estas vere origine indiĝena de Ameriko kaj estas tiom kuraĝa ke povas ataki soldaton kiu invadus ĝian farmon. Tiu letero de Franklin estis verkita post kiam la Usona Kongreso estis dediĉinta ses jarojn por elekti la Blankkapan maraglon kiel simbolo de la ĵusformita ŝtato. El pavo salvaje (Meleagris gallopavo), también conocido como guajolote, gallipavo, [2][3] guajolote norteño, pisca, chompipe, guanajo, totole, cocono, o simplemente pavo, es una especie de ave galliforme de la familia Phasianidae (guajolotes, codornices, perdices, y faisanes[4]). Es originario de México, pero se ha introducido como ave doméstica en casi todo el mundo. Su nombre originario en lengua náhuatl es huey xolotl (literalmente "gran criado"), de lo cual deriva su denominación popular como "guajolote". Su población al momento de la llegada de los europeos se calcula en cuarenta millones de ejemplares, siendo fuertemente cazada o domesticada. En la actualidad se estima que hay cuatro millones en estado salvaje y muchos millones más en estado doméstico.
Su coloración es generalmente café oscura con reflejos verde metálico o bronceados. Los machos poseen plumas iridiscentes color rojo, verde, cobre, bronce y dorado. Las hembras son color gris o café. No posee plumas en cabeza y cuello, pero sí carúnculas rojizas, púrpura y azul. Posee una papada rojiza y una formación carnosa colgante que crece en la base del pico. Se distribuye en América del Norte, desde el sur de Ontario, Canadá, hasta el sur de México. En México se le ha registrado en veinticuatro estados del país (las excepciones son Baja California, Baja California Sur, Estado de México, Ciudad de México, Morelos, Tabasco, Campeche y Yucatán). Habita principalmente bosque de pino-encino, también puede encontrarse en matorral xerófilo o en bosque de coníferas, de encino o mesófilo. Si bien en México la NOM-059-SEMARNAT-2001 clasificaba a la especie como "Sujeta a protección especial", en la NOM-059-SEMARNAT-2010 aparece como "No evaluada"; la UICN 2019-1 la considera como de Preocupación menor. Sus poblaciones son disminuidas por la explotación forestal, por el impacto de las actividades humanas y porque es muy susceptible a contraer enfermedades. La tendencia poblacional del guajolote silvestre parece ser que va en aumento, por lo cual no se encuentra en una categoría más alta, según la UICN. En México, es de gran importancia cinegética y está considerada como especie de caza limitada (se emite un permiso que autoriza la cacería de solo un ejemplar por temporada). La especie se ve afectada por el comercio ilícito nacional. [4]
En muchos países, este pavo es apreciado por su carne, y su variante doméstica es una popular ave de corral.
Dentro de su zona de distribución natural, las subespecies se encuentran en una amplia gama de hábitats incluyendo llanuras y montes, necesitando resguardo para los nidos y de árboles para posarse y evadir a los depredadores. Pasan gran parte del día buscando alimento en los suelos y solo vuelan cortas distancias sin llegar a migrar.
Por lo general son omnívoros, alimentándose de pequeños insectos, semillas y plantas, y variando el peso y tamaño considerablemente de una subespecie a otra. Son de comportamiento diurno, posándose por las noches en las copas de los árboles.
Los pavos se organizan en una sociedad jerárquica y se comunican mediante llamadas y contacto físico, sumándose a estos los cortejos sexuales; según la estación, los machos y las hembras se comportan de manera distinta formando grupos de tamaño y funciones variables.
Fuera de la época de reproducción, los machos y las hembras viven en grupos separados; llegando la primavera se crean "pavadas de cortejo", grupos de machos adultos y hembras de mayor tamaño.
Cuando es época de reproducción, los machos fijan territorios y los grupos de hembras se desarticulan, provocando que las hembras transiten solitarias con total libertad por los territorios; los machos que han conseguido fijar su dominio sobre un territorio trataran de atraer hembras con llamadas sonoras y realizando movimientos complejos. En grupos de machos jóvenes, solo el más dominante es el que se aparea. Comúnmente un grupo pequeño de machos dominantes tiene total dominio sobre un gran número de individuos. Cuando el macho y la hembra han consumado el acto sexual, empiezan la construcción del nido, pudiéndose aparear diariamente hasta el momento de empollar. Por lo regular las hembras forman grupos para nidificar y criar a sus pavitos en el mismo nido; la madre pavo depositara de cinco a ocho huevos y los empollará alrededor de veintiocho días, acto seguido los polluelos permanecerán en el nido hasta los seis o siete meses. Si el apareamiento no provoca el nacimiento de crías, las hembras forman pavadas sin nidada. En el invierno los machos y las hembras se separan formando "pavadas invernales"; los polluelos machos abandonan el nido y forman sus propias "pavadas invernales".

El pavo salvaje (Meleagris gallopavo), también conocido como guajolote, gallipavo, guajolote norteño, pisca, chompipe, guanajo, totole, cocono, o simplemente pavo, es una especie de ave galliforme de la familia Phasianidae (guajolotes, codornices, perdices, y faisanes). Es originario de México, pero se ha introducido como ave doméstica en casi todo el mundo. Su nombre originario en lengua náhuatl es huey xolotl (literalmente "gran criado"), de lo cual deriva su denominación popular como "guajolote". Su población al momento de la llegada de los europeos se calcula en cuarenta millones de ejemplares, siendo fuertemente cazada o domesticada. En la actualidad se estima que hay cuatro millones en estado salvaje y muchos millones más en estado doméstico.
Su coloración es generalmente café oscura con reflejos verde metálico o bronceados. Los machos poseen plumas iridiscentes color rojo, verde, cobre, bronce y dorado. Las hembras son color gris o café. No posee plumas en cabeza y cuello, pero sí carúnculas rojizas, púrpura y azul. Posee una papada rojiza y una formación carnosa colgante que crece en la base del pico. Se distribuye en América del Norte, desde el sur de Ontario, Canadá, hasta el sur de México. En México se le ha registrado en veinticuatro estados del país (las excepciones son Baja California, Baja California Sur, Estado de México, Ciudad de México, Morelos, Tabasco, Campeche y Yucatán).
Habita principalmente bosque de pino-encino, también puede encontrarse en matorral xerófilo o en bosque de coníferas, de encino o mesófilo. Si bien en México la NOM-059-SEMARNAT-2001 clasificaba a la especie como "Sujeta a protección especial", en la NOM-059-SEMARNAT-2010 aparece como "No evaluada"; la UICN 2019-1 la considera como de Preocupación menor. Sus poblaciones son disminuidas por la explotación forestal, por el impacto de las actividades humanas y porque es muy susceptible a contraer enfermedades. La tendencia poblacional del guajolote silvestre parece ser que va en aumento, por lo cual no se encuentra en una categoría más alta, según la UICN. En México, es de gran importancia cinegética y está considerada como especie de caza limitada (se emite un permiso que autoriza la cacería de solo un ejemplar por temporada). La especie se ve afectada por el comercio ilícito nacional.
En muchos países, este pavo es apreciado por su carne, y su variante doméstica es una popular ave de corral.

Metskalkunid on polügaamsed, paaritudes võimalikult paljude emastega. Paaritumine kestab märtsist aprillini. See kõik toimub veel siis, kui linnud on parvena talvituspaikades. Kui paaritumine on läbi, otsivad emased endale sobiva pesakoha. Pesad on madalad lohud maapinnas, täidetud peenikeste puuokstega. Mune on harilikult 10–14, tavaliselt munetakse 1 päevas. Välja hautakse need vähemalt 28 päevaga.
Pojad on algul kollakad, pruunide triipudega. Hiljem omandavad need kalkunitele omase läikivmusta tooni.
Metskalkunite arvukus on alates 20. sajandist pidevalt kasvanud.

Kesykalkkunaa kasvatetaan nykyään laajalti siipikarjan lihatuotantoon. Kesykalkkunasta on jalostettu lihaksikas, nopeakasvuinen lintu, jolla on erityisen suuret rintalihakset. Tuotantokalkkunat ovat useimmiten valkoisia.
Kalkkunaa syödään jouluna Pohjois-Amerikassa ja laajalti Euroopassa sekä kiitospäivänä Pohjois-Amerikassa.
Yhdysvalloissa kulutetaan keskimäärin 7,4 kiloa kalkkunaa henkeä kohti vuodessa, kun Euroopassa luku on 3,5 kiloa. Euroopassa kalkkuna on suosituinta Saksassa (6 kg/hlö), Puolassa (5,5 kg) sekä Ranskassa ja Italiassa (5 kg). [4]
Suomessa kalkkunoita on kasvatettu 1950-luvulta asti[5]. Suomessa kulutetaan yhtä kansalaista kohden vuodessa noin 1,8 kiloa kalkkunanlihaa, mikä on eurooppalaisittain vähäinen määrä. Kulutus on korkeimmillaan joulun aikaan.[4] Yli 98 % suomalaisesta kalkkunanlihasta tuotetaan Satakunnan maakunnan alueella.[6]
Lihaksi teurastettavien kalkkunoiden vanhemmat tuodaan Suomeen lentokoneella päivän vanhoina untuvikkoina. Ne kasvavat suomalaisella nuorikkotiloilla, josta ne siirtyvät munimaan munittamoihin. Munat kuljetetaan kalkkunahautomolle, jossa kuukauden kuluttua kuoriutuu untuvikkoja. Untuvikot kuljetaan kuoriutumispäivänään kasvatustiloille. Kanat ja kukot kasvatetaan erillään toisistaan.[7]
Kalkkunanaaraat kuljetetaan tuottajalta teurastamolle 14 viikon eli 3,5 kuukauden ikäisinä ja kukot 18 viikon eli 4,5 kuukauden ikäisinä[7]. Teurastettaessa naaraat painavat keskimäärin 6,5 kg ja kukot lähes puolet enemmän. Tilat siivotaan ja desinfioidaan kasvatuserien jälkeen eli 4 kk välein.[4]
Kalkkunoille syötetään rakeistettua rehuseosta, jossa on esimerkiksi kauraa, vehnää, hernettä, rypsinsiementä ja härkäpapua.[8] Sen lisäksi niille voidaan syöttää tilalla kasvatettua täysjyväviljaa[7]. Toisin kuin Yhdysvalloissa, lintuja lääkitään antibiooteilla vain poikkeustapauksissa.[4]
Kalkkunat kasvatetaan lattiakasvattomoissa. Kuivikkeena niillä on kutterinpurua tai turvetta[7]. Suomessa ei ole myynnissä luomukalkkunoita, joille sekä syötettäisiin luomuravintoa, että päästettäisiin ulkoilemaan, eikä laidunkalkkunoita, jotka pääsisivät ulkoilemaan. Lainsäädäntö kuitenkin mahdollistaisi luomu- ja laidunkalkkunatuotannon. Suurin este on kuluttajien kannalta kalliimpi hinta, minkä takia tuottajien myynti olisi mahdollisesti vähäisempää.[8]
Kalkkunan lihassyyrakenne on selvästi karkeampi ja liha on tummempaa vaaleanpunaisen sävyä kuin broilerin. Väri johtuu lihasten hapensaannista huolehtivaan myoglobiiniin sitoutuneen raudan suuresta määrästä. Kalkkunanliha maistuu yhtä murealta kuin broilerin.[9]
Kalkkuna on kotoisin Meksikosta, jossa sen luonnonvarainen esi-vanhempi kesytettiin noin 800 eaa[10].
Ensimmäinen kalkkuna-ateria Euroopassa lienee tarjottu 1500-luvun puolenvälin jälkeen, jolloin espanjalaiset merimiehet toivat lintuja Eurooppaan[10]. Vuonna 1570 kalkkunoita oli tarjolla Ranskassa Kaarle IX:n hääpöydässä[11]. 1630-luvulta se alkoi yleistyä Keski-Euroopan yläluokan keittiöissä. Nykyiset jalostetut lihantuotantokalkkunat polveutuvat samoista linnuista, kuin ensimmäiset eurooppalaiset kalkkunat, sillä Euroopassa jalostettiin kalkkunasta rotuja, jotka paitsi levisivät Euroopan hoveissa, myös kulkeutuivat myös takaisin Yhdysvaltoihin 1700-luvulla[10].
Usein kalkkunan uskotaan virheellisesti saapuneen Eurooppaan jo aiemmin. Sekaannuksia on aiheuttanut muun muassa tunnettu maalaus Henrik VIII:sta (1491−1547), jossa hänellä on kädessään suuri linnun koipipala, joka muistuttaa kovasti mittasuhteiltaan kalkkunaa. On arvioitu, että taiteilija on ottanut hieman vapauksia ja liioitellut palan kokoa, tai sitten kyseessä on ollut ankan tai hanhen koipipala. Noista Eurooppaan tuoduista linnuista polveutuvatkin sitten kaikki tämän päivän jalostetut lihantuotantokalkkunat — myös USA:ssa, jonne Euroopassa jalostuneet kalkkunarodut kulkeutuivat 1700-luvulla takaisin vakiinnuttamaan asemaansa kiitospäivän herkkuruokana.

Le Dindon sauvage (Meleagris gallopavo) est une espèce d'oiseaux appartenant à la famille des Phasianidae.
Son nom scientifique d'espèce se réfère au coq (genre Gallus) et au paon (genre Pavo) et celui de genre au héros grec Méléagre dont le destin est placé sous les couleurs du feu, du charbon et de la braise (couleurs de la dinde rouge vif sur fond noir). Ses quatre sœurs, les Méléagrides, furent transformées en volailles (probablement des pintades) après sa mort[1].
Le dindon sauvage occupe un territoire de plus en plus étendu vers le nord, principalement au sud du Québec dans les régions montagneuses, ainsi qu'au Nouveau-Brunswick et en Outaouais. Ceci est dû à la destruction de son habitat naturel par l’agriculture aux États-Unis et au réchauffement climatique.
Le dindon habite les forêts mixtes, les forêts de feuillus, les marais, les champs, les vergers, pâturages... C'est un animal qui s'adapte à de nombreux milieux avec des zones ouvertes (clairières, terres agricoles, marécages…).
Les mâles sont polygames, c'est-à-dire qu'ils tentent de s'accoupler avec le plus de femelles possibles. Durant la saison de reproduction, les dindons paradent en gonflant leurs plumes.
Une fois l'accouplement terminé, la femelle cherche un endroit où pondre. Les dindes pondent généralement de 10 à 14 œufs, souvent 1 par jour. L'incubation dure environ 28 jours.
La maturité sexuelle est atteinte vers l'âge de 2 ans[2].
Les dindons sauvages sont omnivores. Ils se nourrissent au sol ou sur les arbustes. Le régime alimentaire des adultes est composé de glands, de noix, de baies (genévrier, busserole...), de racines et d'insectes. Occasionnellement, ils consomment des petits serpents, des amphibiens, des lézards, des crustacés et des mollusques[3]. Des dindonneaux ont été observés en train de manger des baies, des insectes et des graines.
Malgré son poids, le dindon sauvage vole rapidement (65 km/h[2]), mais sur de courtes distances. Il vole généralement près du sol et peut monter jusqu'à 400 m de haut[4]. Leur vision étant très mauvaise la nuit, les dindons sauvages se perchent sur un arbre au crépuscule pour se protéger des prédateurs nocturnes.

La sous-espèce de Dindon sauvage de l'Est est l'oiseau que les Européens rencontrèrent pour la première fois dans la nature: les Puritains, les fondateurs de Jamestown, les Hollandais qui vivaient à New York, et les Acadiens. Son aire de répartition est l'une des plus vastes de toutes les sous-espèces, couvrant toute la moitié est des États-Unis, du Maine au nord jusqu'au nord de la Floride et s'étendant aussi loin à l'ouest que le Minnesota, l'Illinois et le Missouri. Au Canada, son aire de distribution s'étend dans le sud-est du Manitoba, l'Ontario, le sud-ouest du Québec et les provinces maritimes. La population de cette sous-espèce comptent de 5,1 à 5,3 millions d'oiseaux. Ils ont été nommés pour la première fois «dindons des forêts» en 1817. Le Dindon sauvage de l'Est peut atteindre 1,2 m de haut. Les plumes supérieures de la queue sont bordées de brun châtain. Les mâles peuvent atteindre 14 kg. Le dindon sauvage de l'Est est fortement chassé dans l'est des États-Unis. C'est la sous-espèce de dindon sauvage la plus chassée.
Plus commune dans la péninsule de Floride, cette sous-espèce compte de 80 000 à 100 000 oiseaux. La sous-espèce Osceola porte le nom du célèbre chef séminole Osceola. Elle a été décrite pour la première fois en 1890. Le Dindon sauvage Osceola est plus petit et plus foncé que le dindon sauvage de l'Est. Les plumes des ailes sont très sombres avec de plus petites quantités de barres blanches observées sur d'autres sous-espèces. L'ensemble de leurs plumes est d'une couleur vert-violet irisé. On les trouve souvent dans les broussailles de palmier nain et parfois près des marécages, où les proies sont abondantes. Les dindons Osceola forme la sous-espèce de la plus petite taille, pesant de 7 à 8 kg.
Le dindon sauvage du Rio Grande s'étend du Texas à l'Oklahoma, au Kansas, au Nouveau-Mexique, au Colorado, à l'Oregon, à l'Utah et a été introduit dans le centre et l'ouest de la Californie. Le dindon sauvage du Rio Grande se retrouve dans quelques États du nord-est. Il a également été introduit à Hawaii à la fin des années 1950. Les estimations de population pour cette sous-espèce sont d'environ 1 000 000. Cette sous-espèce, originaire des États des plaines centrales, a été décrite pour la première fois en 1879. Elle possède des pattes relativement longues, mieux adaptées à un habitat de prairie. Ses plumes ont souvent un éclat vert-cuivré. Les extrémités des plumes de la queue et du bas du dos sont de couleur chamois à très clair. Ses habitats de prédilection sont des zones de broussailles près de ruisseaux, de rivières ou de forêts de mesquites, de pins et de chênes broussailleux. La dinde du Rio Grande est grégaire.
Le dindon sauvage de Merriam possède un aire de distribution qui s'étend à travers les montagnes Rocheuses et les prairies voisines du Wyoming, du Montana et du Dakota du Sud, ainsi qu'une grande partie du haut pays mesa du Nouveau-Mexique, de l'Arizona, du sud de l'Utah et de la nation Navajo. Cette sous-espèce a été introduite dans l'Oregon. Les premières introductions de dindons de Merriam en 1961 ont abouti à l'établissement d'une population permanente le long du versant est du mont Hood et l'immigration naturelle de dindons provenant de l'Idaho a établi les troupeaux de Merriam le long de la frontière est de l'Oregon. Les dindons sauvages de Merriam vivent dans les forêts de pins ponderosas et dans les régions montagneuses. La sous-espèce a été nommée en 1900 en l'honneur de Clinton Hart Merriam, le premier chef de l'US Biological Survey. Les plumes de la queue et du bas du dos ont des pointes blanches et des reflets violets et bronze.
Originaire des vallées centrales des montagnes du nord du Mexique et des parties les plus méridionales de l'Arizona et du Nouveau-Mexique . Les dindes sauvages de Gould sont fortement protégées et réglementées. La sous-espèce a été décrite pour la première fois en 1856. Ils existent en petit nombre aux États-Unis mais sont abondants dans les parties nord-ouest du Mexique. Une petite population a été établie dans le sud de l'Arizona. Les Gould sont la plus grande des six sous-espèces. Ils ont des pattes plus longues, des pieds plus grands et des plumes de la queue plus longues. Les couleurs principales des plumes sont le cuivre et l'or verdâtre. Cette sous-espèce est fortement protégée en raison de sa nature capricieuse et de son statut menacé.
Le dindon sauvage du sud du Mexique est considéré comme la sous-espèce nominale et la seule qui ne se trouve pas aux États-Unis ou au Canada. Dans le centre du Mexique, des ossements archéologiques de M. gallopavo ont été identifiés sur des sites datant de 800 à 100 avant JC[5]. On ne sait pas si ces premiers spécimens représentent des individus sauvages ou domestiques, mais les dindes domestiques ont probablement été établies dans le centre du Mexique dans la première moitié de la période classique (vers 200-1000 après JC). Les restes de dinde préclassique tardif (300 av. J.-C. – 100 apr. J.-C.) identifiés sur le site archéologique d'El Mirador (Pétén, Guatemala) représentent la première preuve de l'exportation de la dinde sauvage du sud du Mexique (Meleagris gallopavo gallopavo) vers l'ancien monde maya. Le sud mexicain sous-espèce sauvage, M. g. gallopavo , a été domestiqué soit au Mexique, soit par les peuples préclassiques de Méso -Amérique , donnant naissance à la dinde domestique ( M. g. domesticus ). Les Espagnols ont ramené cette sous-espèce apprivoisée en Europe avec eux au milieu du XVIe siècle; d'Espagne, il s'est répandu en France et plus tard en Grande-Bretagne en tant qu'animal de basse-cour, devenant généralement la pièce maîtresse d'un festin pour les aisés. En 1620, il était assez courant pour que les colons pèlerins du Massachusetts puissent apporter des dindes avec eux d' Angleterre ., ignorant qu'il avait un parent proche plus grand occupant déjà les forêts du Massachusetts. C'est l'une des plus petites sous-espèces et elle est surtout connue en espagnol par son nom d'origine aztèque, guajolote . On pense que cette sous-espèce de dindon sauvage est en danger critique d'extinction depuis 2010.

Os pavos habitan o norte de América, desde os Estados Unidos até o sur de México; as subespecies atópanse nunha ampla gama de hábitats incluíndo chairas e montes, necesitando abeiro para os niños e de árbores para se pousar e evadir os depredadores. Pasan gran parte do día a procurar alimento polo chan e só voan curtas distancias sen chegar a migrar.
Polo xeral son omnívoros e aliméntanse de pequenos insectos, sementes e plantas. O peso e o talle varía considerabelmente dunha subespecie a outra e son de comportamento diúrno pousándose á noite nas pólas das árbores.
Os pavos organízanse nunha sociedade xerárquica e comunícanse mediante chamadas e contacto físico sumándose a estes os cortexos sexuais. Segundo a estación, os machos e as femias compórtanse de xeito distinto formando grupos de tamaño e funcións variábeis.
Fóra da época de reprodución os machos e as femias viven en grupos separados, mais chegando a primavera créanse "pavadas de cortexo", grupos de machos adultos e femias de maior tamaño. Neses momentos os machos fixan territorios e os grupos de femias desarticúlanse, provocando que as femias transiten solitarias con total liberdade polos territorios; os machos que conseguiron fixar o seu dominio sobre un territorio tratarán de atraer femias con chamadas sonoras e realizando movementos complexos. En grupos de machos novos só o máis dominante é o que se aparea e comunmente un grupo pequeno de machos dominantes ten total dominio sobre un gran número de individuos.
Cando o macho e maila femia consumaron o acto sexual empezan a construción do niño podéndose aparear diariamente até o momento de chocar. Polo regular as femias forman grupos para aniñar e criar os seus pitos no mesmo niño. A nai pavo depositará de 5 a 8 ovos e chocaraos arredor de 28 días; a seguir os pitos ficarán no niño até os 6 ou 7 meses. Se o apareamento non provoca o nacemento de crías as femias forman pavadas sen niñada. Polo inverno os machos mailas femias sepáranse formando "pavadas invernais" e os pitos machos deixan o niño e forman as súas propias "pavadas invernais".

Divlji puran (lat. Meleagris gallopavo) je vrsta purana autohtona u Sjevernoj Americi i najteži član porodice kokoški. Ista je vrsta kao i domaći puran, domesticirana varijanta južnomeksičke podvrste divljeg purana. Stanište divljeg purana šumoviti su predjeli s velikim proplancima.
Puran je dug 100-125 centimetara, a dužina ženke je oko 76-95 centimetara. Tjelesna masa purana iznosi 5-11 kilograma, a pure 3-6 kilograma. Najveća dosad izmjerena masa mužjaka purana je 17.2 kilograma. Divlji puran velika je i snažno građena ptica s visokim nogama. Ima duge prste, zaobljena krila duga 1.25-1.44 metra i kratak rep.
Kljun mu je kratak i zakrivljen, a glava i dio vrata pokriveni su bradavičastom kožom. Na gornjem dijelu kljuna, posebice kod purana, nalazi se crvena mesnata izraslina. Po glavi je obrasla finim dlakama. Mužjaci na grudima imaju čuperak perja, tzv. kićicu, koja je uvijek crne boje, čak i kod domaćih bijelih pasmina.
Divlji puran ima dug, taman i lepezast rep, a krila su mu sjajne brončane boje. Spolni dimorfizam je dosta izražen. Mužjak je znatno veći od ženke, te je bogatije obojen od nje. U perju mu ima raznih boja: crvena, ljubičasta, zelena, brončana, bakrena i druge, a ženkino perje je blijeđe, uglavnom u nijansama smeđe i sive. Paraziti mogu utjecati na boju perja kod oba spola, kod mužjaka obojenost može poslužiti kao dokaz zdravlja[1]. Ovaj puran ima ukupno 5000-6000 pera[2].
Divlji puran je svežder, hranu traži na tlu ili penjući se na grmlje ili mala drveća. Idealno vrijeme za hranu mu je rano ujutro ili kasno poslijepodne. Voli jesti žirove i orahe, ali i plodove drugih stabala, uključujući lješnjak, kesten, hikori, bristleconski bor, kao i mnoge sjemenke, bobičaste plodove (kleka i medvjetka) te razne kukce i daždevnjake, koji zauzimaju 10% njegove ishrane. Ponekad jede i vodozemce i gmazove, kao što su mali gušteri i zmije. Purići jedu kukce, bobice i sjemenke. Divlji puran često se hrani na kravljim pašnjacima. Nekad čak u potrazi za sjemenkama pojede koju iz hranilica za ptice. Također, jede i razne trave.
Sezona parenja započinje u rano proljeće, u ožujku i travnju, a traje sve do lipnja. Tada se pure skupljaju u manje skupine. Puran je poligamna ptica, što znači da se pari s većim brojem ženki. Ženke privlači širenjem repa i povlačenjem krila. To se naziva šepurenje, i tada se crvena izraslina u gornjem dijelu kljuna može povećati i dva do tri puta.
Glava i vrat su mu obojeni crveno, bijelo i plavo. Boja se mijenja s puranovim raspoloženjem, a kad je najviše uzbuđen, glava i vrat mu postanu bijeli. Kod osvajanja naklonosti ženki na određenom teritoriju, česte su borbe među mužjacima. Zov divljeg purana u vrijeme parenja može se čuti i do 1,5 km daleko[3]. Nakon sezone parenja puran više ne brine ni za ženke ni za puriće.
Ženka savije skromno gnijezdo na tlu, za koje je karakteristično da nema nikakvog mirisa koji bi mogao privući različite grabljivice. Ženka snese od 10-14 pjegavih jaja, obično jedno po danu. Jaja su prosječne mase od 65 do 75 grama. Pura inkubira jaja od 28 do 29 dana. Purići su potrkušci, napuštaju gnijezdo za 12-24 sata. Purići su, kao i domaći, vrlo su nježni i osjetljivi, posebice na vlagu, sve do razdoblja bobanja, tj. pojave bradavičastih izraslina na glavi i vratu. Brzo se debljaju, osobito mužjaci, pa postaju tromi i lak plijen grabežljivcima. Prosječan životni vijek purana ograničen je na 1.3 do 1.6 godina, a najpoznatiji zabilježen u divljini je 13 godina[4]
Veliki neprijatelji jaja i gnijezda su: rakun, američka naboruša, prugasti američki smrdljivac, siva lisica, ptice grabljivice, svizac, drugi glodavci, američki pjegavi smrdljivac i goveđa zmija. Najveća opasnost i za mlade i za odrasle divlje purane su: kojot, crveni ris, puma, suri orao i (s iznimkom za mužjake) Bubo virginianus, pas , te crvena lisica. Čovjek je trenutno najveći prirodni neprijatelj divljeg purana[5]. Bježeći od neprijatelja, divlji puran postiže brzinu 10 m/s, koja je održiva na samo 100 metara[6].
Divlji puran (lat. Meleagris gallopavo) je vrsta purana autohtona u Sjevernoj Americi i najteži član porodice kokoški. Ista je vrsta kao i domaći puran, domesticirana varijanta južnomeksičke podvrste divljeg purana. Stanište divljeg purana šumoviti su predjeli s velikim proplancima.

Il maschio misura 1–1,25 m di lunghezza per 5–11,5 kg di peso; la femmina 76–95 cm per 2,5–4,5 kg[3].
La testa nuda è ricoperta da una pelle blu o viola. Sia il maschio che le femmina possiedono una grande caruncola, di colore rosso nel maschio, che pende sotto la gola ed un'altra che ricade sul becco. Il piumaggio è in gran parte bronzo-verdastro con riflessi color oro o rame. Le piume che ricoprono il collo, il petto e il dorso hanno le estremità nere. Il maschio possiede un ciuffo di piume sul petto note come «barba», che negli individui più anziani può raggiungere il terreno. Le zampe sono di color malva-rosato, con corti e possenti speroni[3].
Il tacchino viene predato da numerose specie: coyote, volpi, lupi, linci, rapaci, gufi, procioni, moffette e visoni. Dovendo fronteggiare predatori così numerosi, l'uccello deve essere molto prudente. Per questo motivo molti tacchini dormono su alberi che crescono nell'acqua, difficilmente accessibili via terra. Essendo molto pesante, il tacchino riesce a spiccare il volo a malapena e deve correre per alcuni metri prima di poter decollare. I giovani tacchini sono ancora più impacciati e devono svolazzare da un ramo all'altro per andare a dormire in cima ad un albero[3].
Il tacchino selvatico gratta il suolo della foresta, rivoltando le foglie morte e beccando le piante. Si nutre di bacche, erbe, germogli, semi, radici e tuberi. Varia la sua dieta vegetariana con qualche insetto, come i grilli, o con alcuni piccoli crostacei, molluschi e perfino anfibi. Il tacchino selvatico inghiotte interi i suoi alimenti, che vengono macinati nel possente ventriglio. Come molti animali, ingoia piccoli ciottoli per facilitare questa operazione, ma il suo apparato digerente è sorprendentemente efficace. La specie è stata vista anche ingoiare piccoli pezzi di metallo e una volta un esemplare ha ingoiato 24 noci intere in quattro ore[3].
I tacchini selvatici praticano la poliginia (unione di un maschio con più femmine). Le femmine sono pronte alla riproduzione all'età di un anno, mentre i loro compagni devono pazientare più a lungo, costretti a competere con gli smaliziati anziani. Nello sforzo di acquistare una femmina il maschio mette in atto tutto un campionario di seduzioni: apre a ventaglio la coda, abbassa e fa risuonare le remiganti primarie, rigonfia i bargigli, incede impettito sul «terreno di parata», gloglottando con tutta la sua forza.
Non appena fecondata, la femmina si allontana e si accinge a costruirsi un nido: una piccola depressione nel terreno rivestita di foglie. La covata comprende da 8 a 15 uova, ma in un nido se ne possono trovare anche una trentina, deposte da più di una femmina. L'incubazione è esclusivo compito della chioccia che, dovendo assentarsi anche per un breve periodo, si premura di dissumulare le uova sotto uno strato di foglie.
I nidiacei, precoci, sono fatti oggetto delle sollecitazioni materne per le prime due settimane ma, acquisito l'uso delle ali, imparano a trascorrere la notte appollaiati sui rami degli alberi e nel volgere di poche settimane sono perfettamente in grado di badare a sé stessi.
I nidiacei rimangono insieme sino all'età di sei mesi circa, dopo di che i maschi si separano aggregandosi in club piuttosto esclusivi, di difficile accesso anche per qualche maschio solitario. I preadolescenti di solito formano branchi a sé stanti. È un periodo duro per il maschio ruspante, costretto a combattere senza posa per affermare il suo predominio tra i coetanei e definire il suo status sociale nell'ambito dello stormo. I confronti sono spesso vivaci, con largo impiego delle ali e degli speroni, durano magari anche un paio di ore e qualche volta si concludono in modo tragico. Una volta stabilito, l'ordine gerarchico viene però raramente messo in discussione e anche i conflitti tra i gruppi, risolti per lo più a favore dell'unità più agguerrita, si compongono alla fine in un modus vivendi accettabile nel rispetto delle posizioni di dominanza.
Anche tra le femmine vale la forza del rango sociale, ma non in maniera così manifesta come per i maschi. In generale le femmine più anziane prevalgono su quelle più giovani e le femmine emerse per la loro combattività da un gruppo di sorelle sembrano in seguito primeggiare anche nelle contese individuali.
All'approssimarsi dell'epoca del calore i grossi agglomerati maschili si spezzettano, ma i gruppi di fratelli rimangono uniti. Sull'arena, ovviamente, hanno la meglio i maschi dei gruppi dominanti.
Stabilire la gerarchia, anche nell'interno di un gruppo, è essenziale in quanto soltanto gli uccelli «alfa» accedono alla copula. In uno studio si è accertato che 6 dei 170 maschi presenti sul terreno di parata si erano accaparrati tutti gli accoppiamenti[3].
Anche se più piccolo e meno massiccio rispetto alla forma domestica, il tacchino selvatico è un grosso uccello. Vive nelle foreste di montagna, nei boschi e nelle paludi degli Stati Uniti. Al di fuori del periodo di riproduzione, maschi e femmine conducono esistenze separate, appollaiandosi sugli alberi il più in alto possibile. Presente in gran numero in 21 stati del Paese, il tacchino selvatico si incontra dalla costa est degli Stati Uniti fino al sud del Messico. Ad ovest, è presente dallo stato di Washington fino al Nuovo Messico ed al Texas[3].

De kalkoen (Meleagris gallopavo) is een vogel uit de familie van de hoenderachtigen en is familie van bijvoorbeeld de kip.
Een kalkoen wordt gekenmerkt door zijn bronskleurig, iriserend verenkleed en de naakte rode kop, met vlezige blauwe en rode lellen aan beide kanten van zijn snavel en het geluid dat hij voortbrengt.
Een volwassen kalkoen heeft tussen de 5000 en 6000 veren, verspreid over zijn hele lichaam. Het verschil tussen de mannetjes en vrouwtjes is vooral aan de kleur te zien: mannetjes zijn veel kleurrijker dan vrouwtjes. Daarnaast hebben mannetjes ook nog sporen en een baard; beide geslachten worden geboren met een kleine knop aan de achterkant van poten, maar bij het mannelijke geslacht begint dit al snel te groeien tot een gebogen en puntige spoor die wel 5 cm lang kan worden. Mannetjes hebben ook baarden die uit hun borst groeien en een gemiddelde lengte bereiken van 22,5 cm. Hier moet wel aan worden toegevoegd dat 10-20 % van de vrouwtjes ook baarden krijgen.[2]
Deze omnivore dieren eten allerlei zaden, kruiden, wortels, knoppen en bloemen, maar ook insecten en andere ongewervelden staan op het menu. De kuikens voeden zich vooral met insecten. Het grootste deel van het jaar leven kalkoenen in groepjes van ongeveer 20 vogels, maar tijdens het broedseizoen hebben de mannetjes elk een eigen territorium. Ze baltsen met uitgespreide staart, laaggehouden vleugels en opgeheven kop, terwijl ze klokkende geluiden maken. Ze paren met meerdere vrouwtjes.
Kalkoenen zijn zeer weerbaar: ze pikken, krabben en delen klappen uit met hun vleugels. Ze hebben een uitstekend gezichtsvermogen overdag, maar 's nachts kunnen ze minder goed zien. Ze zijn ook zeer beweeglijk. Een kalkoen haalt een loopsnelheid van wel 40 km/h en ze vliegen met snelheden van rond de 90 km/h. Het is een standvogel.[2]
De kalkoen is een gedomesticeerde vogel afkomstig uit Noord en Centraal-Amerika, waar hij door de Maya's gehouden werd (ondersoort Meleagris gallopavo mexicana). In de 16e eeuw werd de vogel in Europa populair op het menu. Het beest werd bij de Europese ontdekking van Amerika aangezien voor een parelhoen, een vogel die men uit het oosten kende. De namen kalkoen ('Calicut-hoen'), dinde (Frans: 'poule d'Inde', 'Indiase kip') en turkey (Engels: 'turkey fowl, turkey hen', 'turkije hen') waren oorspronkelijk synoniemen voor het parelhoen. De Pilgrim Fathers namen kalkoenen mee naar Noord-Amerika. Dat was echter onnodig, aangezien daar een andere grote, wilde ondersoort bleek voor te komen, namelijk de "wild turkey" of Meleagris gallopavo silvestris. Deze ondersoort wordt in de VS traditioneel gegeten op Thanksgiving Day.
In 2010 werden in Nederland ruim 1.000.000 kalkoenen in de landbouw gehouden.[3]

Sporadisch werd een kalkoen gespaard door een president. Ronald Reagan gebruikte als eerste het woord gratie voor een kalkoen om een lastige vraag over gratie voor een journalist af te wenden. Bush Sr. gaf als eerste officieel gratie aan een kalkoen en sindsdien is het een gewoonte en inmiddels een traditie, de National Thanksgiving Turkey.

Curcanul (Meleagris gallopavo) este o pasăre de talie mare, originară din America (SUA, Mexic), domesticită deja în timpul aztecilor, care a fost adusă în Europa de om cu peste 400 de ani în urmă. Curcanul face parte din familia Phasianidae.
Masculul are coloritul mai viu al penajului, care este negru cu reflexe metalice arămii și verzui. Capul și gâtul sunt de culoare roșie, nefiind acoperite de pene. Masculul are deasupra ciocului o cută (pliu) de piele roșie. Este o specie poligamă, un mascul având de regulă 3–4 femele. Un curcan adult poate atinge înălțimea de 1 m și o greutate de 10 kg. Femelele sunt mai mici (90 cm) cu o greutate de 4 kg.
În timpul împerecherii culoarea pielii capului și gâtului devin un albastru și roșu aprins, masculul desfășurând coada în formă de evantai.
Curcanul este o pasăre scurmătoare.
Pasărea mai trăiește în formă sălbatică în pădurile din America, arealul ei fiind sudul Canadei, SUA până în Mexicul de Nord. În formă sălbatică trăiește în 3 provincii canadiene, 49 de state din SUA și 6 state mexicane. Adusă de om, forma sălbatică trăiește și în Australia și Noua Zeelandă. Nu trăiește în Alaska și Hawai.
Curcanul este unul dintre felurile principale la masa de Ziua Recunoștinței, sărbătoare care se ține în a patra zi de joi din noiembrie (SUA), respectiv în a doua luni din octombrie (Canada).

Kalkon (Meleagris gallopavo) är en hönsfågel i familjen fasanfåglar.[3] Se även tamkalkon.
Kalkoner tillhör de största och starkaste hönsfåglarna. Huvudet och en stor del av halsen är nakna. Kalkoner har en spetsig, hängande köttflik över näbbroten, medelhöga fötter med långa tår och oftast små sporrar. Kalkoner har en rundad stjärt, som kan resas upp och utbredas.
Hanen är i vilt tillstånd ovan brunaktigt gul, med präktig metallglans och med breda, svarta fjäderkanter. Ryggen och övre täckfjädrarna är bruna, med gröna och svarta band. På bröstet är kalkonen gulaktigt brun. Kroppslängden går upp till 1,3 meter. Honan är inte så färgrik och blir bara 85 centimeter lång.
Denna fågel lever från södra Kanada till Mexiko i de östra och sydvästra staterna. Kalkonen delas vanligtvis in i sex underarter med följande utbredning:[3]
Ibland urskiljs även underarten onusta med utbredning i nordvästra Mexiko.[4]
Tidigare behandlades kalkonen och dess nära släkting arguskalkonen (Meleagris ocellata) länge i en egen familj. Genetiska studier visar dock entydigt att de båda är en del av fasanfåglarna, närmast släkt med skogshöns som tjäder, järpe och orre.
Tama kalkoner fördes 1520 till Spanien och därifrån till andra platser i Europa. Det finns idag introducerade bestånd av kalkon i Tyskland samt även på Nya Zeeland och flera öar i Oceanien.[5]
Under en del av året lever de i stora flockar och företar oregelbundna vandringar. Om dagen finns de på marken och om natten vilar de i ett träd. I september flyttar fågeln från nordligare trakter till sydligare. Flyttningen sker till fots. Först flyttar tupparna i flockar om 50 till 100 individer. Honor och ungar samlas i nästan lika stora skaror som sedan tar samma väg.
Vid parningstiden i februari eller mars avger hannarna karakteristiska läten och strider ofta med varandra. Honan ruvar ensam och täcker över äggen med löv innan hon lämnar boet.
Vid européernas upptäckt av fågeln trodde man fortfarande att Amerika (Västindien) var en del av Indien. Fågeln fick därför namnet "Kalikut-höna", och liknande, efter den indiska hamnstaden Kalikut – dagens Kozhikode.[6] Exempelvis svenskans "kalkon", holländskans "kalkoen" och estniskans "kalkun" härleds alla från namnet som refererar till Kalikut.[6] Även i Indonesien kallas arten "kalkun" vilket härstammar från holländskans "kalkoen". I många andra länder är trivialnamnet istället kopplat till Indien, exempelvis ryskans "indeyka" (индейка), turkiskans "hindi" eller franskans "dinde". Det senare är en kortform av det längre, äldre namnet "coq d’Inde".[7]

Верхняя сторона индейки буровато-жёлтая и буровато-рыжая, с металлическим блеском, перья с чёрными каёмками, нижняя часть спины и кроющие перья хвоста бурые с зелёными и чёрными полосками. Нижняя сторона от желтовато-бурого до буровато-серого цвета. Маховые перья чёрно-бурые с более светлыми полосками. Хвост бурый с чёрными волнистыми полосками.
Голова и верхняя половина шеи голубые, неоперённые. Имеются так называемые «бородавки» красного цвета: на лбу у основания клюва свешивается мясистый придаток, на горле висит складка кожи.
Ноги красные или фиолетовые. На груди пучок щетинистых перьев, похожих на конский волос.
Самка бледнее окрашена и меньше размером, чем самец.
Водится в лесах Северной Америки.
Питается растительной и животной пищей — орехами, желудями, зёрнами и различными плодами, а также насекомыми.
Гнездятся на земле. В апреле самка кладёт от 10 до 15 и даже 20 яиц и самоотверженно их охраняет.
Дикие индюки нередко соединяются с домашними самками, птенцы получаются при этом лучшего качества, чем от домашних индюков.
Распространены на юго-востоке США и в Мексике.
В своём фундаментальном произведении «Общая история дел Новой Испании» (1547—1577) Бернардино де Саагун, опираясь на сведения ацтеков о свойствах растений, привел различные сведения о применении индейки в восстанавливающих здоровье блюдах:
…Но если у больного в чрезвычайный беспорядок пришел желудок, то он пусть выпьет определенный род атоле, который на местном языке называется истатолли, или бульон из сваренного индюка два или три раза. Хворь очистится. Затем поесть…[5] Или выпить эту хорошенько проваренную воду из ашина, но если он не захочет её пить, то, по крайней мере, пусть выпьет куриный бульон…[6] И в случае если понос сильный, чтобы задержать его, заставляют принять немного птичьего бульона или жидкие кашицы под названием йолатолли…[7] Приняв его таким образом, больной выпивает немного птичьего бульона или бульона из птичьих грудинок, называемых йолатолли, и, приняв это, поест; но он не должен пить холодную воду…[8]
Дикая индейка служит предметом охоты как ружейной (к самцам подкрадываются на току, то есть в брачный период), так и ловушками. Последняя облегчается крайней глупостью птицы.
Мясо индейки хотя не столь нежно, как куриное, но питательнее. Самка вкуснее самца, и потому выбирают первую, чтобы начинять её каштанами и трюфелями. Старые индейки годны только для выварки из них супов и бульонов. Поскольку дикие индейки питаются желудями, ягодами и плодами, то мясо их вкуснее домашних. Мясо индейки, снятое с костей, приготовляют en daube, для чего свёртывают мясо в рулет и тушат его, или готовят индейку, начинённую фаршем, фисташками и прочим.
Одомашненная индейка является одним из основных видов сельскохозяйственной птицы.
Дикой и домашней индейке посвящались почтовые марки 29 стран, включая Советский Союз (выпуск из трёх марок 1990 года)[9][10].

Домашней индейке — как генетически достаточно хорошо изученному виду птиц — принадлежит значительная часть депонированных нуклеотидных последовательностей в отряде Galliformes.

Полное секвенирование генома домашней индейки было завершено в 2010 году; при этом индейка стала третьим видом птиц (после курицы и зебровой амадины), для которого имеются физическая карта и сборка последовательности полного генома[13][14][15][16]. 野生火雞的腳很長及呈紅黃色至灰綠色,身體呈黑色。公火雞的頭部很大,沒有羽毛及呈紅色,喉嚨及肉垂也是紅色。頭上有肉冠:公火雞興奮時,皮瓣會漲大,連同肉垂及皮膚會充血,差不多遮蓋了眼睛及喙。每腳上有三趾,公火雞下肢後都有距。
野生火雞的尾巴呈扇狀,雙翼呈青銅色。牠們就像雞形目般有強烈的兩性異形。公火雞比雌火雞明顯的大,有紅色、紫色、綠色、銅色、青銅色及金色的羽毛。雌火雞的羽毛較為沉色,呈褐色及灰色。寄生蟲可以令公及雌火雞的羽毛色變沉,公火雞的鮮艷顏色正正是其健康狀況的表現。[2]牠們雙翼的主羽有白間。牠們有5000-6000條羽毛。[3]成年火雞的尾羽長度相同,但幼雞的則不同。公火雞一般胸前都有一簇粗毛,長約23厘米。一些群落中有10-20%的雌火雞也有這些粗毛,但一般較短及幼。公火雞重約5-11公斤及長100-125厘米;雌火雞較為細小,重3-5.4公斤及長76-95厘米。翼展長1.25-1.44米。
野生火雞比家火雞飛得更靈活。牠們活動很是小心,在發現危險時第一時間就會逃走。牠們最埋理想的棲息地是開放的林地及大草原[4],可以在冠層下飛行及停留。牠們一般會在近地面飛行而不多於400米。
野生火雞有多種叫聲,包括咯咯聲、咕咕聲、啪啪聲、姑嚕聲及吠聲等。在春天,公火雞會咯咯叫來吸引雌火雞及與其他公火雞競爭,並可維持叫聲達1里。公火雞也可以透過氣囊內空氣的運動來發出低音鼓聲。牠們也可以將氣囊內的空氣噴出來發出噴氣聲。雌火雞會以吠叫來回應公火雞其位置所在。
野生火雞是雜食性的,會在地上或攀上灌木上覓食。牠們喜歡吃栓皮櫟及堅果等,包括榛子、栗、山核桃屬及沼澤松,也會吃多種種子、草莓(如刺柏及熊果)、根、草及昆蟲。牠們有時更會吃兩棲類及細小的爬行類。牠們經常會到草原上覓食,有時會到後院的餵鳥器或收成後的耕地尋找食物。
由於野生火雞會吃多種食物,故可以在細小的地方內聚集一大群。牠們慣常於早上及下午覓食。
公火雞是一夫多妻制。公火雞會鼓起羽毛,張開尾巴及雙翼來吸引雌火雞。牠們的頭部及頸部呈紅色、藍色及白色,顏色會隨牠們的心情而轉變,興奮時會變為白色。牠們會發出咯咯聲、鼓聲及噴氣聲來表現其優勢地位,與及吸引雌火雞。牠們會於3-4月在過冬地區成群的時候示愛。
公火雞會成群一起示愛,往往是由首領所帶領。一項研究發現首領與另一公火雞一同示愛,比單獨示愛平均可以令雌火雞生多6隻蛋。遺傳學研究顯示這對公火雞是近親,有一半的遺傳物質相同。[5]
當完成交配後,雌火雞會尋找築巢的位點。火雞巢是一個很淺的凹坑,以木質包圍。雌火雞會生10-14隻蛋,一般會一天生一隻。蛋要孵化最少28天。小火雞非常早熟,可以在12-24小時就離開鳥巢。
浣熊、北美負鼠、臭鼬、灰狐、猛禽、美洲旱獺、其他齧齒目、斑臭鼬屬、錦蛇屬、牛蛇及松蛇屬都會掠食鳥蛋及雛雞。郊狼、短尾貓、美洲獅、金雕、大雕鴞及赤狐是會掠食成年及幼火雞。人類現時最最多獵殺牠們的。[6][7]
野生火雞的數量及分佈地由20世紀初因被獵殺及失去棲息地而減少。估計於1900年代初,牠們在美國的數量就只有3萬隻。到了1940年代,牠們已經絕跡於加拿大及只在美國偏遠地區出現。期後進行了一些保護及繁殖的工作。隨著牠們的數量回復上升,美國(阿拉斯加除外)再次允許捕獵野生火雞。於1973年,美國內的野生火雞數量估計有130萬隻,而全球則有達700萬隻。
野生火雞有6個亞種,顏色、棲息地及行為上只有些許分別。
野生火雞對印第安人的日常生活佔有很重要的地位。除了感恩節外,牠們是東部部落的主要美食。東部部落會吃牠們的蛋及肉,有時會製成肉乾留待為備用食糧。印第安人燒林來開發草地,間接令野生火雞得益,為牠們提供了棲息地及交配地方。很多部落也會用牠們的羽毛來製作頭帽。
シチメンチョウ(七面鳥、Meleagris gallopavo)は、シチメンチョウ属に分類される鳥である。
シチメンチョウ属の模式種である。なおシチメンチョウ属には他にヒョウモンシチメンチョウが属するが、まれにこれを別属とし七面鳥をシチメンチョウ属唯一の種とすることがある。
キジ目の最大種で全長122cm、体重は9kgに及ぶ。メスはオスのおよそ半分の全長60cm程度である。胴は金属光沢がある黒い羽毛で覆われていて、メスよりオスの方が光沢が強い。また、オスは胸部の羽毛が逆立っているが、頭部や頸部には羽毛がなく赤い皮膚が露出し、発達した肉垂がある。繁殖期になるとオスの皮膚は色が鮮やかになり、胸部が隆起する。和名の七面鳥の由来は頭部の首のところに裸出した皮膚が興奮すると赤、青、紫などに変化するため、七つの顔(面)を持つ様に見えることに由来する。体温は40°Cで、32km/hで走る。
アメリカ合衆国、カナダ南部ならびにメキシコに分布し、開けた落葉樹と針葉樹の混合林に生息する。食性は植物食傾向の強い雑食で果実、種子、昆虫類、両生類、爬虫類等を食べる。
繁殖期にはオス1羽に対しメス数羽からなる小規模な群れを形成し生活する。同じ親から生まれた若鳥も群れを形成し生活するが、その後オスだけの群れを形成する。繁殖期になるとオスは尾羽を扇状に広げ、翼を下げて振るわせ頭部の肉垂を膨らませてある一定の場所で徘徊する。繁殖形態は卵生で、メスが地面を掘って落ち葉を敷いた巣に1回に8-15個の卵を産む。1羽が作った巣に他のメスが卵を産むこともある。メスのみが抱卵を行い、雛の世話もメスのみが行う。メスは日光により卵を産みたくなる体質である。単為生殖を行う場合もある[1]。
危険を感じると走って逃げるが、短距離であれば飛翔することもできる。オスのみが出す警戒声(アラームコール)は鳥類の中でも最も大きく歓声のような独特な声である。
食用とされることもあり、家禽としても飼育される。現在家禽として飼育されているのは尾羽の先端が白いメキシコの個体群に由来するものとされる。中央アメリカの先住民族によって家畜化され新大陸「発見」後、1519年にはスペイン王室に、1541年にはイギリスのヘンリー8世に献上された。七面鳥の英語名のターキー(turkey)は、日本でも食肉名として用いられる。味はニワトリより脂分が少なく、さっぱりとしている。トルコを意味する名前が北アメリカ原産の鳥につけられている理由は、トルコ経由で欧州に伝来したホロホロチョウとの混同によるもの。
アメリカ合衆国とカナダでは詰め物をした七面鳥の丸焼きが特に感謝祭(Thanksgiving Day)でのごちそうであり、感謝祭のことを口語的にTurkey Day(七面鳥の日)とも呼ぶ。クリスマスの料理としても供される。シチメンチョウのハム(turkey ham)やベーコン(turkey bacon)は一年を通じて販売されており、豚肉に比べて脂身の少ない「健康的な」代替品と考えられている。
「すべてのヤンキーの父」で知られるベンジャミン・フランクリンはアメリカ合衆国の国鳥として最後までハクトウワシに反対し、シチメンチョウを推していた。娘宛の手紙にて[2]ハクトウワシは死んだ魚を漁る、他の鳥から獲物を横取りするなどの不品行で横着な鳥で道徳的観念からふさわしくないとこき下ろし、野生のシチメンチョウこそ生粋のアメリカ人を象徴するにふさわしい勇気と正義感を兼ね備えた鳥だとした。ただ文面からは冗談、皮肉であるとも受けとれ、本気で推薦していたのかは定かではない。
家禽を撃つことは容易い事から、アメリカの慣用句として「ターキー・シュート(七面鳥撃ち)」がある。
感謝祭前日、ホワイトハウスにて現職大統領が七面鳥を放鳥して「恩赦」を与える行事が行われる。感謝祭用にジョン・F・ケネディ大統領へ「Good Eatin', Mr. President(美味しく食べてね、大統領)」と首からメッセージを下げた七面鳥が贈られたものの、彼はその七面鳥を食べなかったことが始まりとされる[3]。2014年の例では放免されたシチメンチョウは、バージニア州の農場で余生を送ることとなった[4]。
イギリスではローストした七面鳥がクリスマス料理のごちそうとされる。ロンドンでは、台所から発生する七面鳥の油が50mプール2杯分にも及ぶと推定されており、下水管に大きな負担を与えている[5]。チャールズ・ディケンズの『クリスマス・キャロル』の最後の章で、改心した主人公が彼の書記に買い与えるのが七面鳥である。1960年に発生した3ヶ月で10万羽の大量死事件がきっかけとなりアフラトキシンが発見された。
アメリカ合衆国やイギリスのようなクリスマスに七面鳥肉を食する文化が日本に移入したが、入手の困難性から鶏肉に代用されることが多く、七面鳥が前面に露出することは稀である。クリスマス料理としてもチキンが主流という状態である。
食肉用に家禽化されたシチメンチョウの中で最も広く飼育されている品種である。野生種や既存のシチメンチョウの品種に比べて胸骨や脚が短いため人の補助なしでは繁殖できず、繁殖は体外受精によっておこなわれている。改良の結果大胸筋が肥大しているため胸肉が多く取れ羽毛が白く枝肉になったときに目立たないことから、食肉用の大規模なシチメンチョウ飼育場で盛んに飼育されるようになった。
シチメンチョウ(七面鳥、Meleagris gallopavo)は、シチメンチョウ属に分類される鳥である。
シチメンチョウ属の模式種である。なおシチメンチョウ属には他にヒョウモンシチメンチョウが属するが、まれにこれを別属とし七面鳥をシチメンチョウ属唯一の種とすることがある。
들칠면조 또는 야생 칠면조(학명: Meleagris gallopavo, 영어: turkey)는 닭목 꿩과 칠면조속에 속하는 북아메리카 원산 조류의 일종으로, 흔히 칠면조라고 줄여 부른다. 멕시코에 서식하는 아종을 가축화한 집칠면조와는 동일한 종이다.
몸길이 약 110cm, 날개길이 약 50cm, 몸무게는 4.5-7.5kg이다. 야생종이 사육종보다 약간 작으며, 수컷이 암컷보다 크다. 깃털은 청동색이다. 머리와 목에는 털이 없고 파란색·빨간색·청백색 등 여러 가지 색으로 변화하므로 칠면조라는 이름이 붙었다. 수컷은 앞이마 부분에 신축성이 있는 육질(肉質) 돌기가 있는데, 암컷에는 없다. 몸빛은 청동색·흰색·검은색 등이 있고 등은 대개 황갈색이고 깃털에 넓고 진한색의 선이 있다. 다리는 붉고 부리는 연한 회색이며 몸 아랫부분과 꼬리부분에 짙은 갈색·연두색·검은색의 가로무늬가 있다.
수컷은 짝짓기를 할 때 암컷에게 자신을 과시하며 골골대는 소리를 낸다. 암컷은 7-8월에 16-30개의 알을 낳는데 크기는 달걀의 2배 정도이다. 곤충·곡식을 먹는데 사육할 때는 닭보다 다소 많은 동물질 사료를 주어야 하며 습기에 약하므로 장마 때 특히 주의해야 한다. 북아메리카인디언들은 1,000년경부터 식용으로 칠면조를 사육했으며, 나중에 유럽·미국 등에서 개량하였다. 고기는 맛이 좋아 크리스마스·추수감사절 등의 요리에 쓰인다.
