Der Sibirische Stör (Acipenser baerii) ist eine Fischart aus der Familie der Störe (Acipenseridae), die im russischen Sibirien und im Norden Kasachstans, der Mongolei und Chinas vorkommt. Als wertvoller Speisefisch und Kaviarproduzent wird die Art auch in anderen Ländern in Aquakultur gezogen, wobei es teilweise auch zu versehentlichen Freisetzungen kam.
Sibirische Störe haben den typischen langgestreckten Körperbau aller Störe mit spitzer Schnauze, fünf Reihen von Knochenplatten entlang des Rumpfs, weit hinten sitzender Rückenflosse und heterozerker Schwanzflosse. Die Tiere erreichen im Normalfall eine Länge von 80 bis 140 Zentimetern und ein Gewicht von etwa 65 Kilogramm. Die größten bekannten Tiere hatten eine Länge von etwa zwei Metern bei einem Gewicht von bis zu 210 Kilogramm. Die Färbung ist sehr variabel und reicht von hellgrau bis dunkelbraun an Rücken und Flanken. Der Bauch ist weiß bis gelblich. Die Schnauze ist kegelförmig und je nach Population verschieden lang gestreckt. Während die Tiere aus der Lena relativ lange Schnauzen haben, sind sie bei Tieren aus dem Ob und dem Baikalsee kürzer.[1] Die vier Barteln vor dem unterständigen Maul tragen keine Fransen. Die Unterlippe ist unterbrochen. Die Rückenreihe besteht aus 10 bis 20 Platten, von denen keine hinter der Rückenflosse liegen. Die seitlichen Reihen bestehen aus 32 bis 62 Platten, die Reihen am Bauch aus 7 bis 16. Zwischen After und Afterflosse liegen ein bis drei kleine Platten, hinter der Afterflosse keine. Die Rückenflosse weist 30 bis 56 Strahlen auf, die Afterflosse 17 bis 33. Die 20 bis 49 Kiemenreusendornen sind fächerförmig und enden in Tuberkeln.
Die Art bewohnt tiefe Bereiche großer Flüsse und Seen mit mittlerer bis starker Strömung. Sie kommt in Russland, Kasachstan und der Mongolei in allen Fluss-Systemen vor, die in die Karastraße, die Laptewsee oder die Ostsibirische See münden, wobei sich die größten Vorkommen in Ob, Lena und Jenissei finden. Die Art lebt auch im Baikalsee und in dessen Zuflüssen. Die natürliche Population im Irtysch im Norden Chinas wurde ausgerottet, kleinere Bestände werden durch Besatz erhalten. In Frankreich, Deutschland, Italien und Russland wurden sibirische Störe teilweise versehentlich oder absichtlich ausgewildert.[2]
Sibirische Störe ernähren sich vorwiegend von bodenlebenden Tieren, vor allem von Krebstieren und Zuckmückenlarven. Die Männchen werden mit 11 bis 24, die Weibchen mit 20 bis 28 Jahren geschlechtsreif, außer bei der Population in der Lena, wo die Geschlechtsreife schon mit 9 bis 10 bzw. 11 bis 12 Jahren erreicht wird. Zum Laichen wandert ein Teil der Fische bis zu 3000 Kilometer flussaufwärts, während andere Tiere zur Fortpflanzung nicht wandern. Die Laichwanderung beginnt im Herbst, während die Eiablage von Mai bis Juni stattfindet. Die Eier werden auf Kies- oder Sandboden in stark strömenden Bereichen des Hauptstroms abgelegt. Männchen pflanzen sich alle zwei bis drei, Weibchen alle drei bis fünf Jahre fort. Sibirische Störe können ein Alter von etwa 60 Jahren erreichen.

The Siberian sturgeon (Acipenser baerii) is a species of sturgeon in the family Acipenseridae. It is most present in all of the major Siberian river basins that drain northward into the Kara, Laptev and East Siberian Seas, including the Ob, Yenisei (which drains Lake Baikal via the Angara River) Lena, and Kolyma Rivers. It is also found in Kazakhstan and China in the Irtysh River, a major tributary of the Ob. The species epithet honors the German Russian biologist Karl Ernst von Baer.
The Siberian sturgeon has previously been divided into two subspecies.[1] However, recent studies suggest they may be monotypic, forming continuous genetically connected populations throughout their vast range.[4]
The previous nominate taxon (A. b. baerii) accounts for 80% of all Siberian sturgeon and resides in the Ob River and its tributaries. This population migrates to mouth of the Ob during the winter due to seasonal oxygen deficiency, and swims thousands of kilometers upstream to spawn.
Also previously considered a subspecies, A. b. baicalensis, known as the Baikal sturgeon, is a lake population found primarily in the northern end of Lake Baikal, and migrates up the Selenga River to spawn.
Once considered a third subspecies, "A. b. stenorrhynchus" resides in the eastern Siberian rivers and displays two life history patterns: a more abundant migratory one which swims considerable distances (sometimes thousands of kilometers) upstream from estuaries and deltas to spawn, and a nonmigratory form.
Siberian sturgeon usually weigh about 65 kg, with considerable variability between and within river basins. The maximum recorded weight was 210 kg. As with all other acipenserids, the Siberian sturgeon are long-lived (up to 60 years), and late to reach sexual maturity (males at 11–24 years, females at 20–28 years). They spawn in strong current main stem river channels over stone or gravel substrates.[1]
The Siberian sturgeon feeds on a variety of benthic organisms, such as crustaceans and chironomid larvae.
The species had been in steep decline in its natural range due to habitat loss, degradation, and poaching.[1] Up to 40% of the Siberian sturgeon spawning habitat has been made inaccessible by damming. High levels of pollution in certain places have led to significant negative impacts on the reproductive development of gonads.[5]
While wild catches have been generally declining, the Siberian sturgeon is increasingly farmed both for meat and to produce caviar from its roe. Because the Lena population of A. baerii completes its lifecycle in fresh water and sexually matures relatively early, it is the most common original broodstock for captive-bred specimens. The main producer of Siberian sturgeon caviar is France, while the largest meat producers are Russia and China.[6]

La especie fue introducida accidentalmente en la cuenca del Plata a partir de la liberación desde una piscicultura ubicada en el Río Negro, tributario del Río Uruguay. Es evidente que un gran número de estos ejemplares sobrevivió en aguas libres, dado que se han registrado numerosas capturas, no sólo en el Río Uruguay, sino también en el Río de la Plata y en el Río Paraná medio e inferior.
Esta especie, junto con A. naccarii, se cría en España para la obtención de caviar.
Al ser originario del Noreste de Siberia, en aguas de bajas temperaturas, y posiblemente encuentre alguna resistencia ambiental para su reproducción en las aguas uruguayas. No obstante, como con cualquier nueva introducción, no se sabe con certeza cuál será su capacidad de supervivencia y dispersión.

Elab Siberi jõgedes Obist Kolõmani ja edasi Indigirkani. Irtõšis on siberi tuur levinud Zaissani järveni (ka Musta Irtõšini), Obis Obi-Tazi lahest (Drovjanõi neemest) päris Obi ülemjooksuni, Katuni jõeni, ta tungis ka Teletsi järve. Baikalis ja Buhtarma veehoidlas moodustab ta paiksed järvevormid. Obis ja Jenisseis elab siberi tuur koos sterletiga, Leena ja Kolõma jões on ta ainus tuurlaste esindaja.
Baikalis elab siberi tuura järvevorm, kes on oma bioloogia poolest sarnane Ameerika Suure järvistu tuuraga. Kudema läheb ta Selengasse, märksa vähemal määral ka Barguzini jõkke. Mööda Toli jõge suundub siberi tuur Mongooliasse (on leitud umbes 100 km kauguselt Ulan-Batorist). Baikali järvevormi on käsitletud ka omaette alamliigina. Obi, Jenissei, Pjassina ja Hatanga jões on vähesel arvul siberi tuura paikseid vorme. Leena tuur on puhtalt jõevorm.[2]
Siberi tuur kasvab aeglaselt. Suguküpseks saavad isased Obis 9–14-aastaselt, emased 11–20-aastaselt. Jenissei alamjooksul saab tuur suguküpseks 18–23-aastaselt, Baikali vormi isased 15-, emased 18-aastaselt ja hiljem. Obi tuura emased koevad 3–4, isased 1–2 aasta tagant. Jenissei alamjooksul koeb siberi tuur enamasti 4 aasta tagant.[2] Siberi tuura vanuse ülempiir on 60 aastat. Obis on siberi tuura tavaline püügikaal isastel 5–25 kg, keskmiselt 10 kg (90–165 cm), emastel 5–44 kg, keskmiselt 13 kg (92–180 cm). Jakuutias on selle tuura tavaline kaal 2 kg, kuid leidub ka isendeid, kes kaaluvad 10 ja isegi 40 kg. Obist püütud siberi tuura suurim kaal ja pikkus on 3 m ja 100–104 kg. Jenisseist püütakse mõnikord 30–40 kg raskusi tuuri, harva kuni 96 kg. Baikalis elava tuura vormi suurim teadaolev kaal on 115 kg, tavaliselt kaaluvad nad aga 16–20 kg.[2] Siberi tuura viljakus on Obis 174 000–420 000, Jenisseis 79 000–250 000, Baikalis 211 000–832 000 marjatera.
Siberi tuur toitub koorikloomadest (kirpvähilised), putukate vastseist, limustest, kaladest.
Siberi tuura (ja tema hübriide teiste tuurlastega) on hakatud rohkelt kasutama kalakasvandustes, kuna siberi tuur kasvab esimestel eluaastatel märksa kiiremini kui teised tuurad, ka on tal vähem terviseprobleeme. Maitseomadustelt peetakse teda mõnevõrra paremaks kui vene tuura, kes on samuti kasvandustes viljeldav. Eestis hakati siberi tuura kasvatama kaubakalana 21. sajandi esikümnendi keskpaigas. Ka tänapäeval kasvatatakse seda Eesti kalakasvandustes.

Lo storione siberiano[2] (Acipenser baerii Brandt, 1869) è un raro pesce osseo della famiglia degli Acipenseridi.
Lo storione siberiano può raggiungere la lunghezza massima di circa 200 cm ed un peso di 210 kg, ma solitamente la media degli esemplari non supera i 65 kg di peso. Presenta muso allungato, più lungo della porzione post-oculare del capo, con bocca tubolare e protrattile situata in posizione ventrale, dal labbro inferiore interrotto da un'incisura mediana. Ai lati di essa si trovano quattro barbigli non sfrangiati, inseriti anteriormente. Le branchiospine presentano tubercoli sulla parte distale. La colorazione varia dal grigio-olivastro al marrone scuro, a seconda delle condizioni fisiologiche del pesce e di quelle ambientali. Sui fianchi il colore diviene progressivamente più chiaro, fino ad assumere una tinta biancastra sul ventre[3].
Diversamente da molte altre specie di storioni, questa specie non è anadroma e trascorre l'intera esistenza in acqua dolce. Vive nelle zone più profonde dei grandi fiumi a corrente lenta o moderata. Si riproduce nel corso principale di essi, dove la corrente garantisce un buon tenore di ossigeno disciolto, su fondali misti a sabbia, ghiaia e ciottoli. Esistono popolazioni stanziali ed altre che compiono notevoli spostamenti per raggiungere le aree di fregola. Prima della costruzione dell'attuale sistema di dighe, le popolazioni del bacino del fiume Ob' si spingevano nell'interno risalendo il fiume anche per 3000 km. Attualmente migrano nel golfo dell'Ob' nel periodo invernale a causa dello stagionale calo della concentrazione di ossigeno disciolto nelle acque del fiume. Le popolazioni migratrici di A. b. stenorrhynchus, che vivono in regioni remote e relativamente incontaminate, sono le sole che compiono ancora lunghi spostamenti per raggiungere i quartieri di riproduzione. La maggioranza delle popolazioni di A. b. baicalensis, forma endemica del lago Bajkal, che vivono nell'area settentrionale del lago, vicino al delta del fiume Selenga e nelle baie del Barguzin e del Čivyrk, all'avvicinarsi del periodo di fregola risalgono il fiume per oltre 1000 km, penetrando anche nei tributari dei grandi affluenti Chikoi, Delgermörön, Orkhon e Tuul[3].
Le componenti principali della dieta dello storione siberiano sono costituite da organismi bentonici, tra cui predominano larve di chironomidi, crostacei anfipodi e isopodi, policheti e molluschi. In minore quantità, vengono catturati anche pesci e crostacei decapodi[3].
Le migrazioni per raggiungere i luoghi di fregola iniziano generalmente in autunno, mentre la fregola si svolge da maggio a giugno, quando la temperatura è compresa tra 9 e 18 °C. Da osservazioni svolte su femmine allevate in cattività, risulta che gli esemplari più giovani producono una quantità di caviale pari a circa il 10% del proprio peso; questa percentuale sale al 18-20% nelle femmine che hanno raggiunto o superato i 18 anni di età. Lo storione siberiano può raggiungere e superare i 60 anni di vita[3].
Questa specie è presente in tutti i fiumi siberiani che sfociano nel mare di Kara, nel mare di Laptev e nel mare della Siberia orientale: più precisamente è rinvenibile nei bacini dei fiumi Ob', Taz, Enisej, Pjasina, Chatanga, Anabar, Olenëk, Lena, Jana, Indigirka, Alazeja (dove però si spinge raramente) e Kolyma, nel lago Bajkal (appartenente al bacino dell'Enisej) e nei fiumi che si gettano in esso - Selenga, Barguzin e Angara superiore. Tuttavia, è maggiormente abbondante nei fiumi Ob', Enisej e Lena.
Questa specie era presente anche nelle acque del fiume Irtyš, che scorre nell'angolo nord-occidentale della provincia dello Xinjiang, in Cina. Tuttavia, le popolazioni qui presenti sono scomparse negli anni '50 e le piccole popolazioni che ancora vi si possono rinvenire sono il frutto di reintroduzioni a scopo ittico[1].
In Francia, nel dicembre 1999, a seguito di due gravi tempeste, diverse migliaia di avannotti e di femmine gravide di storione siberiano fuggirono dagli allevamenti per finire nel fiume Gironda. La sopravvivenza di questi esemplari e la loro interazione con le popolazioni selvatiche di storione comune non sono per ora note. In ogni caso non si può escludere del tutto la possibilità della comparsa di nuovi germi patogeni, di competizione alimentare e di ibridazioni con quest'ultima specie, a rischio critico di estinzione. In Germania, nel corso inferiore e negli estuari dei fiumi che si gettano nel Baltico ad est di Rostock è sempre più frequente la cattura di esemplari ibridi di storione comune e siberiano, probabilmente fuggiti da impianti di acquacoltura situati a monte o rilasciati in natura da proprietari di acquari a causa delle loro grandi dimensioni. In Italia la specie è stata introdotta negli impianti ittici negli anni '90 e fatta ibridare con lo storione cobice. Esemplari di storione siberiano, provenienti molto probabilmente dai numerosi laghetti di pesca sportiva, vengono occasionalmente catturati in acque libere. La presenza di questa specie potrebbe avere un impatto negativo sui tentativi di salvaguardia e reintroduzione di storione cobice nell'ambiente di origine[3].
Ne vengono riconosciute tre sottospecie[4]:
L'areale di A. b. baerii è limitato al bacino del fiume Ob'. A. b. stenorrhynchus vive nei bacini della Siberia orientale, nei sistemi dei fiumi Alazeja, Anabar, Chatanga, Enisej, Indigirka, Jana, Kolyma, Lena, Olenëk e Pjasina. A. b. baicalensis è endemica del lago Bajkal. Studi recenti mettono in dubbio la validità di queste sottospecie, suggerendo che A. baerii possa essere una specie monotipica, in grado di formare popolazioni continue nei grandi sistemi fluviali[3].
In Russia la maggior parte dell'areale della specie è andato perduto a causa della costruzione di dighe e sbarramenti invalicabili. Particolarmente colpite dalla frammentazione del corso dei fiumi sono state le forme migratrici, per le quali è risultato impossibile raggiungere le zone di riproduzione. L'aumento dell'inquinamento causato dai processi di estrazione di combustibili fossili e di quello derivante dall'uso dei pesticidi in agricoltura hanno gravemente compromesso la qualità dei corsi d'acqua siberiani, provocando gravi effetti sulla fisiologia dei pesci. È stata riscontrata soprattutto una diminuzione della fecondità in tutte le specie di storioni, a seguito della produzione di ovociti degenerati. Negli anni '80 il petrolio e i suoi derivati dispersi nel fiume Ob' superavano di dieci volte i limiti normalmente consentiti. Molti corsi d'acqua siberiani sono stati inquinati da sostanze radioattive e, nelle regioni orientali, dalle sostanze impiegate per l'estrazione dell'oro. Sullo status delle popolazioni di Cina e Kazakistan esistono solo scarse informazioni. Dai dati provenienti dalla Russia risulta comunque una perdita di aree di riproduzione pari a circa il 40%, il calo della fertilità ed una ovogenesi anormale, probabilmente indotta dalla radioattività[1].
La Russia ha inserito la popolazione del lago Bajkal nella propria Lista Rossa delle specie minacciate nel 1983 e quella del fiume Ob' nel 1990. Verso la fine degli anni '90 le autorità proibirono la pesca commerciale di tutte le specie di storioni nel bacino del fiume Enisej, a causa di un improvviso calo numerico delle popolazioni e della bassa fecondità riscontrata. Da quel momento è consentita la pesca, solo per studi scientifici e di monitoraggio, di solo 8 t di storione siberiano. Il provvedimento non appare sufficiente ad arrestare il declino della specie, principalmente a causa della crescita delle attività di pesca di frodo e delle attività illecite legate al commercio del caviale. A scopo di precauzione, alcuni scienziati russi stanno allevando esemplari di A. b. baicalensis in un impianto sperimentale nei pressi di Mosca, per fini di ricerca e di conservazione. Questa struttura produce annualmente 300 000 avannotti da reintrodurre nel bacino del lago Bajkal. Sulla lista rossa della IUCN lo storione siberiano viene classificato come «specie in pericolo» (Endangered)[1].
La specie è molto apprezzata sia per la produzione di caviale che per la sua carne. La resa è di circa una tonnellata di caviale per venti tonnellate di carne. Lo storione siberiano figura tra le specie di storione più frequentemente allevate in cattività. A. b. stenorrhynchus viene fatto riprodurre con successo in vari paesi europei. Nel 1997, la produzione annuale di storione siberiano venne stimata in circa 200 t in Francia, 120 t in Italia e 10 t in Germania. In Francia la produzione di caviale da storioni siberiani di allevamento ha superato le 3 t nel 1999 e le 5 t nel 2000. Dal 1997 questa specie viene allevata in Italia per la carne e per la produzione di esemplari da destinare ai laghi privati di pesca sportiva[3].
In Russia il volume del pescato è in generale declino, probabilmente per le cause di origine antropica citate in precedenza e per l'eccessiva pressione di pesca. In ogni caso, la Russia è l'unico paese in cui vengono ancora effettuate catture in quantità significativa. La pesca industriale di questa specie non riveste più un ruolo economicamente importante. Ad esempio la quantità di storione siberiano pescato nel bacino dell'Ob'-Irtyš è calata dalle 1 410 tonnellate degli anni '30 alle 11 tonnellate del 1997. Attualmente la maggior parte della carne e del caviale di questa specie presente sul mercato proviene quasi esclusivamente da allevamenti[3].

Acipenser baerii é uma espécie de esturjão da família acipenseridae. Ele é encontrado nas principais bacias hidrográficas siberianas cujos rios correm para o norte, desaguando nos mares de Kara, Laptev e Siberiano Oriental, incluindo o Ob, o Yenisei (que drena o Lago Baikal por meio do Rio Angara), o Lena e o Kolyma. Ele é encontrado também no Casaquistão e na China, no Rio Irtysh, um importante tributário do Rio Ob.
A espécie Acipenser baerii subdivide-se em três subespécies: o Acipenser baerii baerii (esturjão-siberiano), que vive no Rio Ob e os seus afluentes; o Acipenser baerii baicalensis (esturjão-do-lago-baikal), e o Acipenser baerii stenorrhynchus (esturjão-do-rio-lena), que vive no Rio Yenisei, no Rio Lena e em outros rios do leste siberiano.[4]
