This is the progenitor of the safflower that is grown in early summer for its seed oil in the Mediterranean and arid Asian regions. The cultivated saffron is used for dyes, edible oil as well as for cheap sabstitute for saffron and for pruduction of insulin. But it all started in this native spiny weed - Carthamus persicus. Growing in the arid Middle East. In Israel it is rather rare in the Negev Desert.
