Neunaugen (Petromyzontiformes) sind eine Ordnung fischähnlicher, stammesgeschichtlich basaler Wirbeltiere (Vertebrata), lebende Fossilien, die sich seit 500 Millionen Jahren kaum verändert haben. Sie haben einen aalartigen, langgestreckten Körper, der mit einem flossenartigen Rücken- und Schwanzsaum besetzt ist. Die Tiere haben zwei Augen (zur Bezeichnung „Neunauge“ siehe Erscheinungsbild).
Neunaugen fanden und finden auch in der Küche Verwendung, wo sie als Lampreten ähnlich wie Aal zubereitet wurden. Dies ist durch die zahlreichen Schutzbestimmungen heute kaum mehr möglich. Alle Arten von Neunaugen befinden sich auf der Roten Liste.
Der Verband Deutscher Sportfischer, das Bundesamt für Naturschutz und der Verband Deutscher Sporttaucher haben die Familie der Neunaugen zum Fisch des Jahres 2012 gekürt.
Neunaugen kommen überwiegend in Küstengewässern und Süßwasser in kalten und gemäßigten Zonen vor. Das Verbreitungsgebiet ist disjunkt und umfasst Europa, das kalte und gemäßigte Asien, Nordamerika, Patagonien, den Südosten Australiens (inklusive Tasmanien) und Neuseeland. Für mindestens eine Art, nämlich Geotria australis, wird angenommen, dass sie auch beachtliche Distanzen im offenen Meerwasser zurücklegt. Ursache für diese Annahme ist, dass sich zwischen australischen und neuseeländischen Populationen keine isolierte Entwicklung feststellen lässt.
Neunaugen laichen im Oberlauf von Bächen und Flüssen. Sie benötigen hierfür kiesige Substrate, die von kühlem, sauerstoffreichem Wasser durchströmt werden (daher kommen sie in den Tropen nicht vor).
Sehr stark haben sich Meerneunaugen als Neozoon in den nordamerikanischen Großen Seen ausgebreitet, wo sie durch Schiffe und Kanäle eingeschleppt wurden und keine natürlichen Feinde haben. Dort sind sie zur Plage geworden und bedrohen die einheimischen Fischbestände.[1] In Nordamerika gibt es für sie traditionell und aus anderen Gründen („Blutsauger“) keinen Markt als Speisefisch. Außerdem sind die Tiere aufgrund ihrer Lebensweise zu stark mit Umweltgiften belastet. Sie werden mit Fallen (unter anderen auch mit künstlichen Pheromonfallen) und speziellen Giften in den Oberläufen der zufließenden Gewässer bekämpft. Da Neunaugen biologisch gesehen keine Fische sind und sich in ihrer Körperchemie stark von Fischen unterscheiden, war es möglich, Giftstoffe zu finden, die für Neunaugen, aber nicht für echte Fische giftig sind.
Die noch augenlosen, wurmartigen Larven werden Querder genannt. Sie vergraben sich nach dem Schlüpfen in sandigen Abschnitten der Gewässersohle. Der Kopf bleibt frei und fischt feine Nahrungspartikel (Plankton) aus dem Wasser. Meist nach 5 bis 7 Jahren erfolgt eine recht radikale Umwandlung (Metamorphose) des Körperbaus zum erwachsenen Tier.
Je nach Art werden Neunaugen circa 20 bis 40 cm groß, im Meer bis zu 75 cm, vereinzelt auch größer.
Die erwachsenen Tiere haben zwei Augen. Der Name „Neunauge“ geht auf die als Augen anmutenden sieben seitlichen Kiemenspalten und die (unpaare) Nasenöffnung (also neun „Augen“ auf jeder der beiden Körperseiten) zurück.
Neunaugen haben keine Kiefer. Das rundliche Maul ist mit Hornzähnen ausgestattet und als Saugmaul ausgebildet.
Bei etwa der Hälfte der Arten, die zu den Neunaugen gerechnet werden, wandern die ausgewachsenen Tiere in das Meer, wo sie bis zu 18 Monate als Parasiten leben,[2] gewöhnlich nahe der Küste. Zu den Arten, bei denen dies vorkommt, zählen unter anderem die auch in Mitteleuropa verbreiteten Meer- und Flussneunaugen.
Ihre Wirte sind Fische, an denen sie sich festsaugen, Blut trinken und Fleischstücke herausraspeln.[3] Durch spezielle Substanzen in ihrem Speichel hemmen sie die Blutgerinnung, weshalb bei angegriffenen Fischen keine Blutgerinnsel entstehen. Forscher versuchen, diese Substanz aus dem Speichel zu extrahieren, um sie in der Medizin einzusetzen und Blutgerinnsel aufzulösen. Größere, gesunde Fische überleben solche Angriffe meist und behalten nur typische kreisförmige Narben zurück, kleinere Arten jedoch, Jungtiere und kranke Fische können daran sterben. Größere Neunaugen greifen vereinzelt in Küstennähe auch Menschen an und saugen deren Blut. Die Bisse sind jedoch für den Menschen nicht giftig.[4]
Nach einigen Jahren steigen die Neunaugen wiederum bis in den Oberlauf eines Fließgewässers auf, um zu laichen. Während des Rückzugs in die Süßwassergewässer bildet sich der Darm zurück. Nach dem Laichakt sterben die Tiere.
Etwa zwanzig Arten der Neunaugen sind stationäre, nichtparasitische Süßwasserbewohner. Die Tiere bleiben in der Nähe der Stelle, an der sie die Larvenzeit verbrachten, und laichen hier auch wieder ab. Sie sind jeweils eng verwandt mit großen, anadrom lebenden Arten und werden deshalb auch als „Satelliten-Art“ der jeweils verwandten, anadromen Art genannt.[5] Ein Beispiel für eine solche stationäre Art ist das Bachneunauge. Weitere nur im Süßwasser vorkommende Neunaugen sind das Oberitalienische Neunauge, das nur in Seitenflüssen des Pos vorkommt, und das nur im Einzugsgebiet der Donau vorkommende Ukrainische Bachneunauge (Eudontomyzon mariae).
Bei diesen Neunaugenarten graben sich die Larven im Gewässergrund ein und ernähren sich von Kleinorganismen, die sie aus dem Wasser filtrieren. Nach der Larvenzeit nehmen sie keine Nahrung mehr zu sich. Bereits während der Umwandlung in adulte Tiere bildet sich der Darm zurück. Die Tiere laichen nur noch ab und sterben dann.
Das donauendemische Donauneunauge (Eudontomyzon danfordi) weicht von diesem Verhaltensmuster ab. Es ist die einzige europäische Neunaugenart, die an Süßwasserfischen wie Barschen und Döbeln parasitiert.
Die Neunaugen wurden und werden seit kurzem wieder zusammen mit den Schleimaalen (Myxiniformes) in die Überklasse der Rundmäuler (Cyclostomata) eingeordnet. Mit dem Aufkommen der Prinzipien der Kladistik setzte sich in den späten 1970er Jahren die Meinung durch, dass es sich bei den Rundmäulern um ein paraphyletisches Taxon handeln muss und dass die Neunaugen näher mit den Kiefermäulern (Gnathostomata) (Knorpelfische, Knochenfische und Landwirbeltiere) verwandt sind als mit den Schleimaalen. Grundlegend dafür ist eine Reihe von gemeinsamen Merkmalen, die sich erst nach der Abspaltung der Schleimaale gebildet haben sollen, darunter vor allem die mit Muskulatur versehenen Basen der Flossen, das mit Nerven ausgestattete Herz, der Aufbau von Milz und Bauchspeicheldrüse und verschiedene physiologische Eigenschaften.[6]
Molekularbiologische Untersuchungen zeigten jedoch, dass die Rundmäuler doch monophyletisch sind, d. h. Neunaugen und Schleimaale haben eine jüngste gemeinsame Stammform, aus der keine andere rezente Gruppe hervorgeht.[7][8][9][10] So teilen sie vier einzigartige microRNA-Familien und 15 einzigartige Paralogien zwischen primitiven microRNA-Familien.[11][12]
Die Rundmäuler sollen sich vor etwa 500 Millionen Jahren im Kambrium aus einem letzten gemeinsamen Vorfahren aller Wirbeltiere entwickelt haben, der allerdings wesentlich komplexer war als die Rundmäuler. Die Rundmäuler durchliefen daraufhin eine Degeneration und verloren zahlreiche der für Wirbeltiere typischen Merkmale, die Schleimaale mehr, die Neunaugen weniger. 360 Millionen Jahre alte Fossilien von Neunaugen sind den modernen Formen schon recht ähnlich.[12]
Analysen des Genoms von Meerneunaugen (Petromyzon marinus) zeigen, dass die Familie der Neunaugen Charakteristika einer zweifachen Genverdoppelung (Genduplikation) aufweisen. Die Neunaugen sind somit die älteste Wirbeltierfamilie, bei der diese Besonderheit nachgewiesen wurde. Die Genomvergrößerung fand demnach in der Wirbeltiergeschichte noch vor der Abspaltung der Neunaugen, also vor mehr als 500 Millionen Jahren statt. Sie stellte in der Evolution der Wirbeltiere ein prägendes Ereignis dar, unter anderem weil die zusätzlichen Gene in der weiteren Entwicklung neue Anpassungen ermöglichten.
Von den Erbanlagen der Kiefermäuler finden sich viele Gene schon beim Meerneunauge (1,2 bis 1,5 Prozent der Erbanlage des Menschen), sogar einige der genetischen Regulatoren für paarige Gliedmaßen, obwohl Neunaugen selbst nur einen unpaarigen Flossensaum an Bauch und Rücken ausgebildet haben.[13]
Es gibt drei Familien, 10 Gattungen und etwa 47 bis 49 Arten:
Neunaugen werden seit der Antike als Speisefische sehr geschätzt und in der Küche meist als Lampreten bezeichnet. Der größte und auch wirtschaftlich genutzte Vertreter der Neunaugen ist das Meerneunauge.[15] Sein Fleisch ist weiß und fein, mit Aal vergleichbar, im Geschmack „fleischiger“ als das Fleisch der meisten echten Fische.
Im Mittelalter waren besonders die Lampreten von Nantes so berühmt, dass die Pariser Bürger den Händlern entgegenfuhren. Noch im 19. Jahrhundert wurden in Norddeutschland Hunderttausende von Lampreten gefangen und gebraten und mit Essig und Kräutern mariniert angeboten. Das kleinere Flussneunauge (auch Bricke oder Pricke genannt) wurde bis in neuere Zeit in Elbe und Weser gefangen und über Holzkohle gegrillt.
In Frankreich, Galicien und Portugal stehen Lampreten noch heute auf traditionellen Speisekarten. Ein klassisches Lampretengericht ist Lamproie à la Bordelaise, bei dem die Stücke in einer Sauce aus Bordeaux-Wein, dem eigenen Blut, rohem Schinken, Porree, Zwiebeln und Knoblauch gedünstet werden.
Mittlerweile gehören Neunaugen in Europa zu den gefährdeten Arten und werden nur noch selten angeboten. Nur im Baltikum werden regelmäßig Neunaugen auf den Märkten angeboten und gegrillt oder geräuchert verzehrt.

Katika ngeli Hyperoartia kuna spishi 20 nyingine zisizofyonza damu na hizi ni spishi za maji baridi[2]. Waliokomaa wa spishi hizi hawali; wanaishi wakila akiba waliyopata kwa njia ya kuchuja chakula kutoka maji wakati walikuwapo lava au amoseti (Kiing. ammocoetes).
Mikunga wafyonzaji huishi zaidi katika maji ya pwani, ingawa spishi kadhaa (k.m. Geotria australis, Petromyzon marinus na Entosphenus tridentatus) husafiri umbali mkubwa kiasi katika bahari wazi[3] kama inavyothibitishwa na ukosefu wao wa kutengwa kwa uzazi kati ya idadi. Spishi kadhaa hupatikana katika maziwa yaliyozungukwa kwa ardhi. Hupatikana katika maeneo mengi ya wastani lakini hawatokei katika Afrika. Lava zao (amoseti) zina uvumilivu mdogo kwa maji ya joto kiasi, ambalo linaweza kueleza kwa nini hawasambawi katika kanda za tropiki.
Waliokomaa hufanana kijuujuu na mikunga kwa kuwa wana mwili mrefu bila magamba na huweza kuwa na urefu wa sm 13-100. Mikunga wafyonzaji waliokomaa wana macho makubwa, tundu moja la pua juu ya kichwa na matundu saba ya matamvua kila upande wa kichwa, lakini wanakosa jozi za mapezi. Koromeo limegawanyika, sehemu ya chini ikiunda neli ya kupumua ambayo imetengewa kinywa kwa vali inayoitwa velo ([[Kiing. velum).
Tabia za kipekee za kimofolojia za mikunga wafyonzaji, kama vile kiunzo chao cha gegedu, huonyesha kuwa ni kundi la dada la vertebrata wote walio na mataya (Gnathostomata). Mara nyingi huchukuliwa kama kundi la msingi la vertebrata[4] . Badala ya pingili za uti wa mgongo za kweli wana mfululizo wa miundo ya gegedu inayoitwa arkualio iliyopangwa hapo juu ya ugwe wa neva.

Lampreys /ˈlæmpreɪz/ (sometimes inaccurately called lamprey eels) are an ancient extant lineage of jawless fish of the order Petromyzontiformes /ˌpɛtroʊmɪˈzɒntɪfɔːrmiːz/, placed in the superclass Cyclostomata. The adult lamprey may be characterized by a toothed, funnel-like sucking mouth. The common name "lamprey" is probably derived from Latin lampetra, which may mean "stone licker" (lambere "to lick" + petra "stone"), though the etymology is uncertain.[3] Lamprey is sometimes seen for the plural form.[4]
There are about 38 known extant species of lampreys and five known extinct species.[5] They are classified in three families: two species-poor families in the Southern Hemisphere and one speciose family in the Northern Hemisphere; phylogenetic studies indicate a mid-Mesozoic divergence for all three, underlying the separation of Laurasia and Gondwanaland. The occurrence of modern lampreys only since the Mesozoic (with significant genus & species radiations only in the Cenozoic) contrasts with the Paleozoic origins of the group and its basal nature.[6]
Parasitic carnivorous lampreys are the most well-known species, and feed by boring into the flesh of other fish to suck their blood;[7] but only 18 species of lampreys engage in this micropredatory lifestyle.[8][9] Of the 18 carnivorous species, nine migrate from saltwater to freshwater to breed (some of them also have freshwater populations), and nine live exclusively in freshwater. All non-carnivorous forms are freshwater species.[10] Adults of the non-carnivorous species do not feed; they live on reserves acquired as ammocoetes (larvae), which they obtain through filter feeding.
Lampreys live mostly in coastal and fresh waters and are found in most temperate regions. Some species (e.g. Geotria australis, Petromyzon marinus, and Entosphenus tridentatus) travel significant distances in the open ocean,[11] as evidenced by their lack of reproductive isolation between populations. Other species are found in land-locked lakes. Their larvae (ammocoetes) have a low tolerance for high water temperatures, which may explain why they are not distributed in the tropics.
Lamprey distribution may be adversely affected by river habitat loss, overfishing and pollution.[12] In Britain, at the time of the 11th-century Norman Conquest of England, lampreys were found as far upstream in the River Thames as Petersham. The reduction of pollution in the Thames and River Wear has led to recent sightings in London and Chester-le-Street.[13][14]
Distribution of lampreys may also be adversely affected by dams and other construction projects due to disruption of migration routes and obstruction of access to spawning grounds. Conversely, the construction of artificial channels has exposed new habitats for colonisation, notably in North America where sea lampreys have become a significant introduced pest in the Great Lakes. Active control programs to control lampreys are undergoing modifications due to concerns of drinking water quality in some areas.[15]
Adults superficially resemble eels in that they have scaleless, elongated bodies, and can range from 13 to 100 cm (5 to 39.5 in) in length. Lacking paired fins, adult lampreys have large eyes, one nostril atop the head, and seven gill pores on each side of the head.
The brain of the lamprey is divided into the telencephalon, diencephalon, midbrain, cerebellum, and medulla.[16]
The heart of the lamprey is anterior to the intestines. It contains the sinus, one atrium, and one ventricle protected by the pericardial cartilages.[16]
The pineal gland, a photosensitive organ regulating melatonin production by capturing light signals through the photoreceptor cell converting them into intercellular signals of the lamprey is located in the midline of its body, for lamprey, the pineal eye is accompanied by the parapineal organ.[17]
The buccal cavity, anterior to the gonads, is responsible for attaching the animal, through suction, to either a stone or its prey. This then allows the tongue to make contact with the stone to rasp algae, or tear at the flesh of their prey to yield blood.[18]
The pharynx is subdivided; the ventral part forming a respiratory tube that is isolated from the mouth by a valve called the velum. This is an adaptation to how the adults feed, by preventing the prey's body fluids from escaping through the gills or interfering with gas exchange, which takes place by pumping water in and out of the gill pouches instead of taking it in through the mouth.
One of the key physical components to the lamprey are the intestines, which are located ventral to the notochord. Intestines aid in osmoregulation by intaking water from its environment and desalinating the water they intake to an iso-osmotic state with respect to blood, and are also responsible for digestion.[19]
Near the gills are the eyes, which are poorly developed and buried under skin in the larvae. The eyes consummate their development during metamorphosis, and are covered by a thin and transparent layer of skin that becomes opaque in preservatives.[20]
The unique morphological characteristics of lampreys, such as their cartilaginous skeleton, suggest they are the sister taxon (see cladistics) of all living jawed vertebrates (gnathostomes). They are usually considered the most basal group of the Vertebrata. Instead of true vertebrae, they have a series of cartilaginous structures called arcualia arranged above the notochord. Hagfish, which resemble lampreys, have traditionally been considered the sister taxon of the true vertebrates (lampreys and gnathostomes)[21] but DNA evidence suggests that they are in fact the sister taxon of lampreys.[22]
Studies have shown that lampreys are among the most energy-efficient swimmers. Their swimming movements generate low-pressure zones around the body, which pull rather than push their bodies through the water.[23]
Research on sea lampreys has revealed that sexually mature males use a specialized heat-producing tissue in the form of a ridge of fat cells near the anterior dorsal fin to stimulate females. After having attracted a female with pheromones, the heat detected by the female through body contact will encourage spawning.[24]
Due to certain peculiarities in their adaptive immune system, the study of lampreys provides valuable insight into the evolution of vertebrate adaptive immunity. Generated from a somatic recombination of leucine-rich repeat gene segments, lamprey leukocytes express surface variable lymphocyte receptors (VLRs).[25] This convergently evolved characteristic allows them to have lymphocytes that work as the T cells and B cells present in higher vertebrates immune system.[26]
Northern lampreys (Petromyzontidae) have the highest number of chromosomes (164–174) among vertebrates.[27]
Pouched lamprey (Geotria australis) larvae also have a very high tolerance for free iron in their bodies, and have well-developed biochemical systems for detoxification of the large quantities of these metal ions.[28]
Lampreys are the only extant vertebrate to have four eyes.[29] Most lampreys have two additional parietal eyes: a pineal and parapineal one (the exception is members of Mordacia).[30]
Different species of lamprey have many shared physical characteristics. The same anatomical structure can serve different functions in the lamprey depending on whether or not it is carnivorous. For example, non-carnivorous species use their teeth to scrape algae from rocks for food,[31] rather than drilling into the flesh of hosts. The mouth and suction capabilities of the lamprey not only allow it to cling to a fish as a parasite,[32] but provide it with limited climbing ability so that it can travel upstream and up ramps or rocks to breed.[33][32] This ability has been studied in an attempt to better understand how lampreys battle the current and move forward despite only being able to hold onto the rock at a single point.[33] Some scientists are also hoping to design ramps[33] that will optimize the lamprey's climbing ability, as lampreys are valued as food in the Northwest United States and need to travel upstream to reproduce.[32]
The last common ancestor of lampreys appears to have been specialized to feed on the blood and body fluids of other fish after metamorphosis.[34] They attach their mouthparts to the target animal's body, then use three horny plates (laminae) on the tip of their piston-like tongue, one transversely and two longitudinally placed, to scrape through surface tissues until they reach body fluids.[35] The teeth on their oral disc are primarily used to help the animal attach itself to its prey.[36] Made of keratin and other proteins, lamprey teeth have a hollow core to give room for replacement teeth growing under the old ones.[37] Some of the original blood-feeding forms have evolved into species that feed on both blood and flesh, and some who have become specialized to eat flesh and may even invade the internal organs of the host. Tissue feeders can also involve the teeth on the oral disc in the excision of tissue.[38] As a result, the flesh-feeders have smaller buccal glands as they do not require the production of anticoagulant continuously and mechanisms for preventing solid material entering the branchial pouches, which could otherwise potentially clog the gills.[39] A study of the stomach content of some lampreys has shown the remains of intestines, fins and vertebrae from their prey.[40] Although attacks on humans do occur,[41] they will generally not attack humans unless starved.[42][21]
Carnivorous forms have given rise to the non-carnivorous species that feed on algae,[43] and "giant" individuals amongst the otherwise small American brook lamprey have occasionally been observed, leading to the hypothesis that sometimes individual members of non-carnivorous forms return to the carnivorous lifestyle of their ancestors.[44]
Another important lamprey adaptation is its countershading, a form of camouflage. Similarly to many other aquatic species, most lampreys have a dark-colored back, which enables them to blend in with the ground below when seen from above by a predator. Their light-colored undersides allow them to blend in with the bright air and water above them if a predator sees them from below.
Lamprey coloration can also vary according to the region and specific environment in which the species is found. Some species can be distinguished by their unique markings – for example, Geotria australis individuals display two bluish stripes running the length of its body as an adult.[45] These markings can also sometimes be used to determine what stage of the life cycle the lamprey is in; G. australis individuals lose these stripes when they approach the reproductive phase and begin to travel upstream.[45] Another example is Petromyzon marinus, which shifts to more of an orange color as it reaches the reproductive stage in its life cycle.
The adults spawn in nests of sand, gravel and pebbles in clear streams. After hatching from the eggs, young larvae—called ammocoetes[46][47]—will drift downstream with the current till they reach soft and fine sediment in silt beds, where they will burrow in silt, mud and detritus, taking up an existence as filter feeders, collecting detritus, algae, and microorganisms.[48] The eyes of the larvae are underdeveloped, but are capable of discriminating changes in illuminance.[49] Ammocoetes can grow from 3–4 inches (8–10 centimetres) to about 8 inches (20 cm).[50][51] Many species change color during a diurnal cycle, becoming dark at day and pale at night.[52] The skin also has photoreceptors, light sensitive cells, most of them concentrated in the tail, which helps them to stay buried.[53] Lampreys may spend up to eight years as ammocoetes,[54] while species such as the Arctic lamprey may only spend one to two years as larvae,[55] prior to undergoing a metamorphosis which generally lasts 3–4 months, but can vary between species.[56] While metamorphosing, they do not eat.[57]
The rate of water moving across the ammocoetes' feeding apparatus is the lowest recorded in any suspension feeding animal, and they therefore require water rich in nutrients to fulfill their nutritional needs. While the majority of (invertebrate) suspension feeders thrive in waters containing under 1 mg suspended organic solids per litre (<1 mg/L), ammocoetes demand minimum 4 mg/L, with concentrations in their habitats having been measured up to 40 mg/L.[58]
During metamorphosis the lamprey loses both the gallbladder and the biliary tract,[59] and the endostyle turns into a thyroid gland.[60]
Some species, including those that are not carnivorous and do not feed even following metamorphosis,[57] live in freshwater for their entire lifecycle, spawning and dying shortly after metamorphosing.[61] In contrast, many species are anadromous and migrate to the sea,[57] beginning to prey on other animals while still swimming downstream after their metamorphosis provides them with eyes, teeth, and a sucking mouth.[62][61] Those that are anadromous are carnivorous, feeding on fishes or marine mammals.[11][63][64]
Anadromous lampreys spend up to four years in the sea before migrating back to freshwater, where they spawn. Adults create nests (called redds) by moving rocks, and females release thousands of eggs, sometimes up to 100,000.[61] The male, intertwined with the female, fertilizes the eggs simultaneously. Being semelparous, both adults die after the eggs are fertilized.[65]
Taxonomists place lampreys and hagfish in the subphylum Vertebrata of the phylum Chordata, which also includes the invertebrate subphyla Tunicata (sea-squirts) and the fish-like Cephalochordata (lancelets or Amphioxus). Recent molecular and morphological phylogenetic studies place lampreys and hagfish in the infraphylum Agnatha or Agnathostomata (both meaning without jaws). The other vertebrate infraphylum is Gnathostomata (jawed mouths) and includes the classes Chondrichthyes (sharks), Osteichthyes (bony fishes), Amphibia, Reptilia, Aves, and Mammalia.
Some researchers have classified lampreys as the sole surviving representatives of the Linnean class Cephalaspidomorphi.[66] Cephalaspidomorpha is sometimes given as a subclass of the Cephalaspidomorphi. Fossil evidence now suggests lampreys and cephalaspids acquired their shared characters by convergent evolution.[67][68] As such, many newer works, such as the fourth edition of Fishes of the World, classify lampreys in a separate group called Hyperoartia or Petromyzontida,[66] but whether this is actually a clade is disputed. Namely, it has been proposed that the non-lamprey "Hyperoartia" are in fact closer to the jawed vertebrates.
The debate about their systematics notwithstanding, lampreys constitute a single order Petromyzontiformes. Sometimes still seen is the alternative spelling "Petromyzoniformes", based on the argument that the type genus is Petromyzon and not "Petromyzonta" or similar. Throughout most of the 20th century, both names were used indiscriminately, even by the same author in subsequent publications. In the mid-1970s, the ICZN was called upon to fix one name or the other, and after much debate had to resolve the issue by voting. Thus, in 1980, the spelling with a "t" won out, and in 1981, it became official that all higher-level taxa based on Petromyzon have to start with "Petromyzont-".
The following taxonomy is based upon the treatment by FishBase as of April 2012 with phylogeny compiled by Mikko Haaramo.[69] Within the order are 10 living genera in three families. Two of the latter are monotypic at genus level today:[70]

A 2023 phylogenetic study suggests that the southern or Gondwanan lampreys (Mordaciidae and Geotriidae) diverged from the northern or Laurasian lampreys (Petromyzontidae) during the Middle Jurassic, about 175 million years ago. This is thought to have been due to the opening of the Hispanic Corridor, a seaway through modern Central America that marked the final separation of Laurasia and Gondwanaland. Given this, it can be assumed that crown-group lampreys were found worldwide during the early Mesozoic, prior to the separation of the two supercontinents. Mordaciidae and Geotriidae diverged from one another during the Early Cretaceous, about 145 million years ago, while the two subfamilies within Petromyzontidae diverged during the Late Cretaceous, about 100 million years ago. The study found the extinct genus Mesomyzon to be the sister group to Petromyzontidae.[6]
Synapomorphies are certain characteristics that are shared over evolutionary history. Organisms possessing a notochord, dorsal hollow nerve cord, pharyngeal slits, pituitary gland/endostyle, and a post anal tail during the process of their development are considered to be Chordates. Lampreys contain these characteristics that define them as chordates. Lamprey anatomy is very different based on what stage of development they are in.[73] The notochord is derived from the mesoderm and is one of the defining characteristics of a chordate. The notochord provides signaling and mechanical cues to help the organism when swimming. The dorsal nerve cord is another characteristic of lampreys that defines them as chordates. During development this part of the ectoderm rolls creating a hollow tube. This is often why it is referred to as the dorsal "hollow" nerve cord. The third Chordate feature, which are the pharyngeal slits, are openings found between the pharynx or throat.[74] Pharyngeal slits are filter feeding organs that help the movement of water through the mouth and out of these slits when feeing. During the lamprey's larval stage they rely on filter feeding as a mechanism for obtaining their food.[75] Once lampreys reach their adult phase they become parasitic on other fish, and these gill slits become very important in aiding in the respiration of the organism. The final Chordate synapomorphy is the post anal tail, which is muscular and extends behind the anus.
Oftentimes adult amphioxus and lamprey larvae are compared by anatomists due to their similarities. Similarities between adult amphioxus and lamprey larvae include a pharynx with pharyngeal slits, a notochord, a dorsal hollow nerve cord and a series of somites that extend anterior to the otic vesicle.[76]
Lamprey fossils are rare because cartilage fossilizes less readily than bone. The first fossil lampreys were originally found in Early Carboniferous limestones, marine sediments in North America: Mayomyzon pieckoensis and Hardistiella montanensis, from the Mississippian Mazon Creek lagerstätte and the Bear Gulch Limestone sequence. None of the fossil lampreys found to date have been longer than 10 cm (4 in),[77] and all the Paleozoic forms have been found in marine deposits.[78]
In the 22 June 2006 issue of Nature, Mee-mann Chang and colleagues reported on a fossil lamprey from the Yixian Formation of Inner Mongolia. The new species, morphologically similar to Carboniferous and other forms, was given the name Mesomyzon mengae ("Meng Qingwen's Mesozoic lamprey").
The exceedingly well-preserved fossil showed a well-developed sucking oral disk, a relatively long branchial apparatus showing a branchial basket, seven gill pouches, gill arches, and even the impressions of gill filaments, and about 80 myomeres of its musculature. Unlike the North American fossils, its habitat was almost certainly fresh water.[79]
Months later, a fossil lamprey even older than the Mazon Creek genera was reported from Witteberg Group rocks near Grahamstown, in the Eastern Cape of South Africa. Dating back 360 Million years, this species, Priscomyzon riniensis, is very similar to lampreys found today.[80][81][82] 310 to 360 million years old fossils of P. riniensis hatchlings indicate that the ammocoete larva is a more recent evolutionary trait among the lampreys. The hatchlings, measuring 15mm in length, still had their yolk sac, but were found in marine sediments and already had large eyes and a toothed suction disk.[83]
The lamprey has been extensively studied because its relatively simple brain is thought in many respects to reflect the brain structure of early vertebrate ancestors. Beginning in the 1970s, Sten Grillner and his colleagues at the Karolinska Institute in Stockholm followed on from extensive work on the lamprey started by Carl Rovainen in the 1960s that used the lamprey as a model system to work out the fundamental principles of motor control in vertebrates starting in the spinal cord and working toward the brain.[85]
In a series of studies by Rovainen and his student James Buchanan, the cells that formed the neural circuits within the spinal cord capable of generating the rhythmic motor patterns that underlie swimming were examined. Note that there are still missing details in the network scheme despite claims by Grillner that the network is characterised (Parker 2006, 2010[86][87]). Spinal cord circuits are controlled by specific locomotor areas in the brainstem and midbrain, and these areas are in turn controlled by higher brain structures, including the basal ganglia and tectum.
In a study of the lamprey tectum published in 2007,[88] they found electrical stimulation could elicit eye movements, lateral bending movements, or swimming activity, and the type, amplitude, and direction of movement varied as a function of the location within the tectum that was stimulated. These findings were interpreted as consistent with the idea that the tectum generates goal-directed locomotion in the lamprey.
Lampreys are used as a model organism in biomedical research, where their large reticulospinal axons are used to investigate synaptic transmission.[89] The axons of lamprey are particularly large and allow for microinjection of substances for experimental manipulation.
They are also capable of full functional recovery after complete spinal cord transection. Another trait is the ability to delete several genes from their somatic cell lineages, about 20% of their DNA, which are vital during development of the embryo, but which in humans can cause problems such as cancer later in life, after they have served their purpose. How the genes destined for deletion are targeted is not yet known.[90][91]
Lampreys have long been used as food for humans.[92] They were highly appreciated by the ancient Romans. During the Middle Ages they were widely eaten by the upper classes throughout Europe, especially during Lent, when eating meat was prohibited, due to their meaty taste and texture. King Henry I of England is claimed to have been so fond of lampreys that he often ate them late into life and poor health against the advice of his physician concerning their richness, and is said to have died from eating "a surfeit of lampreys". Whether or not his lamprey indulgence actually caused his death is unclear.[93]
The pie made for the coronation of Elizabeth II of the United Kingdom on 4 March 1953 was a lamprey pie. However, after many decades, the city of Gloucester had to use Great Lakes lampreys for her Diamond Jubilee in 2012 because few lampreys could be found in the River Severn.[94][95]
In southwestern Europe (Portugal, Spain, and France), Finland and in Latvia (where lamprey is routinely sold in supermarkets), lampreys are a highly prized delicacy. In Finland (county of Nakkila),[96] and Latvia (Carnikava Municipality), the river lamprey is the local symbol, found on their coats of arms. In 2015 the lamprey from Carnikava was included in the Protected designation of origin list by the European Commission.[97]
Sea lamprey is the most sought-after species in Portugal and one of only two that can legally bear the commercial name "lamprey" (lampreia): the other one being Lampetra fluviatilis, the European river lamprey, both according to Portaria (Government regulation no. 587/2006, from 22 June). "Arroz de lampreia" or lamprey rice is one of the most important dishes in Portuguese cuisine.
Lampreys are also consumed in Sweden, Russia, Lithuania, Estonia, Japan, and South Korea. In Finland, they are commonly eaten grilled or smoked, but also pickled, or in vinegar.[99]
The mucus and serum of several lamprey species, including the Caspian lamprey (Caspiomyzon wagneri), river lampreys (Lampetra fluviatilis and L. planeri), and sea lamprey (Petromyzon marinus), are known to be toxic, and require thorough cleaning before cooking and consumption.[100][101]
In Britain, lampreys are commonly used as bait, normally as dead bait. Northern pike, perch, and chub all can be caught on lampreys. Frozen lampreys can be bought from most bait and tackle shops.
Sea lampreys have become a major pest in the North American Great Lakes. It is generally believed that they gained access to the lakes via canals during the early 20th century,[102][103] but this theory is controversial.[104] They are considered an invasive species, have no natural enemies in the lakes, and prey on many species of commercial value, such as lake trout.[102]
Lampreys are now found mostly in the streams that feed the lakes, and controlled with special barriers to prevent the upstream movement of adults, or by the application of toxicants called lampricides, which are harmless to most other aquatic species; however, these programs are complicated and expensive, and do not eradicate the lampreys from the lakes, but merely keep them in check.[105]
New programs are being developed, including the use of chemically sterilized male lampreys in a method akin to the sterile insect technique.[106] Finally, pheromones critical to lamprey migratory behaviour have been isolated, their chemical structures determined, and their impact on lamprey behaviour studied, in the laboratory and in the wild, and active efforts are underway to chemically source and to address regulatory considerations that might allow this strategy to proceed.[107][108][109]
Control of sea lampreys in the Great Lakes is conducted by the U.S. Fish and Wildlife Service and the Canadian Department of Fisheries and Oceans, and is coordinated by the Great Lakes Fishery Commission.[110] Lake Champlain, bordered by New York, Vermont, and Quebec, and New York's Finger Lakes are also home to high populations of sea lampreys that warrant control.[111] Lake Champlain's lamprey control program is managed by the New York State Department of Environmental Conservation, the Vermont Department of Fish and Wildlife, and the U.S. Fish and Wildlife Service.[111] New York's Finger Lakes sea lamprey control program is managed solely by the New York State Department of Environmental Conservation.[111]
In folklore, lampreys are called "nine-eyed eels". The name is derived from the seven external gill slits that, along with one nostril and one eye, line each side of a lamprey's head section. Likewise, the German word for lamprey is Neunauge, which means "nine-eye",[112] and in Japanese they are called yatsume-unagi (八つ目鰻, "eight-eyed eels"), which excludes the nostril from the count. In British folklore, the monster known as the Lambton Worm may have been based on a lamprey, since it is described as an eel-like creature with nine eyes.
Vedius Pollio kept a pool of lampreys into which slaves who incurred his displeasure would be thrown as food.[113] On one occasion, Vedius was punished by Augustus for attempting to do so in his presence:
... one of his slaves had broken a crystal cup. Vedius ordered him to be seized and then put to death, but in an unusual way. He ordered him to be thrown to the huge lampreys which he had in his fish pond. Who would not think he did this for display? Yet it was out of cruelty. The boy slipped from the captor's hands and fled to Augustus's feet asking nothing else other than a different way to die – he did not want to be eaten. Augustus was moved by the novelty of the cruelty and ordered him to be released, all the crystal cups to be broken before his eyes, and the fish pond to be filled in ...
This incident was incorporated into the plot of the 2003 novel Pompeii by Robert Harris in the incident of Ampliatus feeding a slave to his lampreys.
Lucius Licinius Crassus was mocked by Gnaeus Domitius Ahenobarbus (cos. 54 BC) for weeping over the death of his pet lamprey:

In George R. R. Martin's novel series, A Song of Ice and Fire, Lord Wyman Manderly is mockingly called "Lord Lamprey" by his enemies in reference to his rumored affinity to lamprey pie and his striking obesity.[117]
Kurt Vonnegut, in his late short story "The Big Space Fuck", posits a future America so heavily polluted – "Everything had turned to shit and beer cans", in his words – that the Great Lakes have been infested with a species of massive, man-eating ambulatory lampreys.[118]
In season 3, episode 5 of “The Borgias”, whilst out on a hunting trip, Cesare Borgia's mercenary, Micheletto, kills the King of Naples by pushing him into a pool filled with lampreys that King Firante had built during his reign of Naples.[119]

There are about 38 known extant species of lampreys and five known extinct species. Parasitic carnivorous lampreys are the most well-known species, and feed by boring into the flesh of other fish to suck their blood; but only 18 species of lampreys engage in this micropredatory lifestyle. Of the 18 carnivorous species, nine migrate from saltwater to freshwater to breed (some of them also have freshwater populations), and nine live exclusively in freshwater. All non-carnivorous forms are freshwater species. Adults of the non-carnivorous species do not feed; they live on reserves acquired as ammocoetes (larvae), which they obtain through filter feeding.

Nahkiaskalojen fossiileja on löydetty melko vähän, koska rustokudos ei säily yhtä hyvin kuin luusto.[6] Myöhäiseltä devonikaudelta (Famenne-kaudelta) on löydetty hyvin nykyisen kaltainen nahkiaiskala, Priscomyzon riniensis, joka eli 360 miljoonaa vuotta sitten. Se todistaa niiden olevan eläviä fossiileja.[7]
Erityisen heikosti on säilynyt nahkiaiskalojen toukkien fossiileja, sillä ne ovat aikuisiakin hennompia. Vanhin tunnettu toukan fossiili on varhais-liitukaudelta, ainakin 125 miljoonan vuoden takaa. Se on löydetty samoista kerrostumista, joissa on säilynyt myös dinosaurusten höyheniä.[6]

Petromyzontidae
Les Lamproies (Petromyzontida) sont une classe d'agnathes (animaux sans mâchoires mobiles). Ce groupe est constitué d'un seul ordre (Petromyzontiformes) et d'une seule famille (Petromyzontidae), qui a pu être plus importante dans le passé mais ne regroupe aujourd'hui que 38 espèces. Elles sont parfois considérées comme faisant partie d'un des taxons de vertébrés vivants les plus anciens.
Les lamproies vivent dans les zones tempérées et sauf exception (lamproie de Planer) sont migratrices et anadromes. Ce sont des filtreurs à l'état larvaire et des ectoparasites hématophages à l'état adulte. Après avoir atteint la maturité sexuelle, l'intestin s'atrophie et la lamproie semble ne plus se nourrir et vivre uniquement sur ses réserves de graisse.
Ce sont des vertébrés basaux qui, contrairement aux Gnathostomes, ne comportent pas de membres pairs, ni de mâchoires. On les appelle, pour cette raison, « Agnathes » ou « Cyclostomes ». Contrairement aux Myxinoidea, les lamproies possèdent des yeux fonctionnels et une colonne vertébrale. Les lamproies possèdent de nombreux caractères plésiomorphes (ou primitifs). Leur morphologie rappelle celle de l'anguille (corps allongé et cylindrique, sans nageoires paires ; seules la nageoire dorsale et la nageoire caudale sont présentes). On les dit donc « anguilliformes ».
La peau visqueuse ne présente pas d'écailles.
Les muscles des lamproies présentent aussi des particularités. Leurs fibres (étudiées[1] chez la Lamproie de rivière) présentent trois types différents de fibres musculaires. La distribution et les activités de plusieurs enzymes oxydatives et de la myosine-ATPase ont été étudiées dans les muscles du tronc de cette même espèce. Les chercheurs ont observé une distribution différente de l'activité des enzymes oxydatives et de la myosine-ATPase selon les faisceaux de fibres pariétales de la sous-unité myotomale, tandis que les fibres centrales y réagissent moindrement. D'autres tests laissent penser que ces faisceaux sont fonctionnellement différents et distribués en groupes spécifiques au sein du myotome (constitué du muscle et de la racine nerveuse qui l'innerve). Les fibres pariétales sont de type lent (type I) et les fibres centrales de type rapide (type II A)[2].
Ce sont des filtreurs à l'état larvaire et des ectoparasites hématophages à l'état adulte[3],[4].
Les lamproies ont une bouche ronde et en forme d'entonnoir. Elles possèdent des « dents » cornées formées de kératine.
Grâce à leurs dents, les lamproies percent ou raclent la peau de poissons hôtes, ce qui leur permet ensuite d'aspirer le sang et autres liquides biologiques (lymphe) s'écoulant de la blessure[4]. Certaines espèces peuvent aussi parfois s'enfoncer dans les ouïes de leurs hôtes et se fixer sur leurs branchies[5].
Les lamproies adultes localisent les rivières et les zones propices à leur reproduction en détectant certaines phéromones sécrétées par les larves issues des pontes des années précédentes. Les adultes ne s'alimentent plus et gagnent les frayères des hauts de bassin versant en étant capables de natation et reptation vigoureuse et parfois de grimper sur des obstacles tels que des chutes d'eau ou des barrages[6],[7]. Comme les anguilles, les lamproies peuvent survivre bien plus longtemps que la plupart des poissons hors de l'eau. La ventouse des lamproies leur permet aussi de s'accrocher au fond ou sur une paroi (même couverte d'un film d'algues glissantes) et de résister à de violents courants. Elle leur permet de franchir des barrages de castors des seuils ou d'autres types de petits barrages[6],[7].
Leur ventouse leur permet aussi de se faire transporter par d'autres espèces. F. Barthélemy décrivait ainsi en 1912 cette caractéristique : « Les lamproies, arrivées à un point qu'elles ne peuvent franchir seules, s'abritent sous une pierre ou un obstacle et s'y maintiennent, attendant le passage des aloses : quand l'une d'elles passe à la portée de la lamproie, celle-ci s'élance et la saisit à la queue, l'alose effrayée précipite sa course, fait un effort et franchit le passage difficile, et la lamproie lâche prise aussitôt. On a vu prendre, dans les filets tournants des aloses ainsi accrochées ; or ces filets sont placés dans les courants les plus forts »[6].
La ponte, collective, est faite dans un nid construit par un groupe de mâles et de femelles, toujours en eau douce et entre le début du printemps et le début de l'été (selon les espèces)[8]. L'énergie nécessaire aux activités de remontée et de reproduction est fournie par d'importantes réserves de lipides glycogènes, pratiquement épuisées après le frai. Certains auteurs estiment que la mort des adultes juste après la ponte est un phénomène génétiquement programmé associé à une accélération générale de la sénescence et non pas à la seule déplétion des réserves d'énergie de la lamproie.
De l'œuf sort une larve dite ammocète. Étymologiquement, ce nom signifie « qui habite le sable » (du grec ammos, sable et koites, habitation).
La larve est d'abord translucide puis brunâtre sur le corps et rougeâtre près de la tête là où se situent les plaques branchiales, dans des sacs ouvrant sur l'extérieur par une rangée de 7 trous (fentes branchiales) situés dans un sillon (sillon branchial), derrière une tête mal définie et caractérisée par une capuche orale enfermant un espace préoral dit vestibule. La larve est aveugle durant tout son stade larvaire mais néanmoins sensible à la lumière et au courant. Son métabolisme de l'iode est sensible à la température de l'eau[9], et la lamproie supporte mal la chaleur, ce qui pourrait expliquer la rareté des lamproies ou leur absence en zone tropicale. Dépourvue de ventouse dentée, la larve filtre l'eau via ses branchies. Elle est dotée d'un cœur primitif qui alimente un système sanguin composé d'une artère et d'une veine[10].
Les larves s'installent dans une zone de moindre courant, dans un tube creusé dans un lit de vase ou de limons fins plus ou moins argilo-sableux, dans des entonnoirs (dépressions du fond), à faible profondeur, dans de l'eau plutôt claire et oxygénée, de sources ou de ruisseaux. Elles sortent de leur tunnel en orientant leur tête vers l'amont, offrant leur cavité buccale au courant, de manière que les branchies s'oxygènent, tout en filtrant les particules alimentaires. À ce stade, elles sont décimées par de nombreux poissons et oiseaux qui s'en nourrissent.
Durant tout le stade larvaire, au fur et à mesure de sa croissance, périodiquement, la larve se laisse déporter par le courant vers des zones de faciès lentiques (à faible courant) de l'aval et s'installe dans un nouvel environnement, jusqu'au moment de la métamorphose. Celle-ci est un phénomène complexe, initié par une chute du taux d'hormone thyroïdienne qui entraîne le développement des yeux, un disque oral et denté (ainsi qu'une langue également dentée), ainsi que divers changements dans la structure interne et externe du corps. L'animal change aussi de comportement et devient parasite et vivra en mer (sauf la lamproie de Planer).
L'ammocète est dotée d'une longue nageoire dorsale et la queue porte déjà un liseré qui est une nageoire caudale. Cette larve (dite Lamprey eel pour les anglophones) a un corps fusiforme et comprimé latéralement ressemblant aux Branchiostoma (genre animal réputé très primitif, de la classe des Céphalocordés).
On a autrefois pensé que les ammocètes étaient une autre espèce. Il semble pouvoir exister des différences morphologiques entre les larves selon leur lieu de vie (observation faite au Portugal chez les ammocètes de Petromyzon marinus[11]).
Elle passe de deux à sept ans (variable selon les espèces et peut-être selon les contextes) enlisée dans la vase ou le substrat sablo-vaseux à se nourrir de bactéries, infusoires et microalgues (phytoplancton) par filtration. Des auteurs évoquent une durée possible de 17 ans pour l'état larvaire[12].
Elle est dotée de branchies, d'une ébauche de cerveau et d'un rein primitif dit pronéphros[13] (notamment étudié chez Lampetra fluviatilis et Petromyzon marinus). Le pronéphros est un organe excréteur rudimentaire qui existe chez tous les vertébrés durant l'embryogenèse (il n'est que le premier des trois appareils rénaux différents qui se succèdent pendant la vie utérine des mammifères avant de disparaitre) mais il persiste comme rein définitif chez quelques poissons primitifs tels que la myxine, ainsi que chez certaines larves d'amphibiens.
Après leur métamorphose qui les dote d'une bouche-ventouse munie d'un anneau de dents tranchantes, la plupart des lamproies gagnent la mer en deux ans (hormis les lamproies de Planer qui effectuent tout leur cycle de vie en eau douce). Elles vont grandir et préparer leur maturation sexuelle en mer et se déplacent parfois sur de grandes distances en s'accrochant à d'autres poissons ou parfois à des mammifères marins au moyen de leur ventouse.
Certains chercheurs ont classé les lamproies comme seul taxon survivant de la classe linnéenne Cephalaspidomorphi[14]. Des preuves ou indices fossiles suggèrent maintenant que les lamproies et les cephalaspides ont acquis des caractères similaires mais par convergence évolutive[15],[16]. Ainsi, la dernière édition de Fishes of the World classe les lamproies dans un groupe séparé dit Petromyzontida ou Hyperoartia[17].
Jusqu'à la fin du XXe siècle, les paléontologues pensaient que les lamproies dérivaient des ostracodermes, le groupe des agnathes cuirassés à l'origine des gnathostomes puis des poissons. Cependant, les analyses ADN ont ensuite suggéré une parenté entre les myxinoides et les pétromyzontides, alors que les études morphologiques et physiologiques rapprochent ces dernières des gnathostomes. La découverte d'un fossile de pétromyzontide (Priscomyzon riniensis) très proche des lamproies modernes, dans le Dévonien moyen d'Afrique du Sud, et donc contemporain des ostracodermes, plaide pour une certaine parenté entre les myxinoides et les pétromyzontides avec une séparation entre ces deux groupes antérieure au développement des ostracodermes. L'origine des pétromyzontides serait à rechercher du côté d'un groupe d'ostracodermes primitifs, les anaspides, qui aurait donné naissance, d'un côté, par perte des écailles et réduction du squelette, aux pétromyzontides , et d'autre part, aux autres ostracodermes.
La reconstitution de l'évolution des premiers vertébrés reste difficile. Les fossiles d'animaux à corps mou et à ébauche de squelette cartilagineux comme les pétromyzontides sont rares (deux datant du Carbonifère, un du Dévonien) alors que les restes plus minéralisés des ostracodermes sont plus nombreux[18].
La famille des Petromyzontidae (étymologiquement « suce-pierre », en grec) regroupe 43 espèces (selon FishBase, février 2011) réparties en trois sous-familles, qui sont selon ITIS :

Les enzymes utilisées par la lamproie lors de sa morsure sont à l'étude dans le but d'identifier, par exemple, leur substance anti-coagulante.
Les trois lamproies européennes sont depuis longtemps pêchées, au moins depuis la Grèce antique et la Rome antique et par de nombreux moyens[26].
En France c'est dans le sud-ouest que la pêche à la lamproie a été et reste la plus importante, tant par les pêcheurs amateurs que les professionnels. Elle se pratiquait de manière plus intensive, voire industrielle aux embouchures (Loire notamment où elle était « assez abondante » au XIXe siècle selon F. Barthélemy[27] qui ajoutait : « On emploie le loup, sorte de filet à quenouilles, que deux hommes présentent au courant et qu'ils resserrent quand le poisson a donné dedans. On emploie aussi les « duits », qui se composent de barrages en pierre et en bois établis sur les bras morts de la basse Loire ; ces barrages sont garnis de nasses spéciales placées à distance égale les unes des autres, la lamproie remontant le fleuve donne forcément dans l'une des nasses (...) »[27]. Des braconniers faisaient aussi des « pêches fructueuses, quoique illicites (...)Ils ont reconnu que la lamproie, évitant avec une excessive prudence tous les pièges et engins de pêche tendus en rivière, ne se montre jamais en plein jour sur les barrages ou obstacles quelconques qui interrompent sa route. Or, à l'époque habituelle du passage, les amateurs de pêche se mettent à explorer les barrages fixes où ce poisson est arrêté, entre les onze heures du soir et trois heures du matin, Munis d'une lanterne (...), ils s'avancent sur le glacis rampant de l'ouvrage (...) on les voit par moment arracher avec effort des corps adhérents aux maçonneries et flottants en partie à la surface. Ce sont autant de lamproies au repos, opérant, à la faveur de la nuit, leur ascension vers le bief supérieur (...) »[27].
La Loire, dernier grand fleuve sauvage, était réputée dans les années 1800 le cours d'eau le plus riche en lamproies[27].
Ancenis était « le grand quartier général de cette pêche qui donne lieu à un commerce assez important, par suite des pâtés et des ragouts au vin et aux pruneaux que l'on expédie de ce pays pour une partie de l'Ouest de la France »[27] mais F. Barthelémy estime que « la Gironde et les rivières qui s'y versent sont aussi bien traitées par la nature que la Loire et la lamproie est un poisson fort recherché depuis Bordeaux jusqu'au point le plus élevé où elle remonte »[27]. Le pâté de lamproie faisait aussi selon G. Barthélemy la renommée de Gloucester et le frai de la lamproie était également très estimé, « Rouen et Harfleur, dans la Seine inférieure ont la spécialité de sa conservation en pots dits pichets, mélangé avec du beurre frais et une purée d'oseille. En Italie, où la lamproie est très abondante, on la conserve marinée entière »[27]. Selon Barthélemy, de mauvaises conserves ont pu être causes de botulisme ou intoxication alimentaire, et « au point de vue hygiénique, la lamproie n'est réellement de digestion facile qu'au printemps », et rehaussée d'une sauce très « condimentée »[27].
Après une phase de régression et alors que le nombre de pêcheurs professionnels a diminué (divisé par deux environ), les populations du sud-ouest (Bassin Adour-Garonne notamment) semblent s'être au moins en partie reconstituées mais peut-être au détriment d'autres espèces dont l'alose, malgré un moratoire de 2009 interdisant provisoirement sa pêche pour cinq ans. À titre d'exemple, un pêcheur professionnel de Pujols-sur-Ciron après en avoir capturé (en avril 2011) environ 50 kg en deux heures de pêche et quatre coups de filets commentait : « C’est comme ça depuis quinze jours, à chaque marée »[28].
Les lamproies sont comestibles. Elles sont consommées depuis l'Antiquité. Le poète Horace les cite dans le deuxième recueil de ses Satires (VIII, 43-55), peut-être en tant que mets ambigu et utilisé métaphoriquement : la lamproie servie par Nasidiénus est pleine, elle pourrait rappeler aux invités eux-mêmes qu'ils sont des « parasites » :
« (...) On apporte une lamproie (murena) étirée dans une poissonnière et entourée de squilles nageant [dans la sauce]. Sur ce, le maître de maison dit : « Elle a été prise pleine, sa chair aurait été moins bonne après le frai. (...)[29] ».
Ce paragraphe est ainsi commenté par le philologue André Dacier dans les années 1680 :
« Les lamproies étoient fort estimées à Rome. J'ai lu quelque part, qu'un Poëte apelloit les lamproies d'Italie (...) un manger admirable ; mais ce n'etoit ni lorsqu'elles étoient pleines, ni lorsqu'elles avoient fait leurs petits ; car alors on les méprisoit fort, & on les donnoit pour rien. Et je crois que cela venoit de l'opinion où on étoit, qu'elles s'accouploient avec les serpens. C'étoit donc un méchant régal que Nasidiénus donnoit à ses conviés qu'une lamproie pleine[30]. »
Plusieurs recettes régionales existent : la lamproie au vin rouge est ainsi un plat traditionnel de la cuisine bordelaise. On les consommait au Moyen Âge en galantine ou en pâté en croûte, accompagnées d'une sauce noire confectionnée avec leur propre sang — la lamproie est alors saignée vivante (ou fraîchement tuée) lors de sa préparation ; on l'incise de l'orifice génital jusqu'à la queue. La lamproie était considérée comme un mets raffiné, réservé aux notables et aux riches. Le roi Henri Ier d'Angleterre mourut le 1er décembre 1135 à Lyons-la-Forêt d'une indigestion de lamproies grillées[31].
Comme c'est le poisson qui s'est avéré être le plus pollué par le mercure (notamment sous sa forme la plus toxiques : MeHg, dont la durée de demi-vie corporelle est estimée à 45 jours), l'Afssa, saisie par la DGAL à la suite de teneurs dépassant systématiquement les seuils recommandés, l'a classé parmi les poissons à ne pas consommer par la femme enceinte, la femme allaitante et l'enfant de moins de 30 mois. Selon l'Ifremer et la DGAL, « les plans de surveillance 2007 et 2008 ont présenté des niveaux de contamination de la lamproie supérieurs au seuil réglementaire »[32].
Petromyzontidae
Les Lamproies (Petromyzontida) sont une classe d'agnathes (animaux sans mâchoires mobiles). Ce groupe est constitué d'un seul ordre (Petromyzontiformes) et d'une seule famille (Petromyzontidae), qui a pu être plus importante dans le passé mais ne regroupe aujourd'hui que 38 espèces. Elles sont parfois considérées comme faisant partie d'un des taxons de vertébrés vivants les plus anciens.
Les lamproies vivent dans les zones tempérées et sauf exception (lamproie de Planer) sont migratrices et anadromes. Ce sont des filtreurs à l'état larvaire et des ectoparasites hématophages à l'état adulte. Après avoir atteint la maturité sexuelle, l'intestin s'atrophie et la lamproie semble ne plus se nourrir et vivre uniquement sur ses réserves de graisse.

Presentano un corpo lungo e cilindrico, serpentiforme, simile ad un'anguilla, rivestito da una pelle viscida, ricca di cellule mucipare. Presentano pinne impari: 2 pinne sul dorso e quella posteriore situata ventralmente.
Lo scheletro è completamente cartilagineo e di semplice struttura.
Gli occhi hanno movimento intrinseco, cioè hanno solo la messa a fuoco. La bocca è circolare e situata all'estremità anteriore del capo con le pareti ricoperte da denti cornei, che vengono rinnovati periodicamente. Alcuni di essi si trovano su piastre dentarie di varia grandezza, alcune delle quali si trovano sulla lingua, e vengono impiegati per raschiare. Da entrambi i lati della testa si trovano allineate una dietro l'altra 7 tasche branchiali che comunicano con l'esterno per mezzo di altrettanti fori. Internamente, esse sboccano invece in un vestibolo branchiale, un canale che parte dalla faringe e decorre parallelamente sotto l'esofago terminando a fondo cieco.
Il tubo digerente è diritto, senza formare anse. La circolazione sanguigna è semplice e il sangue contiene globuli rossi rotondi, biconvessi e nucleati. Nel cuore sono presenti 3 cavità contigue (seno venoso, atrio, ventricolo) in cui scorre il sangue venoso proveniente dalle varie parti del corpo, prima di essere inviato alle branchie.
Il midollo spinale è depresso e le radici (dorsale e ventrale) dei nervi spinali non si uniscono.
Si nutrono specialmente di escrementi di altri animali marini.
Alcune specie di Petromizontiformi vivono stabilmente in acqua dolce, altre dal mare si portano nei fiumi per la riproduzione, e cioè sono migratrici anadrome.
La riproduzione avviene una sola volta nella vita. Gli individui sessualmente maturi si distinguono per il colore e per la forma delle pinne dorsali. Depongono uova piccole che, una volta fecondate, si dividono completamente, cioè sono oloblastiche.
Lo sviluppo è accompagnato da metamorfosi. Durante lo stadio di larva, le lamprede hanno occhi rudimentali e bocca priva di denti, circondata da un labbro a forma semicircolare, come un ferro di cavallo. Tali larve non hanno il vestibolo branchiale e perciò le tasche branchiali sboccano direttamente nell'esofago. Esse, per le innumerevoli differenze con lo stadio adulto, un tempo furono considerate come un genere a sé denominato Ammocoetes.
L'imbuto boccale funziona come una ventosa, grazie alla quale si possono attaccare ai sassi e, per nutrirsi, ai pesci, dei quali succhiano il sangue dopo aver raschiato la carne mediante movimenti della lingua. In questa maniera sulla pelle delle vittime rimane un'impronta circolare.
Per inghiottire più facilmente il sangue delle vittime, le lamprede secernono una saliva anticoagulante.
Non tutte le specie, tuttavia, si comportano da ectoparassite.
Le larve sono microfaghe e di solito si affondano nel fango; grazie ai cromatofori presenti numerosi sulla pelle, cambiano colore molto di più degli adulti. La loro metamorfosi dura qualche anno.
Le lamprede hanno carni commestibili una volta cotte. La cottura, infatti, distrugge il veleno che è contenuto nel loro sangue e che agisce sul sistema nervoso.
All'ordine appartengono 47 specie suddivise in tre famiglie[1]. Due famiglie sono monotipiche.

Niaugo er små fiskar som liknar ålar ved å ha runde, avlange kroppar utan andre finnar enn på ryggen og halen. Dei største artane vert nesten halvannan meter lange, medan dei minste er ein tiandedel så store. Niauga skil seg frå slimålen ved dei sju gjelleopningane det har på kvar side av kroppen. Desse har gjeve opphav til namnet, sidan dei saman med nasebora og augo gjev dyret ni laterale kroppsopningar («augo») på kvar side.
Niauga trivst best i kaldt eller temperert vatn, og finst praktisk talt ikkje i tropane. Det er særleg larvane som er vare overfor høge temperaturar, sidan dei døyr om det vert særleg varmare enn 28-30 gradar celcius. Derimot er dei ganske hardføre i høve til saltinnhald; ein treffer på niaugo overalt frå ferskvatn til det særs salte Kaspihavet. Nokre artar er anadrome (vandrar mellom ferskvatn og saltvatn) og andre er stasjonære i ferskvatn.
I Noreg finst fire artar niauga, som alle høyrer til i niaugefamilien Petromyzontidae: Havniauge, bekkeniauge, elveniauge og arktisk niauge.
Niaugo gyt i ferskvatn på stader med stabil oksygentilstrøyming. Talet på egg ligg mellom 1000 og 300000 avhengig av art, og dei fleste legg dei i eigne gytegroper. Alle dei vaksne individa døyr kort tid etter gytinga.

ElveniaugaMinogokształtne[4] (Petromyzontiformes) – rząd prymitywnych zwierząt wodnych zaliczanych do bezżuchwowców z monotypowej gromady minogów[5] (Petromyzontida[3]). Razem ze śluzicami określane są nazwą kręgouste.
Występują zarówno w wodach słonych, jak i słodkich. W obrębie rzędu występują gatunki pasożytnicze i niepasożytnicze, przy czym obydwie formy występują u przedstawicieli blisko spokrewnionych gatunków. Minogi pasożytnicze żerują głównie na rybach, rzadziej na innych zwierzętach, przysysając się do ich ciała i odżywiając krwią. Gatunki niepasożytnicze są związane wyłącznie z wodami słodkimi[3].
Ciało minoga ma długość do 40 cm. Składa się z głowy, tułowia i ogona, przechodzących w siebie bez wyraźnych granic widocznych na zewnątrz ciała. Na końcu głowy znajduje się lejek przyssawkowy uzbrojony w zęby rogowe i otoczony płatkowato postrzępioną skórą. Wewnątrz lejka mieści się język również zaopatrzony w zęby. Na górnej części głowy znajduje się nieparzysty otwór węchowy, a z tyłu, za otworem nosowym - narząd ciemieniowy. Po obu stronach głowy leżą małe, słabo widoczne oczy, pokryte półprzezroczystą skórą. Po bokach głowy za oczami ciągnie się szeregiem po każdej stronie 7 otworów skrzelowych. Minóg ma 2 płetwy grzbietowe oraz ogonową; tylna płetwa grzbietowa łączy się z przednią, a ku tyłowi przechodzi w symetryczną płetwę ogonową.
Po brzusznej stronie ciała znajduje się otwór odbytowy i otwór moczowo-płciowy leżący na brodawce płciowej. Samce obok otworu płciowego mają pokładełko, a samice bezszkieletową płetwę odbytową (płciową). W okresie tarła wyraźnie zaznacza się dymorfizm płciowy.
Ciało minoga pokryte jest skórą, w której znajdują się gruczoły śluzowe i zakończenia nerwowe. Pod skórą znajdują się mięśnie, wykazujące wyraźną segmentację w odcinku tułowiowym i ogonowym. Szkielet i czaszka zbudowane z chrząstki. W skład szkieletu osiowego wchodzi struna grzbietowa otoczona osłoną łącznotkankową, na której znajdują się parzyste chrząstki - zawiązki łuków górnych kręgów.
Czaszka składa się z:
Przedni odcinek przewodu pokarmowego spełnia rolę tłoka ssącego, umożliwiającego przyssanie się do ciała ryby i pobieranie krwi lub tkanki mięśniowej. Minogi nie posiadają żuchwy ani kości szczęk. Poniżej otworu gębowego, znajdującego się w lejku przyssawkowym leży otwór skrzelowy prowadzący do gardzieli. Otwór gębowy prowadzi do przełyku, który przechodzi w proste jelito. Przednie rozszerzenie jelita uważa się za żołądek. Przed nim znajduje się gruczoł wątrobowy. Wzdłuż jelita ciągnie się tzw. zastawka spiralna, powiększająca powierzchnię jelita i opóźniająca przesuwanie się pokarmu. Na pograniczu jelita przedniego i środkowego mieści się zaczątkowa, pęcherzykowata trzustka. Przewód pokarmowy kończy się otworem odbytowym.
Układ oddechowy minoga występuje w postaci 7 par workowatych skrzeli pochodzenia endodermalnego (u innych kręgowców skrzelodysznych skrzela są pochodzenia ektodermalnego). Worki skrzelowe z jednej strony łączą się z gardzielą, a z drugiej przez otwory skrzelowe ze środowiskiem zewnętrznym. W workach skrzelowych znajdują się listewki, w których przebiegają naczynia krwionośne. W czasie oddychania woda dostaje się do gardzieli przez lejek przyssawkowy, a następnie do worków skrzelowych, a stamtąd wydostaje się otworami skrzelowymi na zewnątrz. Jeżeli minóg jest przyczepiony do ciała ryby, woda wpływa przez otwory skrzelowe do worków skrzelowych, gdzie zachodzi wymiana gazowa, a następnie wypływa również otworami skrzelowymi.
Układ krwionośny zamknięty. Serce leży z tyłu za przewodem skrzelowym. Zbudowane jest z zatoki żylnej, jednego przedsionka, jednej komory i stożka tętniczego. Przez serce przepływa wyłącznie krew żylna, nie zawierająca tlenu. Krew zawiera hemoglobinę. Krew z zatoki żylnej przechodzi do przedsionka, potem do komory i następnie do stożka tętniczego, od którego odchodzi aorta brzuszna. Rozdziela się ona na 2 tętnice, od których odchodzi po 8 tętnic skrzelowych doprowadzających. Tętnicami tymi krew płynie do worków skrzelowych. Utlenowana krew w workach skrzelowych zbierana jest przez tętnice skrzelowe odprowadzające, które uchodzą do parzystych korzeni aorty. Korzenie aorty dają do przodu 2 tętnice głowowe, a z tyłu łączą się, tworząc aortę grzbietową. Zaopatruje ona w krew odcinek tułowiowy i ogonowy. Żyły jarzmowe uchodzące do zatoki żylnej zbierają krew żylną z odcinka głowowego. Krew żylna z tułowia zbierana jest przez żyły główne tylne, również uchodzące do zatoki żylnej. Do zatoki żylnej uchodzi także żyła wątrobowa. Żyła podjelitowa zbiera krew z przewodu pokarmowego, następnie wchodzi do wątroby i wychodzi z niej jako żyła wątrobowa.
Narządami wydalniczymi minoga są pranercza, ciągnące się po grzbietowej stronie aż do odbytu. Wzdłuż nerek biegnie przewód moczowy – przewód Wolffa. Moczowody uchodzą do zatoki moczowo-płciowej, która otwiera się na brodawce moczowo-płciowej.
Mózgowie minoga złożone jest z 5 odcinków ułożonych jeden za drugim. Móżdżek i śródmózgowie są słabo rozwinięte. Móżdżek jest wyraźnie wyodrębniony z rdzenia przedłużonego. Od kresomózgowia odchodzą duże płaty węchowe. Z międzymózgowiem łączy się szyszynka i narząd ciemieniowy. Z przedniej części dna międzymózgowia odchodzą nerwy wzrokowe. IX i X para nerwów mózgowych wychodzi poza obrębem mózgoczaszki. Rdzeń kręgowy jest taśmowaty i silnie spłaszczony grzbietobrzusznie.
Narządy zmysłu minoga to:
Minogi są rozdzielnopłciowe, zapłodnienie jest zewnętrzne. Mają pojedynczy gruczoł rozrodczy męski lub żeński. Po dojrzeniu jaja lub plemniki wydostają się do jamy ciała, z której dostają się do zatoki moczowo-płciowej, a następnie na zewnątrz. Minogi nie odżywiają się podczas wędrówki godowej, co powoduje uwstecznienie przewodu pokarmowego. Po odbyciu godów, giną. Stadium larwalne (ślepica, zwana też robaczycą) znacznie różni się od osobników dorosłych. Żyje zagrzebana w mule rzecznym; przeobraża się po 2–4 latach.
Rząd Petromyzontiformes jest taksonem monofiletycznym. Dyskusyjna pozostaje jego pozycja filogenetyczna względem śluzic i pozostałych kręgowców[3], dlatego przez różnych autorów klasyfikowany jest w gromadzie Cephalaspidomorphi[6][1], Petromyzonti[7], Cyclostomata lub Hyperoartia.
Do minogokształtnych zaliczane są współcześnie żyjące gatunki klasyfikowane w rodzinach[3][7]:

Lampreia é o nome comum dado a diversas espécies de peixes ciclóstomos de água doce ou anádromos, com forma de enguias, mas sem maxilas, pertencentes à família Petromyzontidae da ordem dos Petromyzontiformes. Nestes peixes, a boca está transformada numa ventosa circular, com o diâmetro do corpo, reforçada por um anel de cartilagem e armada com uma língua-raspadora igualmente cartilaginosa. Várias espécies de lampreia são consumidas como alimento.[1]
As lampreias possuem no topo da cabeça um "olho pineal" translúcido e, à frente, uma única "narina", o que é um caso único entre os vertebrados actuais (embora se encontre em alguns fósseis). Esta "narina" também é chamada abertura naso-hipofisial, uma vez que liga ao órgão do olfacto e a um tubo cego que inclui a glândula pituitária ou hipófise. Pensa-se que este tubo seja um resíduo do canal nasofaringeal das mixinas, com quem a lampréia tem algumas características em comum.[2]
Os olhos são relativamente grandes, estão equipados de cristalino, mas não possuem músculos oculares intrínsecos, como os restantes vertebrados. Por trás deles, abrem-se sete fendas branquiais. Uma outra característica deste grupo de peixes é a inexistência de verdadeiros arcos branquiais – a câmara branquial é reforçada externamente por um cesto branquial cartilagíneo (ver figura na página Craniata).
A ventosa que forma a boca da lampreia funciona como tal através dum complexo mecanismo que age como uma bomba de sucção: inclui um pistão, o velum e uma depressão na cavidade bucal, o hydrosinus.
As lampreias não têm um esqueleto mineralizado, mas encontram-se regiões de cartilagem calcificada no seu endoesqueleto. O crânio é composto por placas cartilagíneas, como o das mixinas, mas é mais complexo e inclui uma verdadeira caixa craniana onde está alojado o cérebro.[1]
A coluna vertebral é basicamente formada pelo notocórdio, tal como as mixinas, mas nas lampréias existem pequenos reforços cartilagíneos, os arcualia dorsais.
Tanto as lampréias marinhas como as de água doce se reproduzem em rios. A sua vida larvar (ver abaixo), que pode durar até sete anos, é sempre passada no rio onde nascem. A certa altura, elas sofrem uma metamorfose e transformam-se em adultos.[1]
As espécies anádromas migram para o mar depois da metamorfose[3], onde se desenvolvem e atingem a maturação sexual. Este processo pode durar um ou dois anos[4]. São espécies semélparas, quando atingem a maturidade sexual, as lampreias entram num rio, reproduzem-se e morrem.
Cada fêmea gera milhares de ovos pequenos e sem reservas nutritivas. Os ovos são enterrados em "ninhos" cavados no fundo do rio.
Algumas espécies de lampreias têm um número de cromossomas que é recorde entre os cordados, chegando a 174.
As lampreias sofrem um desenvolvimento larvar que pode durar até sete anos, passando-se sempre em água doce. A larva, denominada ammocoetes, não tem ventosa e os olhos são pouco desenvolvidos. A câmara branquial não é fechada e a larva alimenta-se capturando pequenas partículas orgânicas com uma fita de muco produzida na faringe.
Para promover o fluxo de água, o ammocoetes possui entre a boca e a faringe um sistema de bombagem anti-refluxo com duas válvulas, o velum que nos adultos não toma parte na respiração.
O esqueleto da cabeça do ammocoetes é composto dum tecido elástico, a muco-cartilagem que, durante a metamorfose dá origem a uma variedade de tecidos, entre os quais a verdadeira cartilagem.
A larva ammocoetes tem um tamanho máximo de 10 cm, enquanto que os adultos podem ultrapassar 120 cm.
As lampreias encontram-se principalmente em águas temperadas, tanto no hemisfério norte, como no sul.
Algumas espécies são parasitas, fixando-se a outros peixes[5], cuja pele abrem com a sua língua-raspadora e sugam-lhes o sangue. Esta é também uma forma de se deslocarem.
A ventosa bucal também lhes serve para se agarrarem a pedras ou vegetação aquática para descansarem. Por esta razão, em alguns locais da Europa são conhecidas por suga-pedra ("stone-sucker" em inglês).
As lampreias, principalmente a larva ammocoetes, são usadas como isco na pesca. No entanto, em alguns países (como Portugal, por exemplo), os adultos são considerados uma especialidade culinária.
A poluição dos rios, à qual as larvas são especialmente sensíveis, tem sido a causa da sua quase extinção em muitos rios da Europa.
Existem registos fósseis de lampreias desde o período Carbónico superior, com cerca de 280 milhões de anos de idade.
Algumas espécies de lampreias são usadas como alimento. No sul da Europa, sobretudo em Portugal, Espanha e França, a lampreia é tida por iguaria requintada, sendo vendida nos restaurantes a preços elevados[6].[7]
Em Portugal, a lampreia é comida sobretudo em arroz de lampreia, com uma confecção próxima da cabidela, e à bordalesa, um guisado normalmente acompanhado de arroz. Alguns restaurantes e casas fazem-na também assada no espeto, e outros ainda fazem-na de escabeche. Em Portugal, a lampreia é comida de finais de Janeiro a meados de Abril.
As lampreias são classificadas no clade Hyperoartia do filo Chordata, por oposição aos Gnathostomata, que incluem os animais com maxilas. Todas as espécies conhecidas são agrupadas na classe Petromyzontida (ou Cephalaspidomorphi) da ordem Petromyzontiformes e na família Petromyzontidae.[8]

Em Portugal vivem 6 espécies de lampreias: lampreia-marinha, lampreia-de-rio, lampreia-de-riacho e ainda lampreias-da-costa-da-prata, lampreia-do-nabão e lampreia-do-sado, nomes que remetem para os seus locais de origem.
A lampreia-marinha (Petromyzon marinus) é aquela que é considerada um autêntico pitéu e que leva muita gente em romarias gastronómicas. Já a lampreia-de-rio[9] (Lampetra fluviatilis) e a lampreia-de-riacho (Lampetra planeri) não se comem e são mais raras do que a sua congénere marinha, pelo que estão classificadas como criticamente em perigo de extinção, na última versão do Livro Vermelho dos Vertebrados de Portugal, de 2005.
A lampreia-de-riacho está presente sobretudo em Portugal, desde o Douro até ao Sado. Já a lampreia-de-rio foi declarada extinta em Espanha e, em Portugal, encontra-se somente no troço inferior dos rios Tejo e Sorraia. Para cada uma destas espécies, a população não ultrapassará os dez mil indivíduos.
Há três espécies endémicas de Portugal, o que significa que vivem apenas aqui. A lampreia-da-costa-da-prata[10] (Lampetra alavariensis) é endémica das bacias hidrográficas do Vouga e do Esmoriz, enquanto a lampreia-do-sado[11] (Lampetra lusitanica) existe só nesta rede hidrográfica e a lampreia-do-nabão[12] (Lampetra auremensis) se restringe a esta bacia afluente do Tejo.
Ao todo, as três espécies terão dez a 20 mil indivíduos e medem cerca de 15 centímetros, não se alimentam depois da metamorfose. Na fase adulta, de alguns meses apenas, limitam-se a reproduzirem-se e, depois disso, morrem[13].
Lampreia é o nome comum dado a diversas espécies de peixes ciclóstomos de água doce ou anádromos, com forma de enguias, mas sem maxilas, pertencentes à família Petromyzontidae da ordem dos Petromyzontiformes. Nestes peixes, a boca está transformada numa ventosa circular, com o diâmetro do corpo, reforçada por um anel de cartilagem e armada com uma língua-raspadora igualmente cartilaginosa. Várias espécies de lampreia são consumidas como alimento.

Beteckningen "nejonögon" har, förutom för ordningen Petromyzontiformes, använts såväl för den ovanförliggande klassen Petromyzontida (Cephalaspidomorphi) som för den underliggande familjen Petromyzontidae - anledningen härtill är givetvis att alla de svenska, och europeiska, arterna i klassen tillhör familjen Petromyzontidae.
För närvarande finns det ungefär 38 kända arter av nejonögon.[5] Fastän de är välkända för att borra sig in i köttet hos andra fiskar för att suga blod är det bara knappt hälften av arterna som gör så[6] eftersom bara 18 av arterna är parasitiska.[7] Nejonögonen tillhör en mycket gammal gren av ryggradsdjuren, men deras exakta släktskap med pirålar och käkförsedda ryggradsdjur (Gnathostomata) är fortfarande omdiskuterat.
Vuxna (adulta) fiskar liknar ålar genom att de saknar fjäll. De kan variera i längd från 13 till 100 cm och saknar pariga fenor. Adulta nejonögon har en näsborre mitt uppe på huvudet och därtill ett stort öga och sju gälöppningar på vardera sidan. Nejonögonens unika morfologiska kännetecknen, som skelettet av brosk, antyder att de är ett systertaxon till alla nulevande käkförsedda ryggradsdjur (Gnathostomata) och de betraktas vanligen som den mest basala gruppen inom understammen Vertebrata. I stället för riktiga kotor har de broskstrukturer kallade "arcualier" längs dorsalsidan av ryggsträngen. Ryggsträngen är det viktigaste axialskelettet även hos adulta rundmunnar.[8] Parasitiska nejonögon livnär sig genom att borra sig in i kroppen på andra fiskar med hjälp av de skarpa tänderna tills de når blod och kroppsvätskor, vilka de suger i sig. I sällsynta fall kan, speciellt utsvultna, nejonögon angripa människor.[9][10] Icke-parasitiska nejonögon, som vanligen lever i sötvatten, äter inte som vuxna utan lever på reserver som de lagrade som filtrerande linålar (ammocoeteslarver).[11]
Pirålar, som ytligt påminner om nejonögon, betraktas numera vanligen som systertaxon till äkta vertebrater (nejonögon och gnathostomer).[12][13]
Svalget är delat. Den ventrala delen bildar ett "andningsrör" som är skilt från munhålan av ett valv kallat "velum" (latin "slöja", "duk"), vilket är en anpassning till det sätt som djuret äter och som både förhindrar att bytets kroppsvätskor försvinner ut genom gälöppningarna som att de stör gälarnas syreupptagning - den senare sker genom att vatten pumpas ut och in genom gälöppningarna i stället för att tas in genom munnen. Nära gälarna sitter ögonen, vilka är dåligt utvecklade och övervuxna med skinn hos larven. Ögonen utvecklas under metamorfosen och täcks hos vuxna endast av ett tunt skinnlager (vilket blir ogenomskinligt hos preaparat).[14]
Nejonögon erbjuder viktig kunskap om det adaptiva immunförsvaret eftersom de har en adaptiv immunitet som utvecklats konvergent med T- och B-cellerna hos högre vertebrater.
Nejonögonfiskarna (Petromyzontidae) har det högsta kromosomtalet (164-174) av alla nu levande ryggradsdjur.[15]
Larverna av Geotria australis har också en mycket hög tolerans för fritt järn i kroppen och har välutvecklade biokemiska system för att detoxifiera stora mängder metalljoner.[16]
Nejonögonen har studerats ingående eftersom deras relativt enkla hjärnor på många sätt tros avbilda hjärnans struktur hos de tidiga förfäderna till vertebraterna. Med början på 1970-talet har Sten Grillner och hans kollegor på Karolinska Institutet i Stockholm använt nejonögon som ett modellsystem för att utarbeta de grundläggande principerna hos den motoriska kontrollen hos vertebrater, med början i ryggmärgen och sedan arbetande sig vidare mot hjärnan.[18] I en serie av studier har de funnit nervbanor i ryggmärgen som kan generera de rytmiska motoriska mönster som kontrollerar simning. Dessa kretsar kontrolleras av speciella lokomotoriska rörelsecentra i hjärnstammen och mitthjärnan och dessa kretsar kontrolleras i sin tur av högre hjärnstrukturer, inklusive de basala ganglierna och fyrhögarna (tectum). I en studie över tectum 2007[19] upptäckte de att stimulering med elektricitet kunde orsaka ögonrörelser, böjning av kroppen i sidled eller simrörelser och att typen samt dess amplitud och riktning berodde på vilken del av tectum som stimulerades. Dessa upptäckter tolkades som konsistenta med idén att tectum genererar målinriktade rörelser hos nejonögon, likväl som hos andra arter.
Nejonögon används som modellorganism i biomedicinsk forskning, där deras stora retikulospinala axon används för att undersöka synapstransmission.[20] Axonen hos nejonögon är så stora att de tillåter mikroinjicering av substanser.

Существует около 40 видов — в умеренных водах Северного и Южного полушарий и в бассейне Северного Ледовитого океана. Проходные морские[4] и жилые озерные и речные формы; все миноги размножаются в пресной воде. Многие виды — наружные паразиты крупных рыб (в том числе лососей)[5][6].
Являются объектом промысла, употребляются в пищу. Некоторые виды стали редкими.
Обитают в пресных и солёных водах, есть анадромные виды. Ведут в основном ночной образ жизни. Миноги — факультативные паразиты рыб, по большей части миноги — свободноживущие формы. Они присасываются к рыбе, прогрызают кожу и питаются кровью и мышцами[7].
Развитие с личиночной стадией — пескоройкой. Личинка миног — пескоройка — настолько отличается от взрослых миног, что её до XIX в. выделяли в самостоятельный род. Личинки живут как на основном русле, так и у берегов на заиленных участках, но иногда и среди зарослей макрофитов, ведут скрытый образ жизни, зарываются в грунт.
Мелкая форма миноги становится половозрелой при длине 18—25 см, как исключение — при 12,5 см. Минога речная европейская (Lampetra fluviatilis) распространена в Западной Европе — от Италии до Англии и Северной Норвегии. Обитает в прибрежных водах и поднимается в реки для нереста. Миноги, вошедшие в реку в конце лета — начале осени, остаются в ней около года, ничем не питаясь. За это время у них происходят заметные как внешние, так и внутренние изменения: созревают икра и молоки, кишечник дегенерирует и превращается в тонкий тяж, зубы становятся тупыми, прекращают функционировать расположенные в ротовой воронке слюнные железы, спинные плавники увеличиваются и просвет между ними сокращается, у самки вырастает спинной плавник, а у самцов — половой сосочек. У миноги уменьшается не только вес, но и длина. Нерестится речная минога в конце весны — начале лета, чаще при температуре воды 10—14 °С, на каменистых перекатах. Самец строит гнездо, самка откладывает икру. Нерест чаще групповой, с одной самкой нерестует до 6 самцов, обычно в одно гнездо откладывают икру более 2 особей. Невская минога имеет плодовитость от 4000 до 40000, жилая ладожская — 10000—16000, а мелкая форма — 650—10000 икринок. Икра овальной формы, размером около 1 мм, её объём увеличивается перед нерестом и после оплодотворения. Вскоре после нереста производители погибают.
Период инкубации икры длится 13—15 дней при температуре 13—14 °С и 11—13 дней при 15,5—17,5 °С. Личинки-пескоройки выклевываются на 11—14-й день после оплодотворения. Они очень похожи на маленьких (3,2 мм) светло-желтых червячков. Пескоройки скатываются в углубление между камнями и галькой, откуда их не может вымыть течение реки, и лежат неподвижно 3—4 дня, питаясь остатками желтка, запасы которого сосредоточены у них в печени. По достижении 6 мм пескоройка зарывается в грунт. 15—20-дневные личинки миноги покидают места выклева и сносятся течением вниз по реке, задерживаясь на заиленных, со слабым течением, участках реки. Здесь они закапываются в ил и начинают активно питаться. К этому времени личинки приобретают окраску, маскирующую их под цвет ила. Питаются пескоройки детритом и микроскопическими организмами, втягиваемыми через ротовое отверстие с током воды. По способу питания они — внутренние фильтраторы водяного тока.
Личиночная стадия у миноги продолжается 4—5 лет, а у мелких форм миноги стадия пескоройки длится всего 2—3 года. Процесс метаморфоза европейской речной миноги в бассейне Финского и Рижского заливов начинается летом и заканчивается весной. После метаморфоза минога выносится течением в море, где паразитирует на рыбах, нападая на салаку, корюшку, треску, лососей и других рыб.

В предротовой воронке имеются роговые зубы. Мощный язык имеет крупный зуб, называемый тёркой. На дне воронки находится рот, который ведет в глотку. Желудок не развит. Пищевод переходит в кишку, от которой он отделен клапаном. Кишка не делится на отделы, но внутри имеет спиральный клапан — складку, увеличивающую поверхность всасывания. Круглоротые выделяют пищеварительные соки в тело жертвы (внекишечное пищеварение), а затем всасывают уже частично переваренную пищу. Имеется печень и зачаточная поджелудочная железа. Миноги присасываются к рыбам и питаются кровью, тканевыми жидкостями и мышцами.
Дыхательная система представлена внутренними жабрами (branchiae). Жаберные проходы имеют форму не щелей, а сферических мешков, соединенных узкими отверстиями с глоткой с одной стороны и с внешней средой — с другой. У личинок миног жаберный аппарат представлен полужабрами на передней и задней поверхностях каждого мешка. У взрослых круглоротых жаберные лепестки опоясывают каждый мешок по всему периметру. Жаберный скелет образует латеральнее мешков цельную решетку. Мускулатура может сжимать мешки, и они действуют по принципу насоса. Вода выталкивается наружу через наружные отверстия мешков и через них же может всасываться, что позволяет животному продолжать дышать даже тогда, когда в процессе питания блокируется передний вход для воды в глотку. У личинок миног ротовая полость ведёт в глотку, которая в свою очередь соединяется сзади с пищеводом. Однако в процессе метаморфоза у миног глотка разделяется на две отдельные трубки. Верхний проход ведет назад и считается пищеводом. Ниже находится широкая трубка, с которой связаны жаберные мешки. Она оканчивается на заднем конце слепо. Это дыхательная трубка (tuba respiratoria). Вход в трубку прикрывает клапан — парус (velum). Он изолирует трубку от пищевода, когда животное питается. У миног жабры способны извлекать лишнюю соль из крови и выделять её в воду, протекающую через жаберные мешки.
Кровеносная система устроена сходно с ланцетником, однако у миног имеется двухкамерное сердце в околосердечной сумке. Сердце располагается в начале брюшной аорты. К предсердию примыкает венозный синус, в который впадают вены. От брюшной аорты идут приносящие жаберные артерии. Выносящие жаберные артерии впадают в корень аорты, от которого берут начало сонные артерии, несущие артериальную кровь к мозгу. Назад корень аорты продолжается в спинную аорту, расположенную под хордой. От головы венозная кровь собирается в парные передние кардинальные вены (= яремные вены), которые впадают в венозный синус. От туловища кровь собирается в задние кардинальные вены, подающие кровь также в венозный синус. От кишечника кровь собирается в подкишечную вену, которая в печени образует воротную систему. Из печени кровь по печеночной вене (v.hepatica) поступает в венозный синус. Воротной системы почек нет. В венозной системе имеются три дополнительных сердца (в голове, печени и хвосте).
Выделительная система представлена мезонефрическими почками, спереди сохраняются рудименты пронефроса. Мочеточники — вольфовы каналы, впадающие в мочеполовой синус.
Половая система представлена непарными половыми железами. Половых протоков нет. Гонады разрываются и половые продукты попадают в мочеполовой синус.
Вместо мозгового пузыря образуется головной мозг, окруженный пленкой из соединительной ткани. Он защищен от механических воздействий со стороны глотки черепом, который подобно ложке вмещает в себе головной мозг. Центральная нервная система миног отчётливо разделяется на головной и спинной мозг. На продольном разрезе через тело миноги головной мозг хорошо виден, хотя он весьма мал. Головной мозг имеет отделы, характерные для всех позвоночных животных: передний мозг, промежуточный мозг, средний мозг, мозжечок, и продолговатый мозг. Примитивной чертой строения головного мозга миноги является то, что все отделы лежат в одной плоскости и не налегают друг на друга.
Передний мозг относительно других отделов очень невелик. Хорошо заметны обонятельные доли — выпячивания его передней части. Полость внутри него двураздельная, что свидетельствует о формировании боковых желудочков. Крыша переднего мозга эпителиальная.
Промежуточный мозг хорошо выражен. Сверху его (под полупрозрачным участком кожи) находятся два пузырьковидных светочувствительных органа (непарные глаза) — пинеальный (эпифиз) и хуже развитый парапинеальный, расположенный ниже и левее. На нижней стороне промежуточного мозга находится гипофиз.
Средний мозг развит слабо. Небольшие зрительные доли развиваются в его боковых стенках, между ними из-за недоразвития крыши имеется отверстие.
Мозжечок очень мал и имеет вид валика, который ограничивает спереди и сверху полость продолговатого мозга — ромбовидную ямку. Недоразвитие мозжечка связано с простотой движения круглоротых.
Продолговатый мозг имеет относительно крупные размеры и постепенно переходит в спинной мозг. Полость его спереди сообщается с полостью среднего мозга, а сзади постепенно переходит в спинно-мозговой канал.
Органы чувств устроены очень просто. Орган слуха миноги представлен внутренним ухом — перепончатым лабиринтом с двумя полукружными каналами. Глаза развиты слабо. Роговица недоразвита. Орган обоняния непарный. В коже с обеих сторон тела проходит боковая линия. Она представлена неглубокими ямками, на дне которых расположены окончания блуждающего нерва (X пара головных нервов).

Род Mayomyzon, содержащий один вид, найденный в Иллинойсе (США), выделен 2002 году в монотипическое семейство майомизонтовых (Mayomyzontidae)[12].
В 2016 году туллимонстр, имевший клешнеобразные челюсти на конце длинного хоботка, был отнесён к отряду миногообразных вне какого-либо семейства[13].

七鰓鰻亞綱(學名:Petromyzontida),又名八目鰻綱,是脊索動物門圓口綱下的一亞綱。
目前已知共有現存 38 種、已滅絕 5 種的七鰓鰻[3],其中 18 種為寄生性的肉食動物,鑽入魚類的血肉之中以吸血維生[4][5]。這 18 種七鰓鰻中有 9 種會進行溯河洄游,另外 9 種則完全生活於淡水。所有非肉食性的物種均生活於淡水[6],成年不進食,依靠幼體所吸收的營養維持,幼體則為濾食性(英语:Filter feeder)。
七鰓鰻多半棲息於淡水與沿岸,甚至是內流湖中,然而部分物種(例如:澳洲囊口七鰓鰻(英语:Geotria australis)(Geotria australis)、海七鰓鰻(Petromyzon marinus)與三峰七鰓鰻(英语:Entosphenus tridentatus)(Entosphenus tridentatus))會在進行遠距離遷徙時游到開放海域[7],證據在於牠們在不同水域的族群上並沒有生殖隔離。七鰓鰻的幼體對高水溫的容忍程度低,這也解釋了為什麼牠們部不分布於熱帶水域,除此之外七鰓鰻分布於除非洲之外的大部分溫帶水域之中。
七鰓鰻的分布會受到汙染以及過度捕魚影響。在諾曼征服英格蘭時期,七鰓鰻可以在泰晤士河上游的倫敦彼得森村(英语:Petersham, London)附近發現。而近年來泰晤士河與威爾河汙染的減少也使得七鰓鰻再次出沒於倫敦以及切斯特勒街附近的水域[8][9]
七鰓鰻的分布同時也會受到水壩以及其他干擾洄游路徑的人造建築影響,這些建設會阻止牠們回到產卵地,而新建的人造水道則可能引導牠們游至新的水域,例如北美洲五大湖的海七鰓鰻。人類正計畫利用化學物質來控制這些入侵七鰓鰻的數量,但仍然有影響部分地區飲用水的疑慮[10]。

七鰓鰻亞綱(學名:Petromyzontida),又名八目鰻綱,是脊索動物門圓口綱下的一亞綱。
目前已知共有現存 38 種、已滅絕 5 種的七鰓鰻,其中 18 種為寄生性的肉食動物,鑽入魚類的血肉之中以吸血維生。這 18 種七鰓鰻中有 9 種會進行溯河洄游,另外 9 種則完全生活於淡水。所有非肉食性的物種均生活於淡水,成年不進食,依靠幼體所吸收的營養維持,幼體則為濾食性(英语:Filter feeder)。
ヤツメウナギ(八目鰻、lamprey)は、脊椎動物亜門,円口類,ヤツメウナギ目に属す動物の一般名、ないし総称であり、河川を中心に世界中に分布している。
円口類はいわゆる「生きた化石」であり、ヤツメウナギとヌタウナギだけが現生している。ウナギどころか「狭義の魚類」から外れており、脊椎動物としても非常に原始的である。
顎口類の姉妹群である円口類に属し、一般には数少ない現生の無顎類の一群である。
ヤツメウナギは全ての種が細長く、体の断面が楕円形といった言わば「ウナギ型」の外見であるため、一般にはしばしばウナギと混同されがちで、和名にもそれが如実に表れている。ただし、顎口類に属すウナギ類とは無縁と考えても良い動物であり、生物学的特徴も食味もウナギとは全くかけ離れた動物である。
一般的な意味で"魚"と見なされるが、その特徴も広くイメージされる「魚類」とは大きく異なる。現在生きているほとんどの"魚"が我々ヒトと同じ顎口類に属すのに対し、ヤツメウナギはこれとは別の系統である円口類に属している。「顎を欠く」「対鰭を持たない」「骨格が未発達である」など、顎口類から見ると「原始的」とも呼べる特徴を多く残しているため、進化研究でたびたび重要視されてきた。
我々ヒトを含め、現在の脊椎動物の大多数は発達した顎や骨格などを備えているが、化石記録に基づいた古生物学的研究によれば、我々の祖先はもともとこうした特徴を持っていなかった[1]。こうした祖先的な脊椎動物は、特に「顎をもたない」といった特徴を踏まえて無顎類と呼ばれている。
円口類の中で現在も生存しているのはヤツメウナギ類とヌタウナギ類のみである。また、無顎類の大多数は古生代ですでに絶滅しており、この中で現在も生存しているのもヤツメウナギ類とヌタウナギ類のみである[2][3]。

ヤツメウナギの現生種は淡水を中心とした世界中の寒冷水域に生息し、熱帯域には少ない。日本国内では、カワヤツメLethenteron japonicum、スナヤツメL. reissneri、シベリアヤツメL. kessleri、ミツバヤツメLampetra tridentataの4種が棲息するとされ、このうちカワヤツメと一部のスナヤツメは食用になる。
ヤツメウナギの体の両側には7対の鰓孔があり、それが一見眼のようにみえることから、本来の眼とあわせて「八目」と呼ばれる。ドイツ語でも、7つの鰓孔、本来の眼、鼻孔が並ぶことから、ヤツメウナギには9つの眼があると考え、「9つの眼」を意味する「Neunaugen」と呼んでいる。
鱗のない体は細長く「ウナギ型」。種によって体長13 - 100cmと幅がある。繁殖は淡水河川で行い、3mm程度の黄色い卵を、種によって数百 - 数万個も産卵する。ひと月ほどで孵化すると、まずアンモシーテス(Ammocoetes)と呼ばれる幼生期を数年間過ごし、その後成体へと変態する。アンモシーテスとは、もともと新属として設けられた名称だったが、これがヤツメウナギの幼生と判明すると、その名称がそのまま幼生の呼称となった。アンモシーテス幼生の基本的な概形は成体に似るが、口は吸盤状でなく漏斗のようで、泥底に潜って水中から有機物を濾しとって食べている。また眼が未発達であり、外からはほとんど確認することができない。
変態後の生態は、種によって降海型と残留型に大別される。カワヤツメなどは前者で、変態した若魚は2、3年海を回遊して再び繁殖期になると河川を溯上する。スナヤツメなどは後者であり、繁殖期まで一生を淡水で過ごし、変態後は消化管も貧弱で餌を採らない種が多い。
ちなみに、スタミナはないものの瞬発的な遊泳力が強いため、水槽で飼育するとよく飛び出すことがある。
ヤツメウナギの外見上最も特徴的なのは、顎がなく代わりに吸盤状の口をもつ点と、7対の円い鰓孔が開口する点である。また、この他にも独特の解剖学的特徴を持ち、そのいくつかは脊椎動物の進化上「祖先的」とも見なされる。
以上のように、現在の顎口類には全く見られなくなった特徴が多くある。つまりこうした顎や対鰭、鼻孔などは、少なくとも顎口類がヤツメウナギなど円口類と分岐して後独自に獲得したものだと考えられる。しかし、成体では眼が大きく、よく発達したレンズや外眼筋も備えているなど、顎口類と共通した特徴も数多くあり、よってこうした形質は脊椎動物の最も初期の段階で既に獲得されていたものと考えられる。脊椎骨成分に関しては、ヤツメウナギで脊索背側の神経弓のみが、ヌタウナギで脊索腹側の痕跡的血管弓のみが認められるため、これらの共通祖先で既に脊索背腹両側に神経弓と血管弓を有する顎口類と同様の脊椎骨を有していたのに対し、両者の分岐後にヤツメウナギの系統では血管弓が、ヌタウナギの系統では神経弓が退化して失われ、さらに現生のヌタウナギの系統では残された血管弓すら殆ど失われて痕跡化したとする仮説が提案されている。
ヤツメウナギおよびヌタウナギは軟骨魚類以上の脊椎動物には存在する血液中の免疫グロブリンが存在していない。このことから、抗体機能の解明にヒントになり得ると見られている。
ヤツメウナギ類は、顎を獲得していない段階で分岐した数少ない現生脊椎動物である。そのため、ケファラスピスやガレアスピスのような絶滅動物の復元にも重要な役割を果たす。
また、後期デボン紀のプリスコミゾン(英語版) (Priscomyzon riniensis)[9]、前期石炭紀のハルディスティエラ (Hardistiella montanensis)[10]、後期石炭紀のマヨミゾン (Mayomyzon pieckoensis)[11]などの化石は、ヤツメウナギ類のものと推測されている。
無顎類・円口類を魚類と呼ぶかどうかについては意見が分かれることがある。魚類の範囲を顎のあるものに限定するならば魚類には含まれないが、顎の有無は魚類かどうかの判別にかかわらないとする主張では魚類に含まれるといった議論ではある。今日では一般的には、広義の魚類とみなされる。
2013年2月、この仲間の一種、ウミヤツメ(Petromyzon marinus)のゲノムの解読が報告された[12]。

ただし、特に"無顎類"や祖先的顎口類の絶滅群(コノドント、甲皮類、翼甲類など)に関しては、系統関係について現在も論争が続いており、下に示した例はその中の一説にすぎない。

現代の日本で全国的に流通する食材ではないが、洋の東西を問わず様々な文化圏に普通に登場する。また滋養強壮や夜盲症(鳥目)の薬としても古くから用いられてきた。実際に脂肪に富み、ビタミンAの一種であるレチノールを8200μg/100g以上含むなど、栄養価は高い[13]。
日本国内の場合、食用とされるのはほとんど日本産カワヤツメである。約50-60cm。背側は黒青色で腹側は淡色。春に川を遡上し、5-6月に産卵する。日本海側では島根県以北、太平洋側では茨城県以北に分布している。北海道、新潟県、山形県、秋田県などの日本海に注ぐ河川で多く獲れる。産地である北海道江別市では、2001年までは毎年ヤツメウナギ祭りが開催されていた[14]。
主に初春の寒い時に川で獲れる。東北、北海道などの東日本・日本海側が本場。肉が固くてモツのような弾力と歯応えがあり、レバーと魚油の匂いが混じった独特の風味を持つ。最近は漁獲量が減り、大きさも一般に小さくなって来ている。現在でも産地以外では鮮魚としてカワヤツメを得ることはほとんど不可能で、乾物か冷凍品ということになる。
産地のひとつである秋田県では、カワヤツメをぶつ切りにして醤油と出汁の濃い目のツユですき焼き風に煮込むかやきが冬の味覚となっている。また、最近では臭み抜きに醤油やニンニク、コチュジャン等を用いて、切り身を炒め物や鉄板焼きにして食する事もあるという。[要出典]関東では蒲焼きを売り物にする料理店もある。また、縁日の屋台でもカワヤツメの蒲焼きが売られることがある。肝は特に栄養分が多いため、これを軟骨と共にミンチにして「肝焼き」として供することもある。ただし、クセが強いので好き嫌いは普通の蒲焼以上にはっきりとする。乾物は丸ごと白焼きにしたものを油が漏れ出さないように切り分け、佃煮風に甘辛く煮て食べる。2012年現在での都心では、台東区浅草で八ッ目鰻専門店、巣鴨でヤツメウナギを扱う飲食店が営業を続けている。このほかに季節限定でヤツメウナギ料理を出すウナギ料理店、珍味やスタミナ料理として出す居酒屋なども存在する。
近年は環境の変化から国産のカワヤツメが入手困難になりつつある。このため、2015年からアメリカ合衆国アラスカ州産のヤツメウナギも輸入されている[15]。
一般的にはその風味や食感が馴染まれず漁獲地域も限られる事から、薬品やサプリメントの原料となることが多い。乾燥品を粉砕して飲用したり、身や肝から魚油を抽出してカプセルやドロップの形にして服用する。現在でも伝統薬・八ッ目鰻のキモの油などに代表される医薬品が夜盲症・疲れ目の適応として販売されている。日本では食や薬品の原料となるのはカワヤツメであるが、終戦直後の頃にはスナヤツメも魚油の原料として用いられたこともある。[要出典]
ヨーロッパではローマ帝国の頃から食されており、時代によって高級食材となったり、貧しい人々の食料となったりした。
食感や風味が肉類や内臓類に近いこともあって、現在でもフランス、ポルトガル、スペインなどではパイやシチュー、リゾットの材料として盛んに用いられている。フランスにはヤツメウナギの赤ワイン煮込みである「ヤツメウナギのボルドー風 (Lamproie aux poireaux)」と呼ばれる料理がある。これはボルドー地方の名物料理であり、現地では缶詰にされたものも売られている。カワヤツメばかりでなく、ヨーロッパスナヤツメやウミヤツメも用いられる。ボルドー風煮込みやリゾットでは、ジビエにおける「血のソース」のように、風味づけに血液を活用することも多い。日本と同様に、旬は冬 - 初春とされており、季節限定の味覚として供するレストランやビストロも多い。ロシアでもザクースカなどとして供される。ドイツでは食材としては海に近い北部のほか、淡水種が獲れる内陸部でも利用されていた。
ビタミンAを大量に含むことから、度を超えて摂取すると健康を害しうる。イギリスには、イングランド王ヘンリー1世がヤツメウナギ料理の食べ過ぎで死亡したといわれる伝説[16]がある。
ポルトガルには「ヤツメウナギの卵」(lampreia de ovos)というケーキが存在しており、クリスマスに家庭で作られる。これは、ヤツメウナギが貴重品であった時代(現在も高級食材であるが)に、庶民がヤツメウナギを模した菓子を作った事に起源があるといわれる。

北米大陸の五大湖では、本来は外洋とつながる河川はセントローレンス川1本のみだった。19世紀初頭から始まったいくつかの運河建設により、ハドソン川など複数の他河川とつながった。
その結果、大型種のウミヤツメが大量に流入。各湖の魚類に寄生したため、漁業資源として重要なサケ科をはじめ多くの魚類が激減する深刻な被害をもたらした。そのため、1991年から年間約26000匹のオスを捕らえ、不妊化処理を行い川に戻すという事業が行なわれている[18]。
ヤツメウナギ目 Petromyzontiformes は、現生のもので3科10属38種を含む[19]。 ただし、この分類も一例であり、しばしば変更される。
たとえば日本産カワヤツメは2005年頃までLampetra japonicaとされていたが、のちにLethenteron japonicumと属が変わった。2012年現在では、Lethenteron camtschaticumのシノニムともされている[20]。
