Has 37-43 scales on the lateral line (including those on base of caudal-fin); 7-8+1/2 scale rows between lateral line and dorsal-fin origin (Ref. 27732). Differs from all other species of the genus in having more or less discrete marks on each scale on the upper, middle, and sometimes lower parts of the body. Such marks, visible in most freshly caught and recently preserved specimens, are sometimes intensely developed, giving the fish a markedly reticulated appearance. C. molitorella often has a very intense humeral mark which is vivid bluish-green in life. In other Cirrhinus the humeral marks are black or bluish black (Ref. 33488). Usually a conspicuous black bar shortly behind pectoral base (Ref. 43281). Gill rakers on the lower arm of first arch 65-85 (Ref. 12693).

Known from midwater to bottom depths of large and medium-sized rivers. Move into flooded forests during the rainy season and grazes on algae, phytoplankton and detritus (Ref. 12693). Occur in rapids and slow deep reaches (Ref. 37769). Reported to be omnivorous (Ref. 33813). Wild stocks are strongly migratory while the cultivated stocks probably have lost the migratory behavior (Ref. 33488). Prefer flowing water and not known to proliferate in impoundments. Large fish are marketed fresh, smaller ones are used to make prahoc (Ref. 12693). Attain at least 40 cm SL (Ref. 33488).

體延長而側扁,背部輪廓呈弧形,腹部圓形。頭略短而尖。吻短而圓鈍,向前突出,側面在前眶骨前緣有一不甚明顯的裂紋。有鬚2對,吻鬚較粗,頜鬚較短小。口小,下位,橫裂而下彎成淺弧形,上下邊緣都具角質緣。咽頭齒3列,齒式5.4.2-2.4.5。鰓耙數76-82。體被中型圓鱗,胸部鱗片較小;側線完全,微向下彎,後部延伸達尾部中央,側線鱗數37-40。各鰭均無硬棘,背鰭軟條

Cirrhinus molitorella (engl. Mud Carp[1]) ist eine mittelgroße Karpfenfischart aus Indochina und dem südlichen China. Er wird unter anderem auch White Lady Carp, in Kambodscha Trey Kawlang, Pa Geng in Laos, Kap Lumpur in Malaysia, 侧斑鲮 in China und in Vietnam CáTrôi Việt genannt.[2]
Beschreibung
Er hat 37 bis 43 Schuppen auf seiner Seitenlinie und unterscheidet sich damit von Cirrhinus microlepis. Seine Flossenformel lautet: Dorsale 11–15. Ein weiteres Unterscheidungsmerkmal sind die Farbzeichnungen auf seinen Schuppen, die besonders bei frisch gefangenen Exemplaren zur Geltung kommen. Die Farbtöne variieren von blaugrün bis blauschwarz. Die Fische werden in der Regel 15 bis 50 Zentimeter lang.[2] In der chinesischen Guangdong Provinz wurde ein etwa 100 cm langes und 11,25 schweres Exemplar mit der Angel gefangen.[3]
Verbreitung
Das Verbreitungsgebiet von Cirrhinus molitorella erstreckt sich von den Flussbecken des Mae Nam Chao Phraya, Nam Theun, Xe Bangfai, Mekong und Nanpangjiang, Perlfluss[4] bis zum Roten Fluss in China und Vietnam. Somit kommen sie in der Volksrepublik China, Vietnam, Laos, Kambodscha und Thailand vor. Außerdem in Hongkong, Malaysia, Indonesien und Singapur. Eingeführt wurde die Fischart auf Taiwan und Panama.[2]
Lebensweise
Cirrhinus molitorella bewohnt tropische Gewässer wie mittelgroße bis große Flüsse und Ströme mit Temperaturen von 22 bis 26 °C, wo er sich überwiegend im Mittelwasser bis Grundnähe in Tiefen von etwa fünf bis 20 Metern aufhält. Wassertemperaturen unterhalb von 7 °C werden nicht toleriert.[4] Während der Regenzeit wandert er in die überschwemmten Wälder und ernährt sich dort von Algen, Phytoplankton und Detritus. Er gilt als omnivor. Wie sein Verwandter, Cirrhinus microlepis, bevorzugt auch Cirrhinus molitorella die Bereiche um Stromschnellen und tiefere Rückstauzonen. Wildtiere zeigen ein ausgeprägtes Wanderverhalten, während domestizierte Stämme von Cirrhinus molitorella dieses Verhalten weitgehend ablegen. Sie sind auf fließendes Wasser angewiesen und lassen sich in Teichen nicht lange halten, wo sie sich nicht fortpflanzen.[2] Die Geschlechtsreife erreichen sie etwa mit drei Jahren.[4]
Nutzen
Cirrhinus molitorella ist lokal ein wichtiger Speisefisch, der einen hohen nutritiven Wert aufweist.[4] Größere Exemplare werden frisch vermarktet und kleinere zu Prahok[5] verarbeitet.[2] Im chinesischen Perlfluss wurde Cirrhinus molitorella schon seit langer Zeit züchterisch bearbeitet, auch heute hat er von allen asiatischen Ländern in China seine größte wirtschaftliche Bedeutung. Dort werden sie überwiegend in Polykultur mit anderen Speisefischen gehalten.[4]

Cirrhinus molitorella (mud carp or dace) is a species of ray-finned fish in the genus Cirrhinus found mainly in southern China and Vietnam.
History
The mud carp is a native Asian freshwater fish with a broad distribution from the Mekong River to the Pearl River deltas, inhabiting lakes, rivers and reservoirs.
Mud carp cultivation was introduced to China during the Tang dynasty (618–907 AD) as a substitute for common carp, as the common carp was forbidden to fish due to a ban.[2] Chinese aquaculture farmers adapted by raising mud carp, which were bottom feeders, in polyculture with top-feeding grass carp, while silver carp or bighead carp lived and fed in the middle depths.[3]
Habitat
Mud carp is typically a subtropical fish.[4] The mud carp is found in the mud and Mekong River and Pearl River delta, as well as bodies of freshwater along these two rivers. In China's Guangdong province and Guangxi autonomous region, mud carp makes up about 30% of the freshwater fish population.[5]
The fish has been introduced to Indonesia, Singapore, Japan, Taiwan, and Hong Kong.[2]
Within China the fish is raised on fish farms.
Dispersion
The mud carp is native to Southern China and parts of Mainland Southeast Asia. It is present in major river systems such as the Pearl River, Red River (China/Vietnam), Mekong River, and Chao Phraya River.[2]
Diet
Mud carp is an omnivore and mainly consumes water plants or insects. Farm raised carp are fed pellets.
Culinary Use
Due to low cost of production, the fish is mainly consumed by the poor and locally consumed; it is mostly sold live and eaten fresh, but can be dried and salted.[2] Increased fishing has threatened the population of mud carp.[1]
The fish is sometimes canned (typically as fried dace with salted black beans) or processed as fish cakes, fish balls [6] or dumplings. They can be found for retail sale within China and throughout the Chinese diaspora.[2] Canned dace from China has periodically been found to carry traces of malachite green, a carcinogenic antimicrobial banned for use in food.[7][8][9]

Mud carp Chinese Mud Carp ケンヒー(鯁魚)は、コイ目コイ科ラベオ亜科に分類される魚。中国東南部、ベトナム及び台湾の川や池などに生息する淡水魚である。
和名は日本が統治していた時代に台湾で目にしたことから、台湾語での呼び名「鯁魚」(ケンヒー)に拠っている。台湾では「鯁仔」(ケンアー)、「鯪仔」(レンアー)ともいう。中国語の標準名は「鯪魚」(リンユー、língyú)である。広東省における地方名には「土鯪」(トウレン)、「雪鯪」(シュッレン)、「鯪公」(レンコン)などがある。ベトナム語ではcá trôi việt(カー・チョイヴェト)という。

ケンヒーは外見がタモロコに似た、比較的細長い身体を持つが、背びれや尾びれはもっと大きい。体長と体高の比率は3.4倍程度である。頭は体長の4.8分の1程度と体に対して小さい。全長は25cm前後で流通しているが、大きいものでは40cmを越えるものもいる。通常、3年で成魚となる。
通常水中の低層にいて、主に水草やプランクトンを餌としている。
中国大陸では珠江水系を中心に分布する。他には、閩江水系、海南島[3]、香港[4]、ベトナム北部のソンコイ川水系などに分布する。台湾へは養殖用に広東省の汕頭周辺から幼魚が運ばれるなどして持ち込まれた。
広東省を中心に養殖されており、広東省ではソウギョ、ハクレン、コクレンと合わせて「四大家魚」と呼ばれるほど一般的な食用淡水魚である。漁獲量も多く、珠江下流域における漁獲量の3割ほどを占める。新鮮な魚肉は滑らかで、うま味もあるが、小骨が多いのが難点のため、これを気にしないで食べられるように、すり身にして、「鯪魚球(中国語)」と呼ばれるつみれにすることが多い。つみれにはオオクログワイ、シイタケ、陳皮、コリアンダー、干しエビ、豆腐などを混ぜることもあり、スープや順徳料理の粥鍋の具にもされる。順徳料理の「魚皮角」(ユーペイコッ)もケンヒーのすり身と豚肉などを合わせた餡で作るスープワンタンの一種である。また、すり身をピーマンに詰めて揚げたり、鯪魚の原型を残した皮に詰めて鉄板焼きにする料理「煎釀鯪魚」もある。
大きいケンヒーはネギ、ショウガまたは豆豉と共に蒸し魚にしたり、スープなどに使われる。
広東省で作られる缶詰の定番商品として、豆豉と食用油と共に詰めた「豆豉鯪魚」(トウチリンユー)があり、中国各地や海外にも出荷されていて、日本でも中華食材の専門店で買える。英語で「Fried Dace with Salted Black Beans」などと書かれていて、これからケンヒーをウグイと訳している例があるが、Daceもウグイも別亜科の魚である。そのままご飯のおかずにする他、塩味が強いため、白菜、ロメインレタスなどと炒めて食べたり、トウガンなどと共に蒸したりすることも行われている。
